Steps:
- Mince garlic and add all ingredients except for chicken to a plastic zip-topped bag.
- Add chicken to bag and marinate for at least 20 minutes, or overnight. Flip bag to distribute marinade occasionally.
- Remove chicken from refrigerator and preheat grill to medium high, about 375 degrees.
- Place chicken legs on hot grill and cook for 20 minutes, flip over and cook for another 10-15 minutes or until chicken reaches an internal temperature of 185 degrees. (See note below.)
- Let rest for at least 5-10 minutes and dig in!

- Preheat. Preheat your grill for two-zone grilling, with the temp on the grill to medium-high heat (375-400 degrees F).
- Season. Season the chicken drumsticks on all sides with garlic salt and black pepper.
- Grill. Place the chicken legs on the grill. Grill over direct heat for 30-35 minutes, flipping every 5-7 minutes. Grill until the internal temperature of the chicken reaches 165 degrees F with an internal thermometer.
- Sauce. Move the grilled drumsticks to the indirect side of the grill, and baste them with the Teriyaki BBQ Sauce (or your favorite BBQ sauce). Grill for an additional 5-10 minutes on indirect heat until the sauce sets and begins to caramelize and the internal temperature reaches 175 degrees F.
- Enjoy. Remove the grilled drumsticks from the grill. Rest for a few minutes before serving with additional teriyaki BBQ sauce on the side for extra dipping. Enjoy!

- In a small bowl, combine the first 5 ingredients. Pour 1 cup marinade into a large shallow dish. Add the chicken; turn to coat. Cover and refrigerate for at least 4 hours or overnight. - Place chicken drumsticks into a resealable bag; add olive oil to coat. Add ranch dressing mix, cayenne pepper, salt, and black pepper. Close the bag and mix until drumsticks are covered. Let marinate in the refrigerator, 30 minutes to 1 hour.
- Preheat an outdoor grill for medium heat and lightly oil the grate. Remove chicken from the bag; discard marinade.

- Pre-heat oven to 350°F Spray a 13x9 pan with cooking spray. Place drumettes into pan and sprinkle with Salt,pepper and onion powder.
- Cook in 350°F for 30 minutes.
- Meanwhile in a small saucepan mix brown sugar,dry mustard, Marsala,soy sauce and minced garlic. Bring to boil over medium heat than turn down to simmer while drumettes cook. Stir sauce occasionally.
- After 30 minutes turn oven down to 325 degrees and pour sauce over wings turning wings to coat with sauce.

- Preheat grill to get a surface temp of about 450°. That is medium-high on a standard gas grill and medium on a hot gas grill. Clean and oil.
- Pat dry the drumsticks. Trim off excess skin and any loose bones/tissue especially in the joint area.
- Season to taste. You can use my 7:2:2 spice mix. A little cayenne is nice. You may want to skip the cayenne if cooking for little ones. Or use the seasoning of your choice.
- Let rest at room temperature until grill is ready.
- Check grill temp if possible and place chicken on the grill. Flip about every 5 minutes until internal temp of 180°-185° degrees. About 30-35 minutes.
- Let rest for 5-10 minutes before serving. They are way too hot anyway.

YUMMY BAKED CHICKEN DRUMMIES

- Wash the chicken and pat dry. In a baking dish large enough to hold the chicken in 1 layer, mix together the lemon juice, brown sugar, oil, garlic, paprika, garam masala, ginger, turmeric, a pinch of salt and a few grinds of black pepper. Add the chicken and toss to coat. Arrange the chicken in a single layer in the baking dish. Cover the dish with aluminum foil and transfer to the oven. Bake until the chicken reaches 150 degrees F on an instant-read thermometer, about 35 minutes.
- While the chicken bakes, warm the butter in a pan over medium-low heat. Add the onions and a pinch of salt. Saute, cooking slowly, until the onions are golden brown and caramelized, about 20 minutes. Stir in the raisins and rum, and use a wooden spoon to loosen any onion bits from the bottom of the pan. Cook until the alcohol evaporates, leaving just the rum scented flavor, about 2 minutes, then remove the pan from the heat. When the chicken reaches 150 degrees F, spoon the onion-raisin mixture over the chicken. Raise the oven temperature to 400 degrees F, then return chicken to the oven and bake for 10 minutes more, uncovered. The chicken will be fully cooked when it reaches 160 degrees F. Transfer to a serving platter and serve warm or cold.
