CHILI-RUBBED TILAPIA WITH ASPARAGUS & LEMON
Tilapia, a relatively plentiful fish, has the unfortunate reputation of being dull. All it needs is a spice rub, a familiar barbecuing technique that works just as well indoors. You could also use this rub on chicken breasts or toss it with lightly oiled shrimp before cooking.

Steps:
- Bring 1 inch of water to a boil in a large saucepan. Put asparagus in a steamer basket, place in the pan, cover and steam until tender-crisp, about 4 minutes. Transfer to a large plate, spreading out to cool.
- Combine chili powder, garlic powder and 1/4 teaspoon salt on a plate. Dredge fillets in the spice mixture to coat. Heat oil in a large nonstick skillet over medium-high heat. Add the fish and cook until just opaque in the center, gently turning halfway, 5 to 7 minutes total. Divide among 4 plates. Immediately add lemon juice, the remaining 1/4 teaspoon salt and asparagus to the pan and cook, stirring constantly, until the asparagus is coated and heated through, about 2 minutes. Serve the asparagus with the fish.

SEARED TILAPIA WITH ASPARAGUS AND SPICY MINT GREMOLATA

- 1. Put a steamer basket in a large pot over 1-inch of boiling salted water. Add the asparagus; cover and steam until it is crisp-tender, 6 to 8 minutes.
- 2. In a small dish, stir together the mint, garlic, lemon zest and pepper flakes.
- 3. Brush the tilapia with 1 tablespoon oil; season with salt and pepper to taste. Add 2 tilapia fillets to hot pan; cook, turning once, until opaque throughout, 5 to 7 minutes total. Transfer to plates. Repeat with remaining tilapia.
- 4. Serve the tilapia with the asparagus; garnish with gremolata mixture. Drizzle the asparagus and fish with olive oil, if desired.

GRILLED TILAPIA WITH LEMON BUTTER, CAPERS AND ORZO
Steps:
- Combine the lemon zest, juice, wine and shallot in a small saucepan over high heat and cook until reduced by half. Remove from the heat and let cool. Whisk together the cream, butter and wine mixture in a small bowl and season with salt and pepper. Cover and refrigerate for 30 minutes. The lemon butter can be made 1 day in advance and refrigerated. Bring to room temperature before serving.
- Heat the grill to high.
- Brush the fish on both sides with the oil and season with salt and pepper. Grill the fish for 3 to 4 minutes per side or until lightly golden brown and slightly charred. Toss the orzo with a few tablespoons of the lemon butter and 2 tablespoons of the parsley and season with salt and pepper. Transfer the orzo to a platter. Remove from the grill and immediately place the fillets on the orzo and top each fillet with some of the lemon butter and capers. Garnish with the remaining parsley.

- Preheat grill.
- Spread oil on both sides of filets.
- Sprinkle with seasoning.
- Place on hot grill and cook for about 4 to 5 minutes over a medium high heat. Turn once during grilling.
- Serve with Aioli.
- Prepare aioli by combining all ingredients in a bowl, mixing and then refrigerate until you are ready for use.
- I served it with boiled new potatoes and green beans to dip in the Aioli.
- I use Low fat mayonnaise.
- Use seasoning of your choice.

- Preheat an outdoor grill for medium heat. Tear off 4 large squares of aluminum foil and spray with cooking spray.
- Melt 1/3 of the butter in a skillet over medium heat. Toss asparagus, onion, dill, and seasoning blend with butter. Divide among the foil squares.
- Top vegetables with swai fillets. Place small pats of remaining butter over each fish fillet. Sprinkle liberally with seasoning blend. Place lemon slices on top. Fold up foil into packets, sealing seams tightly but leaving room inside for steam to circulate.

- Heat gas or charcoal grill. Tear off 12-inch length of heavy-duty foil to make packet. Lightly spray 1 side of foil (side that will be inside of packet) with canola oil cooking spray.
- Place potatoes in 2-quart saucepan; cover potatoes with water. Heat to boiling. Reduce heat; cook until potatoes are just tender, about 10 minutes. Drain potatoes; return to saucepan. Add remaining ingredients; toss gently.
- Place mixture in center of foil. Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space on sides for heat circulation and expansion. Fold other sides to seal.

- Mix salad dressing and lemon juice, pour half of the mixture into a large resealable bag. Add fish; seal bag, turn several times to coat. Refrigerate 15 minutes. Refrigerate other halp of dressing for later.
- Remove fish from marinade, discard.
- Heat barbecue to medium heat. Cut each lemon into 4 slices, place 8 slices on barbecue grate in sets of 2. Place fish fillets over lemon slices, brush with some of the reserved dressing mixture. Cover lid.
- Grill fish 5 minutes; turn over, add remaining lemon slices and the asparagus to barbecue. Grill 5 minutes, brushing asparagus with dressing mixture, until tender-crisp.
- Remove fish, lemon slices and asparagus from girll, discard lemon slices under the fish. Serve remaining lemon slices with the gish and asparagus.

Mother's recipe for Northern Michigan Whitefilsh on the grill, but seems to be excellent for Tilapia. We don't live near Petoskey anynmore.

Steps:
- Turn your grill on.
- Oil a fish/vegetable pan for the grill -- one of those things that has all the holes in it.
- Spread out all the sliced onion on the grill pan.
- Place Tilapia fillets on top of the onions.
- Butter the fillets with mayo.
- Sprinkle with dill weed. You can go somewhat heavy with this. Like Christmas cookies.
- Sprinkle with black pepper.
- Sprinkle with paprika.
- Put pan on the grill. 10-15 minutes. Onions should be a little caramalized/charred.
- Serve with rice pilaf and grilled asparagus.
