Grilled Turkey Tenderloins with Mango Salsa image

1 package Honeysuckle White® or Shady Brook Farms® Turkey Breast Tenderloins
or use 1 package Honeysuckle White® or Shady Brook Farms® Lemon Garlic Flavor Marinated Tenderloins
Mango Salsa
1 ripe Mango peeled, cored, and diced
1 medium tomato, seeded and diced
½ cup red onion, finely chopped
½ cup green bell pepper, diced
2 tablespoons finely chopped mint
¼ tablespoon salt

Steps:

  • 1.In medium bowl, combine mango salsa ingredients. Cover and refrigerate until serving. 2.Grill tenderloins approximately 20 to 30 minutes, turning every 5 minutes or until internal temperature reaches 170°. 3.To serve, slice tenderloins and top with mango salsa. Note: For food safety, cook turkey to a minimum internal temperature of 165° as measured by a meat thermometer.

1 lb turkey breast
1/4 cup cilantro, chopped
1/4 cup orange marmalade
2 tablespoons soy sauce
2 tablespoons olive oil
4 garlic cloves, minced
1/4 teaspoon salt
1/4 teaspoon black pepper, cracked
1 1/2 cups ripe mangoes, diced (1 mango)
1/3 cup red onion, finely chopped
1/4 cup lime juice
2 tablespoons chopped fresh cilantro
1 small jalapeno pepper, seeded and finely diced (optional)
1/8 teaspoon salt

Steps:

  • Slice turkey breast in half crosswise without cutting all the way through. Open like a book and set aside.
  • In a bowl, whisk together cilantro, marmalade, soy sauce, olive oil, garlic, salt and pepper.
  • Place turkey breast in self sealing plastic bag and turn to coat evenly. Let marinate in refrigerator for a least an hour and up to 2 days.
  • Arrange on a greased preheated grill over medium heat. Grill, turning once until browned and cooked all the way through (about 20 minutes). Transfer to a cutting board and let rest for 10 minutes before slicing. Serve immediately or serve cold.
  • Oven directions: To prepare turkey in the oven, arrange marinated turkey on foil lined rimmed baking sheet and roast in a 400F oven until turkey is cooked through and marinate is thick and bubbling, about 25 minutes.

  • MANGO-LIME SALSA:.
  • In a medium bowl, combine mango, onion, lime juice, cilantro jalapeno (if using) and salt. Let stand for 20 minutes before serving.

1 bottle (8 ounces) fat-free honey Dijon salad dressing

I love mango salsa whether or not the mango is grilled, so if you don't feel like grilling, you can still get a great salsa with these ingredients. Grilling, whether on an outdoor grill, a griddle or a grill pan, deepens the flavor of an already-rich-tasting fruit. I love the contrasts in this salsa: the crisp jicama with the soft, juicy mango; the sweet fruit; the spicy chile; and the grassy cilantro. Serve with fish or chicken.

1 large ripe but firm mango
1 teaspoon extra virgin olive oil or grapeseed oil
2 small Roma tomatoes (5 to 6 ounces) cut in small dice (about 2/3 cup diced tomato)
1/2 small jicama (about 4 ounces), peeled and finely chopped (about 2/3 cup)
2 tablespoons fresh lime juice
Salt to taste
1/4 cup chopped cilantro
1 or 2 serrano or jalapeño peppers, finely chopped

Steps:

  • Prepare a medium-hot grill. Cut mango down flat sides of the seed to get 2 large flat pieces. Brush exposed surface lightly with oil and place on grill. Grill for about 6 minutes, until light grill marks appear. Remove from heat. With the tip of a paring nife, cut thin slices down to the skin but not through it, then cut a herringbone pattern across the slices. Push on the skin side so the cut mango pops out, then cut away the dice from the skin. Cut dice smaller if they are larger than 1/2 inch. Transfer to a medium bowl.
  • Add remaining ingredients to bowl and toss together. Allow to sit for 15 to 30 minutes so flavors will ripen.

2 dried ancho chiles, stemmed and seeded
2 dried pasilla chile peppers, stemmed and seeded
2 teaspoons ground cumin
2 teaspoons dried minced onion
1 ½ teaspoons salt
½ teaspoon freshly ground black pepper
2 teaspoons brown sugar
2 limes, juiced
1 (5 pound) boneless turkey breast

Steps:

  • Blend ancho chiles, pasilla chiles, cumin, onion, salt, and pepper together using a spice or coffee grinder into a fine powder. Pour spice blend into a bowl and stir in brown sugar.
  • Squeeze lime juice over turkey and rub with spice blend. Let marinate for about 1 hour.
  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Reduce grill temperature to medium. Remove turkey from marinade, reserve any excess for basting. Sear turkey breast on the preheated grill, 3 to 4 minutes per side.
  • Turn 1/2 of the grill burners off. Roast breast on the grill for 15 to 20 minutes. Turn turkey over and baste with reserved marinade; cook until an instant-read thermometer inserted into the center reads at least 165 degrees F (74 degrees C), 15 to 20 minutes more. Let sit for 5 minutes before serving.
