2 swordfish steaks (about 4-ounces each)
pinch sea salt
2 tablespoons basil pesto
fresh herbs to garnish, such as diced basil or green onion (optional)

Steps:

  • Preheat grill to high.
  • While grill preheats, pat swordfish steaks dry and season both sides with salt. Rub a thin layer of basil pesto over both sides of the steaks.
  • Once the grill is hot, grill steaks for 3 minutes. Flip, and grill for 3 more minutes. Serve immediately, adding herb garnish if desired.

Grilled Swordfish Steaks with Olive Pesto image

This recipe works well with any meaty fish.

3 pounds 1-inch-thick swordfish steaks, cut into 8 pieces
Salt and freshly ground black pepper
1/2 cup plus 1 tablespoon extra-virgin olive oil, plus more for brushing
1/4 cup pitted oil-cured olives
1 small clove garlic, peeled
1 1/2 cups loosely packed arugula leaves
1/4 cup fresh flat-leaf parsley leaves
1/4 teaspoon dried oregano
12 small leeks, well washed

Steps:

  • Arrange swordfish steaks in a shallow baking dish, season well with salt and pepper, and coat with 3 tablespoons olive oil. Let marinate at room temperature for up to 1 hour, until ready to grill. (Or marinate longer in the refrigerator, and return fish to room temperature before grilling.)
  • Heat a grill or grill pan until very hot. Meanwhile, to make pesto, combine olives, garlic, arugula, parsley, oregano, and salt to taste in the bowl of a food processor. With machine on pulse, slowly add remaining 6 tablespoons olive oil. Add 1 1/2 tablespoons hot water, pulsing, until coarsely pureed. Set aside.
  • Place fish and leeks on grill. Cook for about 5 minutes; remove leeks from grill, then turn fish. Cook fish for another 5 minutes or until nearly cooked through; remove from grill, and transfer to a shallow serving dish.
  • Arrange leeks on a serving platter, and place fish on top. Spoon pesto over hot fish, turning fish to coat well. Pour juices over fish, and serve.

1/4 cup olive oil
1 cup nuts (piñon, almonds, pecans, or walnuts)
1 bunch cilantro or 1 bunch Italian parsley
1/4 cup parmesan cheese or 1/4 cup romano cheese, grated
1 head garlic, about 6-8 cloves
1/2 teaspoon pepper
lemon, zest of
lemon wedge, for garnish
herbs, sprigs,for garnish

Steps:

  • Pesto (makes 1 cup) Process or blend all sauce ingredients together until smooth.
  • Stir well before serving.
  • Pesto may be prepared in advance and frozen, or may be refrigerated for up to 2 weeks.
  • Broiled, Grilled or BBQ'ed: Baste with pesto when turning.
  • Cook 10 minutes total per inch of thickness, approximately 5 minutes per side.
  • Serve with pesto on top.
  • Garnish with lemon wedges.

1 bunch fresh basil, stemmed (about 3 cups)
1/2 cup pine nuts, toasted
1 clove garlic
1 lemon, zested and juiced
1 orange, zested and juiced
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup extra-virgin olive oil
1 cup grated Parmesan
4 (6-ounce) swordfish steaks
Extra-virgin olive oil
Salt and freshly ground black pepper

Steps:

  • Blend the basil, pine nuts, garlic, zests, juices, salt, and pepper in a food processor until the mixture is finely chopped. With the machine running, gradually add the olive oil until the mixture is smooth and creamy. Transfer to a bowl and stir in the Parmesan.
  • Place a grill pan over medium-high heat or preheat a gas or charcoal grill. Brush both sides of the swordfish fillets with olive oil and season with salt and pepper. Grill the swordfish about 3 to 4 minutes on each side for a 1-inch thick fillet.
  • Transfer the grilled swordfish to serving plates, top with the citrus pesto, and serve.

2 Tbsp bottled pesto
4 swordfish steaks (4-6 oz each)
1 Tbsp olive oil
2 cloves garlic
peeled and lightly crushed
2 cups cherry tomatoes
Salt and black pepper to taste

Steps:

  • Spread the pesto all over the swordfish steaks, cover, and marinate in the fridge for 30 minutes. While the fish marinates, heat the olive oil in a sauté pan over medium heat. Add the garlic and cook for a minute or two, until lightly browned. Add the tomatoes and sauté until the skins are lightly blistered and about to pop, about 5 minutes. Season with salt and pepper. Preheat a grill or grill pan. Season the fish all over with salt and pepper. When the grill is hot, cook the swordfish for 4 to 5 minutes per side, until the fish is cooked all the way through and the flesh flakes with gentle pressure. Reheat the tomatoes and top each steak with a scoop.

Steps:

2 heirloom tomatoes, small dice
1 jalapeño, minced (ribs and seeds removed if you'd like less heat)
1 small red onion, minced
1/4 cup chopped fresh cilantro
Juice of 2 limes
Extra-virgin olive oil
Kosher salt and freshly cracked black pepper
4 swordfish steaks, skin and bloodline removed

Steps:

  • Add the tomatoes, jalapeño, onions, cilantro and lime juice to a bowl and mix to combine. Add 2 tablespoons olive oil and season with salt and pepper. Let sit at room temperature for at least an hour for all the flavors to come together.
  • Set up your grill for indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only. Drizzle the swordfish with olive oil and sprinkle with salt and pepper on both sides. Place on the direct-heat side of the grill and cook until nicely charred, 2 to 3 minutes per side. Move to the indirect-heat side of the grill, close the lid and cook until cooked through, another 3 to 4 minutes. Remove from the grill to rest, about 5 minutes. 4 ounces baby arugula
Grated zest of 1 lemon

Steps:

  • Light a charcoal grill or preheat a gas or stovetop grill until very hot.
  • For the sauce, whisk together the lemon juice, olive oil, oregano, red pepper flakes, 1 tablespoon salt, and 1 teaspoon black pepper. Set aside.
  • When the grill is ready, sprinkle the fish with salt and pepper and cook over medium-high heat for 2 minutes on one side, then turn and cook for 1 to 2 minutes on the other side until almost cooked through. Remove to a flat dish, prick holes in the fish with the tines of a fork, and pour the lemon sauce over the fish while it¿s still hot. Sprinkle liberally with salt and pepper, cover with aluminum foil, and allow to rest for 5 minutes.
  • When ready to serve, place the swordfish on dinner plates or a serving platter, pile the arugula on top, drizzle with the sauce from the fish, and sprinkle with the grated lemon zest. Serve warm.
