Fresh salmon, tart lemon and herby dill are our favorite culinary harbingers of the arrival of spring. Celebrate your first grillout of the season with this light and fresh entrée and simple sauce for salmon, which is perfect for a celebratory dinner or just a simple family supper.

2 tablespoons finely chopped shallots
1/4 cup dry white wine
3 tablespoons fresh lemon juice
6 tablespoons cold butter
1 tablespoon chopped fresh dill
1 tablespoon finely chopped fresh chives
1/8 teaspoon pepper
1 tablespoon olive oil
1 tablespoon fresh lemon juice
1 lb. salmon fillets, cut into 4 pieces
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Heat gas or charcoal grill. In small saucepan, combine shallots, wine and 3 tablespoons lemon juice. Bring to a boil over medium-high heat. Reduce heat to medium; cook 5 to 7 minutes or until mixture is reduced to about 2 to 3 tablespoons, stirring occasionally.
  • Remove from heat. Stir in cold butter 1 tablespoon at a time until each is well blended. Stir in dill, chives and 1/8 teaspoon pepper. Cover to keep warm.
  • In small bowl, combine oil and 1 tablespoon lemon juice; mix well. Brush over salmon fillets. Sprinkle with salt and 1/4 teaspoon pepper.
  • When grill is heated, place salmon, skin side up, on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 8 to 10 minutes or until fish flakes easily with fork, turning once and brushing occasionally with any remaining oil mixture. If necessary, reheat butter sauce over very low heat, stirring constantly. Serve salmon with butter sauce.

4 - 6 oz salmon fillets
kosher salt
oil (for brushing grill)
4 Tbsp unsalted butter (1/2 stick)
2 cloves garlic (minced)
1 Tbsp dill (parsley, OR chives)
salt and fresh cracked pepper
lemon wedges

Steps:

  • Ensure the grates on the outdoor grill are very clean and preheat to medium.
  • Season each of the salmon filets with salt then allow them to come to room temperature while the grill is preheating.
  • Meanwhile, melt the butter in a small saucepan and add garlic. Allow the garlic to cook in the butter for approximately 1 minute until the garlic softens just a bit. Remove the pan from the heat, stir in your choice of herb then allow the garlic herb butter to cool until you are finished grilling the salmon.
  • Once the grill has preheated, blot any moisture from the surface of the salmon with paper towels. Brush the grates with oil, place the salmon flesh side down on the grill and close the lid of the grill. Allow the salmon to sear on the first side for approximately 2-3 minutes. Usually, the salmon will release itself from sticking to the grill when it is ready to be turned.
  • Flip the salmon and cook on the remaining side until it is cooked to desired doneness-this will vary depending on the thickness of your salmon filets. Once the salmon flakes when pressed gently, it's done.
  • Remove salmon from the grill and brush each filet generously with garlic herb butter. Season with a little coarse salt and fresh cracked pepper then serve with a few lemon wedges for squeezing.

1/2 lemon (juiced (about 1 tablespoon))
1 tablespoon finely minced fresh rosemary

4 salmon filets (6 ounces each)
Grilled Lemon Butter Asparagus for Serving (optional, click for recipe)

Steps:

  • Preheat Grill and spray a grill pan liberally with I Can't Believe It's Not Butter! Original Spray.
  • In a small bowl or mortar and pestle, combine the garlic, lemon juice, rosemary, salt and pepper. Use the pestle or the end of a small glass to crush the garlic and rosemary into the lemon juice, creating a paste.
  • Spread the garlic paste over each piece of salmon, using it all. Allow to cool in the fridge for 20 minutes with the paste over the salmon.
  • Remove salmon from the fridge and spray each piece of salmon 4 times with the I Can't Believe It's Not Butter! Original Spray.
  • Flip the salmon over so it's skin side up on the grill pan and spray the bottom of each piece with the I Can't Believe It's Not Butter! Original Spray spray.
  • Grill, covered, for 4-5 minutes, then flip each salmon filet. Spray again with I Can't Believe It's Not Butter! Original Spray (about 2 sprays per filet) and cover again, cooking for an additional 6-8 minutes.
  • Once salmon is fully cooked through (it will be flakey and have an internal temp of at least 145F), remove from the grill and serve.

1 lemon, very thinly sliced, seeds removed
1 clove garlic, sliced

One 1 1/2-pound piece center-cut skinless salmon fillet
4 tablespoons (1/2 stick) unsalted butter, melted
1 tablespoon dried Italian seasoning

Steps:

  • Prepare a grill for medium-high heat.
  • Toss the onion, lemon and garlic with a generous pinch each of salt and pepper. Spread the mixture in the center of a 24-inch-long piece of heavy-duty foil. Put the salmon on top of the onion mixture, drizzle with the butter and sprinkle with the Italian seasoning and a generous amount of salt and pepper. Bring the 2 long sides of foil together and fold over twice to seal. Bring the ends of the foil in and crimp to seal, leaving a bit of room for steam to circulate inside.
  • Place the packet on the grill and cook for 10 to 15 minutes. Careful of the steam, open the packet and check the salmon. It should be mostly opaque with a slightly rosy center. Transfer the package to a cutting board and set aside for about 5 minutes.

  • Salmon:
  • Heat a grill to medium-high heat.

2 tablespoons toasted sesame oil
1 tablespoon soy sauce
1 tablespoon mirin or honey

Steps:

  • Make the sesame soy butter: Melt the butter in a small saucepan over low heat. Whisk in the sesame oil, soy sauce, mirin and several grinds of pepper until well-blended. Remove from the heat and reserve.
  • Set up your grill for direct grilling and heat to high (450 to 600 degrees). Brush or scrape the grill grate clean and oil it with a tightly folded paper towel dipped in oil and drawn across the grate with tongs. Fold a 12-by-18-inch sheet of aluminum foil in thirds like a business letter to make a grill shield.
  • Meanwhile, cut the tapered end off one ear of corn. Pull the husk back over the stem end as if peeling a banana to expose the kernels. Rotate the corn as you peel it and gather the husks together below the stem. Tightly tie the husks with butcher's string or a strip of corn husk to form a handle. Discard the silks. Repeat with the remaining corn. Breathe a sigh of relief: The hard part is over. Brush each ear of corn on all sides with some of the sesame-soy butter.
  • Arrange the corn on the grate, sliding the folded aluminum foil grill shield under the husks to keep them from burning. Grill the corn, turning the ears so they roast evenly and basting the corn with some sesame-soy butter, until darkly browned all over, about 3 minutes per side. (If you are using a gas grill, close the cover while grilling.)
  • Transfer the corn to a platter. Brush one final time with any remaining sesame-soy butter. Sprinkle the corn on all sides with sesame seeds and chives.

1 large garlic clove, chopped
1/4 cup lime juice, fresh
1 teaspoon salt

Steps:

  • In a blender, puree the garlic, lime juice, salt and pepper until smooth. Add melted butter and blend another 30 seconds. Season salmon fillets all over with salt and pepper. 4 (6-ounce) salmon fillets
1/4 cup lemon juice
1 tablespoon lemon zest
2 tablespoons olive oil (or avocado oil)
1 1/2 teaspoons fresh thyme leaves, lightly chopped
1-2 cloves garlic, minced
1 teaspoon of sea salt
Optional : lemon wedges

Steps:

  • Gather the ingredients.
  • If the salmon is frozen, allow it to defrost in the refrigerator.
  • Combine the lemon juice , lemon zest, oil, thyme, garlic, and salt in a large resealable bag. Add the salmon and turn the fillets or steaks to coat them evenly.
  • Seal the bag and refrigerate it for 30 minutes to 1 hour. Do not allow it to marinate any longer as the salmon can become mushy.
  • Preheat the grill for medium-high heat. Right before placing salmon on the grill, oil the grill grates well using large tongs, folded paper towels, and oil. Make several passes across the grates. This will help the fish from sticking and breaking apart.
  • Remove the salmon from the bag and place on the hot grill. Brush salmon with marinade from the ziptop bag only once, at the start. Grill the salmon for about 4 to 6 minutes per side.
  • Remove the salmon from the heat once the internal temperature of the fish reaches 145 F. The salmon should be light in color and flake easily through the thickest part.
  • Optionally, squeeze fresh lemon over each fillet right before you take it off the grill.
  • Serve and enjoy!

1 1/2 teaspoons lime zest, fresh finely grated
garlic clove, chopped (use one large clove)
1/4 cup fresh lime juice
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup unsalted butter, melted

Steps:

  • Prepare grill for cooking over medium-hot charcoal (moderate heat for gas).
  • Season salmon all over with salt and pepper, then grill, flesh sides down, on lightly oiled grill rack (covered only if using gas grill) 4 minutes.
  • Turn fillets over and grill (covered only if using gas grill) until just cooked through, 4 to 6 minutes more.
  • Sprinkle fillets with zest and top each with 1 tablespoon lime butter sauce.
  • ***Lime Butter Sauce:.
  • Purée garlic with lime juice, salt, and pepper in a blender until smooth.
  • With motor running, add melted butter and blend until emulsified, about 30 seconds.
