BETTER THAN TAKEOUT HAM FRIED RICE
Fried rice loaded with ham and veggies that is so delicious it is better than takeout!

Steps:
- Preheat a large skillet or wok to medium heat. Pour sesame oil in the bottom. Add white onion, chopped ham, peas and carrots and fry until tender.
- Slide the onion, peas and carrots to the side, and pour the beaten eggs onto the other side. Using a spatula, scramble the eggs. Once cooked, mix the eggs with the vegetable mix.
- Add the rice to the veggie, ham and egg mixture. Pour the soy sauce on top. Stir and fry the rice and veggie mixture until heated through and combined. Add chopped green onions if desired.

- Heat the vegetable oil in a skillet over medium-high heat. Cook the green onions in the oil for 1 minute. Add the ham, eggs, and the peas and carrot blend to the oil. Cook and stir until the egg is completely cooked. Add the rice and bean sprouts to the egg mixture and stir continually until the rice is heated completely through. Remove from heat; season with salt, pepper, and soy sauce.

HAM AND EGG FRIED RICE
Steps:
- Heat a wok or a small, heavy skillet over high heat. Add 1 1/2 tablespoons oil, swirl to coat the pan. Add eggs and scramble them. As soon as there is no more freely running egg, turn them out into a bowl and break them into small bits. They should be soft and a bit runny -- not brown.
- Heat the wok or a large skillet and add 2 tablespoon oil to coat. Add the rice and toss briskly to coat and separate each grain, about 2 to 3 minutes. Add the ham and peas. Toss to mix in the ingredients and allow the mixture to heat through, about 30 seconds. Return the eggs to the pan and toss to combine. Season with salt, scallions and peanuts, tossing another 5 to 10 seconds to let the eggs get hot.

- Heat a large cast-iron skillet over high 3 minutes; add oil. Add garlic, ginger, and scallions. Cook, stirring, 30 seconds. Stir in ham and snow peas; cook 1 minute. Add jasmine rice; stir to combine, then push rice to side of skillet. Add eggs to empty side; let stand 30 seconds, then stir into rice. Stir in soy sauce. Garnish with sliced scallion greens; serve.

I love impressing my friends by making my own Chinese food. This recipe is based on a recipe by Ken Hom but I have modified it a little.

- Prepare your ingredients by slicing the water chestnuts, chopping the spring onions and ham. Then arrange your ingredients on a plate or in bowls ready. This makes it easier when coming to the actual stir frying section as you can just grab your ingredients.
- Beat the eggs together with the sesame oil and set aside.
- Place your wok over a high heat and add the groundnut oil. Heat until very hot (almost smoking).
- Add the cooked rice and stir fry for 3 minutes.
- Stir in the ham, peas, salt, pepper and soy sauce.Then stir fry for another minute or two.
- Add the beaten egg and sesame oil mix and stir through. Keep moving and stir fry for 1 minute. This should at first go kind of shiny and gloopy looking at this stage, then the eggs start to cook and distribute throughout the rice.
- Add the bean sprouts, water chestnuts and spring onions. Stir fry for a further 2 minutes then serve with your favorite Chinese dish -- or on it's own! Delicious!

- In a large nonstick skillet, heat 1 tablespoon oil over medium-low heat; swirl to coat pan. In a small bowl, lightly beat together eggs, 2 teaspoons water, and 1/4 teaspoon salt. Pour into pan; cook, pulling in egg from edge of pan, until set, about 2 minutes. Transfer to a plate; when cool enough to handle, cut into strips.

- Warm a tablespoon of bacon grease, or oil, in a large skillet over medium heat. Swirl the oil to coat the surface of the pan. Pour the eggs into the pan and tilt as needed to spread across the skillet. Let the eggs cook for 2-3 minutes and then flip. Cook one more minute. Slide the egg out of the skillet onto a cutting board and allow it to cool. Cut into 1/2-inch wide strips and then and cut into small pieces.
- Add a tablespoon of grease, or oil, to the skillet. Add the mushrooms and toss to coat. Spread them across the skillet and let them cook for 2-3 minutes until lightly browned. Stir and cook until slightly softened, about 2 more minutes. Transfer the mushrooms to the plate with the chopped eggs.
- Add the remaining tablespoon of grease, or oil, to the skillet and increase heat to medium high. Add the rice and stir to coat. Continue stirring and cooking for about 2 minutes. Add the soy sauce and sesame oil. Stir well, to distribute the sauce throughout the rice. Cook for 5 minutes, stirring frequently, until the rice is heated through.
- Add the ham, corn, and peas. Stir and cook an additional 3-4 minutes, until everything is hot. Add the eggs, mushrooms, and green onions to the skillet. Sprinkle with pepper. Stir gently to mix. Push the rice out of the center of the skillet and add the butter. Allow it to melt and stir to distribute the melted butter throughout the rice. Taste the rice and add salt, only if needed. Enjoy!
