This Grilled Tri Tip is the perfect entree for a weekday dinner with your family. It cooks up quickly and results in juicy, tender meat.

1 2-3 pound tri tip roast (fat cap removed)
2 Tablespoons Hey Grill Hey Beef Rub (or equal parts salt, pepper, and garlic powder)
¼ cup olive oil
¼ cup red wine
2 Tablespoons red wine vinegar
4 cloves garlic (crushed)

Steps:

  • Preheat. Preheat grill to medium (350 degrees F) for two-zone grilling.
  • Season. Season the tri tip on all sides with Beef Rub.
  • Make the mopping liquid. Combine all ingredients for the mopping liquid in a small bowl and set aside.
  • Grill. Place the seasoned tri tip roast directly on the grill grates over indirect heat. Close the lid and grill for 30-40 minutes, flipping every 6-7 minutes. Mop liberally with mopping liquid after each time you flip the roast. Continue to grill the tri tip until the internal temperature reads 125 degrees F (for medium rare).
  • Sear. When the roast reaches an internal temperature of 120 degrees F, move it over to direct heat and grill for 2-3 minutes per side or until the internal temperature reaches your desired doneness (See notes below for each temperature).
  • Rest, slice, and serve. Remove the tri tip from the grill. Rest the meat for 10 minutes then slice against the grain and serve.

2 pounds tri tip roast

Steps:

  • Preheat an outdoor grill for high heat and lightly oil grate.
  • In a medium bowl, combine garlic powder, salt and pepper. Mix together and coat both sides of tri tip.
  • Sear both sides on hot grill then cook 20-25 minutes or until center is light pink. Slice at an angle.

2 - 2 1/2 pound tri-tip steak (about 2" thick)
Kosher salt
Chipotle Rub

Steps:

  • Sprinkle tri-tip with kosher salt. Massage Chipotle Rub into meat. Let steak sit at room temperature for 1 hour or refrigerate uncovered overnight. Bring to room temperature before grilling.
  • Build a two-zone fire in a charcoal grill, or preheat a gas grill to medium-high. Cook 3-4 minutes per side over direct heat until nicely charred. Transfer to low-heat side (or lower gas grill heat to medium) and cook an additional 6-8 minutes per side or until an instant-read thermometer registers 120°F for rare (steak will carry over to 125°F, or medium-rare, as it rests).
  • Transfer meat to a carving board; let rest for 10 minutes. Thinly slice against the grain.

Steps:

  • Preheat the grill to medium.
  • Sprinkle each seasoning onto a cutting board. Take the tri-tips and roll them over the sprinkled seasonings, making sure to coat all sides evenly.
  • Place the tri-tips on the grill at a 45 degree angle to establish grill marks and cook about 35 minutes, or until desired doneness. Remove the tri-tips from the grill and let the meat rest about 2 to 5 minutes before slicing. Serve with your favorite side dishes.

I have loved tri-tip (bottom sirloin) ever since my father-in-law in Santa Barbara introduced me to it. Tri-tip is a cut of meat that first became popular in Santa Maria, on the central coast of California. I love the taste of the original Santa Maria rub, but this is even better.

1 ½ teaspoons garlic salt
½ teaspoon celery salt
¼ teaspoon ground black pepper
¼ teaspoon onion powder
¼ teaspoon paprika
¼ teaspoon dried dill

¼ teaspoon crushed dried rosemary
1 (2 1/2 pound) beef tri-tip roast

Steps:

  • Mix together the salt, garlic salt, celery salt, black pepper, onion powder, paprika, dill, sage, and rosemary in a bowl. Store in an airtight container at room temperature until ready to use.
  • Use a damp towel to lightly moisten the roast with water, then pat with the prepared rub. Refrigerate for a minimum of 2 hours, up to overnight, for the flavors to fully come together.
  • Preheat an outdoor grill for high heat and lightly oil grate.
  • Place the roast onto the preheated grill and quickly cook until brown on all sides to sear the meat, then remove. Reset the grill for medium-low indirect heat (if using charcoal, move coals to the outside edges of the grill pit).

2 teaspoons salt
2 teaspoons freshly ground black pepper
2 teaspoons garlic powder
1 ½ teaspoons paprika
1 teaspoon onion powder
1 teaspoon dried rosemary
¼ teaspoon cayenne pepper
1 (2 1/2 pound) beef tri-tip roast
⅓ cup red wine vinegar
⅓ cup vegetable oil
4 cloves crushed garlic
½ teaspoon Dijon mustard

Steps:

  • Stir salt, black pepper, garlic powder, paprika, onion powder, rosemary, and cayenne pepper together in a bowl. Place beef in a glass baking dish and coat beef on all sides with spice mixture. Cover the dish with plastic wrap and refrigerate for 4 hours.
  • Combine vinegar, vegetable oil, crushed garlic, and Dijon mustard together in a sealable container. Cover the container and shake to blend ingredients.
  • Remove beef from refrigerator, uncover, and let sit at room temperature for 30 minutes.
  • Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Place meat on preheated grill and brush with garlic-vinegar mixture. Cook meat for 4 minutes, flip, and baste. Repeat the flip and baste process every 4 minutes until beef starts to firm and is reddish-pink and juicy in the center, 25 to 30 minutes total. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C). Let rest for at least 10 minutes before slicing.
