GRILLED SWORDFISH
This light summery dish of grilled swordfish looks effortless when you have friends over.

Steps:
- Season the swordfish steaks with salt and pepper and place in a shallow dish. Mix all the marinade ingredients together, and pour over the swordfish. Leave to marinade for no longer than 15 minutes (you don't want to risk the lemon "cooking" the fish).
- Meanwhile, to make the sauce, blanch the broad beans in a pan of boiling water for 2 minutes, then drain and set aside.
- Make the gremolata by mixing together the lemon zest, olives, capers and parsley.
- Heat a tablespoon of olive oil in a heavy-based frying pan. When the pan is very hot, add the swordfish steaks and fry for 3-4 minutes on each side.
- Remove from the pan and leave to rest while you finish the sauce. Deglaze the pan with the white wine, then add the butter. Swirl until the butter has melted, then add the blanched broad beans. Heat through.
- Serve the swordfish with the sauce spooned over and the gremolata on the side.
GRILLED SWORDFISH
Swordfish is a great fish to grill and this is a super simple recipe. Swordfish is a little deceptive because the smell is rather strong but it is mellow in flavor. The marinade adds just enough flavor. Fresh dill gives this fish a summer vibe. A delicious grilled dinner for a warm summer's night.

- 1. In a bowl, combine dill, garlic, olive oil, salt, and pepper.
- 2. Coat both sides of the steaks. Cover and marinate in the fridge for 1 hour.
- 3. Prepare your grill by preheating it to about 400 degrees and oil the grate. Place the steak on the grill for about 5 minutes.
- 4. After 5 minutes flip the steak carefully with a spatula.
- 5. Baste the steak with the marinade while cooking. Flip and baste the other side. Cook for just a few minutes.
- 6. Serve while hot with a wedge of lemon.

- Mix all marinade ingredients in bowl.
- Mix well.
- Put the fish in the marinade.
- Let marinate for 1 hour.
- Grill fish on high heat 4 minutes.
- Turn and grill another 4 minutes.
- Don't overcook, the fish will get dry!

- Preheat outdoor grill for medium heat.
- Marinate swordfish in teriyaki sauce for 5 minutes per side.
- Lightly oil grill grate. Grill steaks, basting frequently with melted margarine, for 5 to 6 minutes per side, or until fish flakes easily with a fork. Season with garlic powder, and serve.

Making fish is so easy and adding a fruit salsa makes this recipe just plain excellent! I make this on the grill most of the time but you can use the broiler or oven.

Steps:
- Thaw the fish if frozen, rinse and pat dry with a paper towel. Place the fish in a shallow glass bowl.
- For the Marinate:.
- Combine orange juice,lemon juice,garlic clove minced,lime juice,cooking oil and ground ginger in a bowl. Add the Swordfish cover at room temperature for 30 minutes or put in frig if you want to marinate for a longer period. Turn the Swordfish at least twice.Discard marinate when finished.
- For the Grill: Heat to medium, grill for 7-8 minutes on each side.
- For the Broiler: Broil for 5-7 minutes each side.
- For the Oven: Heat oven to 350 bake for 20-30 minutes or desired texture.
- For the Salsa:.
- Stir together the orange,pineapple,onion,sweet pepper,parsley,2 tablespoons lime juice and jalapeno pepper. Cover and Chill!
- Serve with salsa on the fish.
