GRILLED SCALLOP AND ORANGE SKEWERS
Prepare half the skewers with fresh bay leaves and half with thyme.

- Remove small muscle from sides of scallops, and discard. Combine juices, oil, and salt and pepper to taste. Crush a few sprigs of thyme, and add to marinade. Stir in scallops. Marinate in the refrigerator for 1 to 3 hours.
- Heat a grill or grill pan to medium hot, and place grid 4 inches above coals. Double-skewer scallops, alternating with orange sections. Tuck a sprig of thyme or skewer a bay leaf between each scallop and orange. Lay skewers in a pan, and pour remaining marinade over them.
- Grill for 2 to 3 minutes on each side, until scallops are opaque and lightly charred. Serve immediately.
SCALLOPS AND MANGO SKEWERS
Sweet and meaty, fresh scallops are the most user-friendly of mollusks and make for easy summer suppers. Skewer them with bell peppers, red onion and mango, and they can go from grill to table in about 15 minutes flat. The trick to grilling scallops is simple: Err on the side of undercooking since an undercooked scallop is far more enjoyable than an overcooked one. Take the scallops off the grill before they're opaque all the way through.

- Heat a charcoal or gas grill until very hot. Brush the grill grate with a little oil and put it 3 or 4 inches from the heat.
- Thread the scallops through their equators onto metal or soaked wooden skewers, alternating them with mango, red bell pepper and onion. Brush with oil and season with salt and pepper.
- Grill skewers until browned and release easily from the grill, 2 to 3 minutes per side. Take the scallops off the grill before the interior becomes totally opaque.
- Sprinkle with cilantro and serve with lime wedges.

- Heat grill to medium; clean and lightly oil hot grates. In a small bowl, combine honey and orange juice.
- Onto four skewers, thread orange wedges (through skin), ginger, cucumber, and scallops, beginning and ending with orange wedges; season with salt and pepper. Grill kebabs until scallops are opaque throughout, 4 to 6 minutes, turning and basting with honey mixture halfway through.

- In small bowl, mix first five ingredients to make sauce. Assemble skewers by placing one scallop (or two-three bay scallops) and one piece of scallion on each skewer. (These skewers can be prepped a day ahead and kept chilled in the fridge, then grilled a few hours before party time and kept warm until serving.)
- Brush with ginger soy sauce and cook about two minutes per side or until just opaque. Be careful not to overcook scallops or they'll get a rubbery texture. Continue to brush with sauce throughout cooking.

- Mix all sauce ingredients in a bowl.
- Mix first 4 vegetable ingredients in a large bowl.
- Add watercress, cucumber, carrot, cilantro and onion; toss to blend.
- Season with salt and pepper.
- Let stand for 30 minutes or chill up to 1 hour, tossing occasionally.
- Stir coriander seeds in small skillet over medium heat until fragrant and slightly darker, about 2 minutes.
- Transfer seeds to a plastic bag.
- Using mallet or hammer, coarsely crack seeds.
- Combine sesame oil and ginger in medium bowl; mix in coriander seeds and then scallops.
- Let stand at least 30 minutes or chill up to 1 hour.
- Prepare barbecue to medium-high heat.
- Thread 3 scallops onto each of 4 skewers.
- Brush barbecue rack with oil to prevent sticking.
- Grill scallops until just opaque in center, about 3 minutes per side.
- Divide vegetables among 2 plates.
- Top each with scallops and serve, passing Hoisin-Orange sauce separately.

GRILLED SEA SCALLOP AND SHIITAKE SKEWERS
Grilled shiitake mushrooms are crispy on the outside, tender on the inside, and pair nicely with sea scallops. I like to serve them with roasted broccoli, but roasted potatoes are a good choice too.

- Place mushrooms in a bowl. Add soy sauce, olive oil, and lemon juice. Stir to coat.
- Place scallops, olive oil, lemon juice, garlic, and Italian seasoning in a separate bowl. Stir to coat.
