This is a combination of two fabulous marinades. My kids absolutely love it and ask for me to make it all the time! And, just by using a gluten-free soy sauce, the entire recipe is gluten free! Serve with wasabi paste and rice.

¼ cup tamari (gluten-free soy sauce)
¼ cup sesame oil
2 tablespoons mirin (Japanese sweet wine)
2 tablespoons honey
2 tablespoons rice wine vinegar
2 tablespoons grated fresh ginger
2 green onions, thinly sliced, divided
2 cloves garlic, minced, or more to taste
4 (6 ounce) tuna steaks
2 tablespoons sesame seeds, or to taste
1 tablespoon olive oil

Steps:

  • Whisk tamari, sesame oil, mirin, honey, vinegar, ginger, green onions, and garlic together in a bowl until marinade is evenly mixed. Place tuna steaks in the marinade and refrigerate for at least 1 hour.
  • Spread sesame seeds onto a plate. Remove tuna from marinade and discard marinade. Press tuna into sesame seeds until evenly coated.
  • Heat olive oil in a cast iron skillet over high heat until very hot; cook tuna in the hot oil until cooked to desired doneness, 30 seconds to 5 minutes per side.

1 cup teriyaki sauce
¾ cup olive oil
2 tablespoons minced garlic
1 teaspoon ground black pepper
4 (4 ounce) fillets yellowfin tuna

Steps:

  • In a large resealable plastic bag, combine the teriyaki sauce, oil, garlic, and pepper. Place the tuna fillets in the bag. Seal the bag with as little air in it as possible. Give the mix a good shake, to ensure the tuna fillets are well coated. Marinate for 30 minutes in the refrigerator.
  • Meanwhile, preheat an outdoor grill for high heat, and lightly oil grate.
  • Remove tuna from marinade, and place on grill. For rare tuna, grill for 3 to 5 minutes on each side. For medium, grill 5 to 8 minutes per side. For well done, grill for 8 to 10 minutes per side.

1 1/2 pounds 1 1/4 -inch-thick ahi tuna, cut into 1- to 1 1/4 -inch cubes
Nonstick vegetable oil spray
1 large red bell pepper, cut into 1-inch squares
1 large sweet onion (such as Maui or Vidalia), cut into 1-inch squares

1/2 cup water
1/3 cup sugar
1 1/2 teaspoons kosher salt

2 6-inch japanese cucumbers (or Persian, cut into ⅛-inch slices)
2 teaspoons ginger (minced)
6 tablespoons lime juice (about 2 limes)
4 tablespoons soy sauce (plus 2 more teaspoons)
1 teaspoon sesame oil
2 tablespoons honey
2 teaspoons water
1/2 teaspoon red chili flakes (dried)
20 ounces ahi tuna ((four 5-oz pieces) about 1-inch thick)
8 tablespoons sesame seeds ((white, black or mixture of both))

Steps:

  • Combine vinegar, water, sugar, salt, and chili flakes in a medium saucepan and bring to a boil over high heat.
  • Remove from heat. Add cucumber slices and stir.
  • Let it rest for 10 minutes, then transfer cucumber to a sealable container and refrigerate until ready to use.
  • Whisk together all soy ginger lime sauce ingredients together in a small bowl. Set aside until ready to serve.
  • Place sesame seeds on a plate. Pat dry the tuna steaks with a paper towel to remove excess water.
  • Dredge and press tuna in sesame seeds, coating evenly. Sprinkle with more seeds as needed.
  • In a medium frying pan over medium-high heat, warm the oil until just smoking.

4 6 ounce ahi tuna steaks
1/2 tablespoon kosher salt
1/2 tablespoon coarse ground pepper
1/4 cup soy sauce
3 tablespoons local honey
1 tablespoon freshly squeezed lime
1 clove garlic, grated
1/4 teaspoon fresh ginger, grated
1/8 teaspoon fish sauce
1/2 teaspoon sesame seeds (optional)

Steps:

  • Prepare grill for two zone or direct/indirect grilling. Target the temperature between 500 and 600 degrees over direct heat. Ours was at 550.
  • Pat dry the tuna with a paper towel.
  • Combine the salt and pepper in a small dish and season the tuna steaks.
  • Place the seasoned tuna steaks over direct heat and grill for approximately 3 minutes. Flip to the other side and cook an additional 3 minutes. The internal temperature should be between 125 and 130 degrees F for a medium rare steak.
  • Remove from the grill. Slice the tuna into pencil thin slices and serve with the dipping sauce. Tuna is best served warm.

1/2 cup low-sodium soy sauce
1/4 cup chopped scallions (white and light green parts)
2 tablespoons fresh lemon juice
1 teaspoon sesame oil
1 teaspoon freshly grated ginger
4 (6-ounce) tuna steaks
1/2 cup sesame seeds (white and black combined or white only)
1/2 teaspoon cornstarch
1 teaspoon water

Steps:

  • Gather the ingredients.
  • In a large zip-top bag, combine the soy sauce, chopped scallions, lemon juice, sesame oil, and fresh ginger. Swish everything around in the bag until it's well combined.
  • Add the tuna steaks, turning to coat them completely with the marinade. Press the excess air out of the bag, seal, and marinate in the refrigerator for about 20 minutes. Preheat the grill to high heat; this can be a countertop contact grill, an open grill pan, or an outdoor gas or charcoal grill. If using a contact grill, set to "sear" or the highest temperature setting.
  • Place the sesame seeds on a plate or a shallow dish. Remove the tuna steaks from the marinade, brushing the scallions off the steaks; reserve the marinade. One at a time, coat the steaks in sesame seeds on all sides, pressing the seeds onto the steaks so they'll stick.
  • Spray the grill plates lightly with nonstick spray and place the steaks on the grill. If using a contact grill, close the cover so the top grill rests evenly on the steaks; do not press down.   • Mix Wasabi Sauce in small bowl combining Wasabi Horseradish and Mayo.
