1/2 cup dried brown lentils, rinsed
1 tablespoon olive oil
1/8 teaspoon salt
1-3/4 cups water
2 tablespoons garlic powder, divided
1 pound uncooked shrimp (26-30 per pound), peeled and deveined
2 teaspoons seafood seasoning
2 tablespoons butter
1/2 teaspoon crushed red pepper flakes
2 teaspoons lemon juice
3 cups fresh baby spinach
1/4 teaspoon ground nutmeg
1/4 cup finely chopped sweet onion
Lemon wedges

Steps:

  • Place first 4 ingredients and 1 tablespoon garlic powder in a small saucepan; bring to a boil. Reduce heat; simmer, covered, until lentils are tender, 17-20 minutes., Toss shrimp with seafood seasoning. In a large skillet, melt butter over medium-high heat. Add pepper flakes and remaining garlic powder; cook and stir 30 seconds. Add shrimp; cook and stir until shrimp turn pink, 3-4 minutes. Stir in lemon juice; remove from pan and keep warm., Add spinach and nutmeg to pan; cook and stir over medium-high heat until spinach is wilted. Remove from heat., To serve, divide lentils among 4 bowls. Top with shrimp, spinach and onion. Serve with lemon wedges.

Shrimp Kebabs with Lentil-Herb Salad image

Half a pound of shrimp feeds four people in this clever kebab dish with the help of a filling lentil salad side.

Number Of Ingredients 16

1 cup dried brown lentils, picked through and rinsed
1 clove garlic, halved
Kosher salt
1/4 cup extra-virgin olive oil
3/4 teaspoon ground cumin
Juice of 1 lemon
Freshly ground black pepper
8 ounces medium shrimp, peeled and deveined
16 grape tomatoes
1 small yellow squash, cut into 16 rounds or half-moons just under 1/2-inch thick
1/2 teaspoon ground coriander
1/2 teaspoon smoked sweet paprika
2 tablespoons roughly chopped fresh dill or mint
2 tablespoons roughly chopped fresh parsley
2 scallions, thinly sliced
Lemon wedges, for serving

Steps:

  • Combine 5 cups cold water, the lentils, garlic and 2 teaspoons salt in a medium saucepan. Bring to a boil, and then reduce to a simmer. Simmer until the lentils are tender but still hold their shape, 20 to 25 minutes, then drain. Remove the garlic halves and mash them with the flat side of a knife. Place the mashed garlic in a large bowl. Whisk in 2 tablespoons of the oil, 1/4 teaspoon of the cumin, the lemon juice, a few grinds of pepper and 1/2 teaspoon salt. Add the drained lentils and toss to coat.
  • Heat a grill pan set over medium-high heat. Place the shrimp in a medium bowl and the tomatoes and squash in another bowl. To each bowl, add 1 tablespoon of the olive oil, 1/4 teaspoon cumin, 1/4 teaspoon coriander, 1/4 teaspoon paprika, 1/4 teaspoon salt and a pinch of pepper. Toss to coat. Thread 2 pieces of shrimp, 2 tomatoes and 2 pieces of squash onto each skewer. Rest the kebabs at room temperature for 15 minutes.
  • Grill the skewers until the shrimp are firm and opaque and the squash are firm-tender, 1 1/2 to 2 minutes per side. Sprinkle lightly with salt.
  • Fold the dill, parsley and scallions into the lentil salad, then divide among four plates. Top each salad with 2 skewers. Serve with lemon wedges on the side.

Grilled shrimp on a salad of lentils and fresh herbs makes a light summer meal.

1 cup small green or brown lentils
1 clove garlic, peeled
1 bay leaf
1/2 teaspoon ground cumin
Salt and freshly ground pepper
1 orange, lemon, and lime
1 1/2 tablespoons olive oil
1/2 seedless cucumber (about 1 pound), peeled if waxy
1/4 medium red onion, peeled and cut into 1/4-inch dice
2 large tomatoes, cut into 1/4-inch dice
1/2 cup fresh mint leaves, chopped
1/2 cup fresh parsley leaves, chopped
1 cup watercress leaves, chopped
2 teaspoons lemon juice
2 1/2 teaspoons sherry vinegar
12 jumbo shrimp (about 1 pound), peeled and deveined

Steps:

  • In a 3-quart saucepan, combine 4 cups water, lentils, garlic, bay leaf, cumin, andsalt and pepper to taste, and bring to a boil. Reduce heat and simmer until lentils are tender, about 30 minutes.
  • Meanwhile, with a sharp knife, remove peel and pith from fruit. Over a bowl, cut away membrane, collecting juice. Chop fruit into 1/4-inch dice; add to juice. Toss with1/2 tablespoon oil and season with salt and pepper. Set aside.
  • Cut cucumber on diagonal into 1/4-inch slices, then cut into thin strips. Set aside.
  • Drain lentils; discard garlic and bay leaf; let cool. Toss with onion, tomatoes, mint, parsley, watercress, lemon juice, vinegar, remaining oil, and salt and pepper to taste. Set aside.
  • Heat grill or cast-iron grill pan. Marinate shrimp for 10 minutes in 2 tablespoons of the citrus dressing. Remove shrimp, season with salt and pepper, and grill until opaque, about 3 to 4 minutes per side.
  • Divide the cucumbers among 4 plates. Top each with a quarter of the lentils and 3 shrimp. Spoon citrus dressing over salads.

1/2 cup medium or coarsely cracked bulgur
1 1/2 cups boiling water
3/4 cup baby arugula leaves
2 large green onions, thinly sliced
3 tablespoons finely chopped fresh mint, plus fresh mint leaves for garnish
1/4 cup fresh lemon or lime juice
1 clove garlic, chopped to a paste
1/4 cup olive oil
Salt and freshly ground black pepper
Grilled shrimp, recipe follows
1/4 cup fresh lemon juice
3 tablespoons chopped fresh mint
1/4 cup canola oil
1/4 teaspoon ground black pepper
1 pound shrimp (20 to 24 size), shelled and deveined
Salt

Steps:

  • Place bulgur in a bowl and pour the boiling water over. Cover with plastic wrap and let stand until bulgur is tender and most of the water is absorbed, about 1 to 2 hours.
  • Drain off any excess liquid from the bulgur and stir in the arugula, green onions and mint.
  • Whisk together the lemon juice, garlic and oil and season with salt and pepper. Pour the mixture over the bulgur and season with salt and pepper.
  • Transfer tabbouleh to a platter and top with the grilled shrimp. Garnish with fresh mint leaves.
  • Combine juice, mint, oil and pepper in a blender and blend until smooth. Place shrimp in a bowl, pour marinade over and stir to coat evenly in the marinade. Marinate for 10 minutes.
  • Heat grill to high. Season shrimp with salt and grill for 1 to 2 minutes per side or until slightly charred and just cooked through.

  • Place bulgur in a large bowl. Cover with cold water. Let stand for one to two hours. Drain through a fine-meshed sieve. Place in a large bowl. (Note: If you are not using this extra-coarse bulgur, cook bulgur according to package instructions.)
  • Heat a gas grill to high or prepare a charcoal grill for high heat (guidance here if needed: Grilling 101).
  • Add the onions, cucumber, tomatoes, and salt to the bowl of bulgur. Toss. Add the scallions, chives, and cilantro or parsley, and toss again.
  • Combine the orange and lime juice. You should have at least 1/2 cup of juice. If you don’t, juice another lime. Pour 1/2 cup of juice into the bowl of bulgur and vegetables. Add the olive oil. Season with pepper to taste. Toss. Let sit for 10 minutes before adjusting the flavor — the salt draws out the moisture in the vegetables, and you may not need additional juice/oil. Taste and adjust seasoning as necessary with more salt, lime, olive oil, or pepper as needed. Set salad aside.
