GRILLED ASPARAGUS WITH BARBECUE BUTTER



Grilled Asparagus with Barbecue Butter image

2 pounds large asparagus, trimmed
1 teaspoon Neelys BBQ seasoning, recipe follows
1 tablespoon olive oil
Salt and pepper
Barbecue butter
1 tablespoon Neelys BBQ seasoning, recipe follows
1 stick butter, slightly softened
4 ounces paprika
2 ounces white sugar
1 teaspoon onion powder

Steps:

  • Break off ends of asparagus.
  • For the butter:
  • Mix rub into butter. Spread the butter mixture lengthwise across a piece of plastic wrap. Roll the butter up tightly into a log and twist the ends. Refrigerate.
  • Preheat grill. If using a stovetop grill, use medium-high heat. Gently toss asparagus with seasoning, oil and salt and pepper, to taste. Grill asparagus until tender, turning once, about 6 minutes. Serve with barbecue butter.
  • Mix ingredients together and store in an airtight container for up to 6 months.

12 (1/2-inch-thick) slices brioche or firm white sandwich bread, crusts discarded
16 jumbo shrimp, peeled, leaving tail fan attached, and deveined
3/4 stick unsalted butter, softened
2 tablespoons finely chopped dill
1 tablespoon finely chopped shallot
Equipment: 8 (2-ounce) ramekins or small ovenproof cups

Steps:

  • Preheat oven to 375°F with rack in middle.
  • Cut bread into 24 (2- by 1-inch) rectangles, then bake in a 4-sided sheet pan, turning once or twice, until golden, 8 to 10 minutes. (Leave oven on.) Transfer to a rack to cool.
  • Season shrimp with 1/4 teaspoon salt and 1/8 teaspoon pepper. Mash together butter, dill, shallot, and 1/4 teaspoon each of salt and pepper. Put a dab of dill butter in each ramekin, then put ramekins in sheet pan. Arrange 2 shrimp, with tails up and facing each other, in each ramekin. Spread remaining dill butter in ramekins and bake until shrimp are just cooked through, 20 to 25 minutes. Serve with toasts.

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a rimmed 9x12-inch baking pan with parchment paper and grease with cooking spray.
  • Place asparagus on the prepared baking pan and drizzle with 1 tablespoon olive oil. Sprinkle with garlic, 1 teaspoon salt, and 1/2 teaspoon pepper; toss until well coated. Arrange asparagus in a single layer.
  • Bake in the preheated oven until slightly tender, about 6 minutes.
  • Remove from oven and place shrimp on one side of the pan. Drizzle with remaining 1 tablespoon olive oil, 1 teaspoon salt, 1/2 teaspoon pepper, and smoked paprika; toss until well coated. Place shrimp in a single layer next to the asparagus. Top asparagus and shrimp with cubed butter.

  • Cook fettuccine as directed on package to desired doneness. Drain; cover to keep warm.
  • Meanwhile, in small bowl, mix broth and flour. Stir in lemon juice and dill. Set aside.
  • In 10-inch nonstick skillet or Dutch oven, heat olive oil over medium heat until hot. Add asparagus; cook and stir 2 minutes. Add shrimp; cook and stir 3 minutes longer or until shrimp turn pink.
  • Add broth mixture to skillet; cook over medium heat, stirring frequently, until slightly thickened.

60g unsalted butter
½ tsp sea salt
½ tsp cayenne pepper
½ tsp ground mace
¼ tsp pink peppercorns , lightly crushed using a pestle and mortar
500g asparagus spears, woody ends trimmed
200g peeled brown shrimp (or see tip below)
2 wild garlic leaves , plus a few to serve (optional), or handful finely shredded chervil or chives
1 lemon , juiced
a few chive flowers (optional)
chunks of crusty white bread , to serve

Steps:

  • Put a large platter in the oven to warm up. Gently melt the butter in a small saucepan over a low heat, then stir in the sea salt, spices and peppercorns. Remove from the heat.
  • To cook the asparagus, bring a little salted water (about 5cm deep) to the boil in a saucepan, making sure the saucepan is wide enough to fit the asparagus laying flat without crowding it. Add the asparagus and poach for 2-3 mins, or until a knife inserted into the thickest part of a spear can be pulled out with no resistance.
  • Meanwhile, return the spiced butter pan to the heat, then add the shrimp, wild garlic or herbs and lemon juice, basting the shrimps well. Taste and season, if necessary. Drain the asparagus and pile onto the warm platter, then pour over the shrimps and spiced butter. Garnish with the flowers, if using, then serve with chunks of crusty bread.

1 lb medium shrimp (fresh or frozen)
1 lb fresh asparagus
1/4 cup butter, softened
1 tablespoon fresh dill, chopped or 1 teaspoon dried dill
1 tablespoon dry white wine
1/2 teaspoon lemon zest
1/8 teaspoon salt
1/8 teaspoon pepper
1 medium leek, thinly sliced (roots and tough, dark green leaves removed)
3 cups cooked pasta or 3 cups cooked rice

Steps:

  • Preheat grill.
  • Thaw shrimp (if frozen), peel and devein shrmp, removing tails if desired.
  • Rinse shrimp and pat dry with paper towels, set aside.
  • Snap off and discard woody bases from asparagus.
  • Cut asparagus diagonally into 2-inch pieces.
  • In a small bowl, stir together the butter, dill, wine, lemon zest, salt and pepper; set aside.
  • Fold a 36x18-inch piece of heavy duty foil in half to make an 18-inch square.
  • Place shrimp, asparagus, and leek in center of foil and top with dill butter mixture.
  • Bring up opposite edges of foil and seal with a double fold.
  • Fold remaining edges together to completely enclose shrimp mixture, leaving space for steam to build.
  • Grill covered over medium heat 15 minutes or until shrimp are opaque, turning packet once.
  • Serve over pasta or rice, drizzle with juices from foil packet.

1 lb tub-shaped pasta, such as ziti or penne
1 tablespoon olive oil
1 tablespoon butter
2 medium shallots, finely chopped
1/2 lb asparagus, trimmed and cut in 2 inch lengths
1 clove garlic, minced
1/2 cup chopped fresh dill
1 lb medium shrimp, peeled and deveined
2 tablespoons extra virgin olive oil
salt, to taste
fresh ground black pepper, to taste

Steps:

  • Bring a large pot of lightly salted water to a boil.
  • Add the pasta and boil vigorously for the time recommended on the pasta package or until the pasta is tender.
  • Meanwhile, heat the tablespoon of oil and the butter in a medium skillet until the butter melts.
  • Add the shallots and cook until softened, about 2 minutes.
  • Add the asparagus and cook until it loses its raw look, about 2 minutes.
  • Add 1 cup of the pasta water, raise the heat to medium-high, and boil until the aspargus turns bright green, about 2 minutes.
  • Add the garlic, dill and shrimp.
  • Remove from the heat and stir in the additional olive oil, salt and pepper.
  • Drain the pasta and toss in a serving bowl with the shrimp and asparagus.

5 ounces sorrel, leaves only, cut across into thin strips (about 3 cups), or substitute watercress
2 pounds asparagus, tough parts of stems broken off, remaining portions peeled and cut into 1-inch lengths
1 1/2 pounds medium shrimp, peeled and, if desired, deveined, or 1 1/4 pounds cleaned
1 teaspoon kosher salt
Freshly ground black pepper to taste
4 cups cooked white rice

Steps:

  • Melt butter over low heat in large frying pan. Add sorrel, and cook, stirring occasionally, for 2 to 3 minutes, until sorrel is wilted.
  • Turn up heat. Add asparagus and shrimp. Cook for 2 minutes, stirring, until shrimp begin to change color. Add 1/2 cup water, and cover. Cook, stirring once, for 5 minutes. Shrimp should be cooked through, but not tough, and asparagus tender.
  • Season with salt and pepper, and serve over rice.

6 1/2 tablespoons extra virgin olive oil, divided
4 tablespoons red wine vinegar, divided
2 medium zucchini, cut lengthwise into 1/4 inch slices
1 red bell pepper, quartered
3 tablespoons pesto sauce
2 tablespoons fresh lime juice
1 lb uncooked large shrimp, peeled and deveined
2 tomatoes, cored and cut into 1/2 inch cubes
1/2 cup thinly sliced fresh basil
8 ounces fresh mozzarella cheese, cut into 1/2 inch cubes

Steps:

  • Cook orzo in a large pot of boiling salted water until tender, but still firm to bite, stirring occasionally. Drain. Rinse with cold water; drain well. Transfer to a large bowl and toss with 1 tablespoon olive oil.
  • Prepare barbeque on medium-high heat. Whisk 2 tablespoon oil and 2 tablespoons vinegar in small bowl. Brush zucchini and bell pepper with oil mixture, then sprinkle with salt and pepper.
  • Whisk pesto, lime juice, remaining 3 1/2 tablepoons oil and remaining 2 tablespoon vinegar in small bowl for pesto vinaigrette.
  • Place shrimp in medium bowl. Add 2 tablespoons pesto vinaigrette; toss to coat.
  • Grill zucchini and bell pepper until crisp tender, about 3 minutes per side for zucchini and 4 minutes per side for bell pepper. Transfer to work surface.
  • Sprinkle shrimp with salt and pepper; grill until charred and cooked through, 2-3 minutes per side.
  • Place shrimp in bowl with orzo.
  • Chop zucchini and bell pepper; add to bowl with orzo.
  • Add remaining vinaigrette, tomatoes, sliced basil, and mozzarella; toss to combine. Season to taste with salt and pepper.
  • Can be made 2 hours ahead. Cover and chill. Garnish with basil sprigs and serve cold or at room temperature.

2 tablespoons butter
2 tablespoons honey
2 tablespoons lemon juice
1/2 cup water
2 teaspoons cornstarch
1 1/2 lbs fresh asparagus spears
1 lb shrimp, large deveined tails on
1 tablespoon lemon juice
1 tablespoon sesame seeds (optional)
1 teaspoon finely grated lemon zest (optional)
1 pinch nutmeg (not too much!) (optional)

Steps:

  • Prepare Grill (or broiler pan) to cook shrimp.
  • In small saucepan, combine butter, honey and 2 TSP lemon juice and, if desired, lemon zest; cook and stir over Medium-low heat until butter is melted. In small bowl, combine water and cornstarch; blend well. Stir into lemon mixture. Cook over med heat until bubbly and thickened, stirring constantly, about 1-2 minutes. Turn burner on low and remember to stir every few minutes while preparing the shrimp and asparagus. NOTE: ingredients can be doubled for more glaze, if desired.
  • Sprinkle 1 TB lemon juice over shrimp in bowl. Toss to coat.
  • Place peeled, deveined shrimp with tails on singly in grill basket or on broiler sheet that has been sprayed with non-stick spray.
  • Set shrimp aside and prepare asparagus; Fill Dutch oven or stockpot with 3 inches of water; bring to a boil quickly using lid on pot. Trim asparagus and cut spears diagonally in half. Add asparagus. Reduce heat; cover and cook 3-5 minutes or until crisp-tender.
  • After reducing heat on asparagus, put shrimp on grill or under broiler 4-5 inches from heat for 4 minutes. Turn shrimp once and return to grill or broiler for 4 more minutes or until opaque.
  • Arrange asparagus in center of serving plate, criss-crossing stems artfully. Arrange shrimp in a circle around asparagus. Drizzle glaze over asparagus and shrimp.
  • If desired, sprinkle sesame seeds over top.
  • If desired, (very lightly!) sprinkle nutmeg over top.

1/4 cup olive oil
1 tablespoon lemon juice
2 teaspoons dill weed
2 garlic cloves, minced
3/4 teaspoon salt

1 pound uncooked shrimp (31-40 per pound), peeled and deveined

Steps:

  • In a large bowl, whisk the first 6 ingredients until blended. Reserve 3 tablespoons marinade for basting. Add shrimp to remaining marinade; toss to coat. Refrigerate, covered, 15 minutes., Drain shrimp, discarding any remaining marinade. Thread shrimp onto 4 or 8 metal or soaked wooden skewers. Grill, covered, over medium heat or broil 4 in. from heat 2-4 minutes on each side, basting with reserved marinade during the last minute of cooking.

Pickled Asparagus with Dill image

Pickled asparagus is delicious, and this recipe was given to me by my best friend, Carole. We get our asparagus in the spring from the Yakima Valley in central WA. Use the freshest dill you can find and pack the spears in quart jars making sure all spears are covered with pickling juice. These are great with salads, in cocktails, or served as a snack. Check out the price at the grocery store. You'll be glad you made your own.

4 -5 lbs fresh asparagus, washed and bottoms snapped
1 large white onions or 1 large yellow onion, thinly sliced
2 heads garlic
2 1/2 cups white vinegar
2 1/2 cups water
2 tablespoons pickling salt (non iodized salt)
fresh dill

Steps:

  • Clean and sterilize wide mouth canning jars.
  • Clean garlic and pound with with chef's knife so it cracks a bit.
  • Wash and clean asparagus.
  • Remove tough bottom.
  • Heck you know how to snap asparagus.
  • Prepare it in lengths so it will fit into jars.
  • Save the tender bottoms for dinner.
  • Pack jars with some onion, garlic, dill and asparagus.
  • The amount of each is up to your personal taste.
  • This is the hardest part.
  • Mix vinegar, water, and salt in a pot.
  • Bring to a boil Pour hot liquid into jars making sure that spears are covered but not touching the metal sealing lid.
  • Wipe any spills from lip of jars.
  • Burp air bubbles from jars.
  • Seal jars with lid and ring.
  • Process jars in a canner (hot water bath).
  • Make sure tops of jars are covered with 1 inch of water.
  • Allow to boil 20 minutes.
  • Start timing when water reaches a boil.
  • Ready to eat in 4 to 6 weeks.

Substitute asparagus with any vegetable. You can boil the vegetables with the pasta instead of grilling them.

6 ounces whole wheat linguine
1 lemon
2 tablespoons olive oil, divided
½ cup chopped onion
½ teaspoon ground black pepper, divided
½ cup reduced-sodium chicken broth
½ cup shredded Parmesan cheese, divided
1 tablespoon butter
1 pound large shrimp, peeled and deveined
3 cloves garlic, minced
12 ounces fresh asparagus
4 (10-inch) metal skewers
cooking spray

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook linguine at a boil until still very firm to the bite, about 6 minutes. Drain, reserving 2/3 cup of the pasta cooking water. Keep warm.
  • While pasta cooks, remove 1 teaspoon zest and squeeze 1 tablespoon juice from lemon.
  • Heat 1 tablespoon oil in a 10-inch skillet over medium heat. Add onion; cook, stirring occasionally, for 4 minutes. Add linguine, the reserved pasta cooking water, and 1/4 teaspoon black pepper. Cook just until pasta is tender and most of the water is absorbed, stirring frequently, about 4 minutes. Add lemon juice, chicken broth, 1/4 cup Parmesan cheese, and butter. Cook and stir 2 minutes more.
  • Meanwhile, preheat an outdoor grill for medium heat and lightly oil the grate.
  • Combine shrimp, remaining oil and pepper, and garlic in a medium bowl. Thread shrimp onto four 10-inch skewers, leaving 1/4 inch between pieces. Coat asparagus with cooking spray.
  • Grill shrimp skewers and asparagus (place across the grates), covered, until shrimp are opaque and asparagus is crisp-tender, 4 to 6 minutes, turning once.
  • Cut tips from asparagus; cut stalks into 1-inch pieces. Stir asparagus into linguine mixture; heat through. Serve topped with shrimp skewers, the remaining 1/4 cup Parmesan cheese, and lemon zest.

Simple flavors... Grilled shrimp, finished in a basic, yet 'oh, so good' garlic and butter sauce. I am not a shells-on gal but they make heck of a difference. Pick them off the serving plate and enjoy! Get a napkin--you'll need it.

1 small bunch fresh Italian parsley, stemmed and roughly chopped
2 tablespoons olive oil
1 pound fresh medium shrimp - shells on, rinsed, and patted dry
bamboo skewers
1 tablespoon seasoned salt (such as Lawry's®), or to taste
½ cup salted butter
3 cloves garlic, minced

Steps:

  • Place parsley and olive oil into a resealable plastic bag. Add shrimp, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for at least 2 hours. Soak skewers in water during the last 30 minutes or so.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Remove shrimp from the marinade and thread onto skewers. Season generously with seasoned salt. Place parsley and remaining marinade in a grill-safe pan with butter and garlic.
  • Grill skewers until shrimp are pink and firm, about 3 minutes per side. In the meantime, place the grill pan on the grate; melt and simmer the butter-parsley mixture until butter is just golden-brown, 4 to 5 minutes.
  • Remove shrimp from skewers and drop into the butter-parsley mixture. Toss to coat. Serve immediately.
