WORLD'S BEST GRILLED STEAK

World's Best Grilled Steak image

It is the perfect blend of flavors and it leaves the meat tender without being overpowering. Note: I'm not sure of the origins of this recipe, I don't see a duplicate. Will post a picture.

Provided by Food Network

Categories     side-dish

Time 2h10m

Yield 1 serving

Number Of Ingredients 25

1 (10-ounce) rib-eye steak
2 cloves garlic, sliced
6 sprigs fresh thyme sprigs, crushed
2 tablespoons olive oil
Kosher salt
Freshly ground black pepper
Gorgonzola Cream Sauce, recipe follows
Sauteed Spinach, recipe follows
Matchstick Fries, recipe follows
2 tablespoons unsalted butter
2 tablespoons onions, finely diced
1 tablespoon fresh thyme leaves
1 tablespoon all-purpose flour
1 cup heavy cream
2 tablespoons sherry
1/2 to 1 cup Gorgonzola, Danish bleu, or Stilton cheese
Kosher salt
Freshly ground black pepper
2 tablespoons extra-virgin olive oil
2 garlic cloves, sliced
1 bunch fresh spinach, cleaned well
Kosher salt and freshly ground black pepper
Oil, for frying
2 white creamer potatoes, or Yukon golds, peeled, and julienned
Kosher salt

Steps:

  • In a dish put steak, garlic, thyme, and olive oil. Turn the steak in the ingredients a few times and allow to marinate in the refrigerator for 1 hour. Heat a grill or skillet with grill ridges to high heat.
  • Before grilling, remove garlic, and thyme from steak. Season well with salt and pepper, and grill to desired doneness.
  • Serve steak with Gorgonzola cream sauce, spinach, and Matchstick fries.
  • In a small saucepan, melt the butter. Add the onions, and thyme, then whisk in the flour. Cook the flour for 1 minute. Add heavy cream and sherry, and continue to whisk. • Fill a deep pot halfway full with oil. Heat the oil to 350 degrees F. Carefully add the potatoes to the hot oil and fry for 1 minute. Drain and reserve.
  • When you are ready to serve the potatoes, make sure your oil is at 350 degrees F, and fry until crisp, and golden. Drain the fries on a paper towel and season with salt, to taste.

  • For the Steak Seasoning: Add ingredients to a mortar and pestle then coarsely grind. Alternatively, add ingredients to a heavy duty Ziplock bag, squeeze all the air out, then crush ingredients with a meat pounder, rolling pin, or heavy bottomed skillet.
  • For the Herb Butter: Add ingredients to a bowl then stir with a fork to combine. Scoop herb butter onto a sheet of plastic wrap then shape into a thick log and refrigerate until firm (if time is of the essence you can freeze for 20-30 minutes.) Can be done ahead of time.
  • For the steaks: Trim steaks of any big hunks of fat to avoid flare ups on the grill then pat dry with a paper towel. Rub each side with oil then season generously with the steak seasoning and press gently into steaks so it adheres - you should use most if not all of the seasoning.
  • Light 2/3 or 1/2 of your grill burners (2 of 3 burners, or 1 of 2 burners, depending on how many burners you have) then heat on high for 10-15 minutes, or until the grill reaches 500 degrees. Add steaks to the lit side then sear on each side for 1-1/2 minutes (adjust accordingly if your steaks are bigger or smaller than 1lb cut 1-1/2" thick,) keeping the lid closed between flipping. Transfer steaks to unlit portion of grill then continue cooking for 7-10 minutes with the lid closed for medium doneness, or until they've reached your preferred level of doneness. Remove steaks to a platter then let rest for at least 5 minutes. Top with sliced herb butter then serve.
