3 tablespoons soy sauce
2 tablespoons pure maple syrup
1 clove garlic, minced
2 teaspoons minced fresh ginger root
½ teaspoon freshly ground black pepper
½ teaspoon salt
2 (5 ounce) salmon fillets

Steps:

  • Combine soy sauce, maple syrup, garlic, ginger, pepper, and salt in a shallow container with a tight-fitting lid. Place salmon, flesh-side down, in the container and seal. Marinate in the refrigerator for 30 minutes.
  • Preheat an outdoor grill for high heat and lightly oil the grate. Once heated, turn down one side to low heat.
  • Place salmon, skin-side down, over low heat on the preheated grill and close the lid. Allow to cook, basting once with reserved marinade, until easily flaked with a fork, about 20 minutes. Salmon will easily remove from the grill by sliding a spatula between salmon and the skin.

2 tablespoons finely chopped fresh cilantro
1 tablespoon light mayonnaise
2 teaspoons pure maple syrup
Four 5-ounce skinless center-cut salmon fillets
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet with aluminum foil.
  • Mix together the mustard, 1 tablespoon of the cilantro, the mayonnaise and maple syrup in a bowl. Put the salmon fillets on the baking sheet and sprinkle with 1/4 teaspoon each salt and pepper. Spread some of the mustard mixture evenly over each fillet.
  • Bake until just cooked through, 10 to 12 minute. Sprinkle with the remaining 1 tablespoon cilantro and serve.

  • Preheat oven to 400ºF. If desired, line a baking sheet with parchment paper for easy clean up.

1 tablespoon balsamic vinegar

4 salmon fillets, about 2 pounds, or 1 piece
1 soaked cedar grilling plank

Steps:

  • Soak plank in water for 1-2 hours.
  • In small bowl, whisk mustard, maple syrup, balsamic vinegar and salt and pepper to taste.
  • Prepare grill to temperature of 350º.
  • Wipe plank dry and place on hot grill and close lid.
  • Heat plank for 3 minutes on one side and then flip and heat another 3 minutes until plank begins to smoke and crackle.
  • Using tongs, take plank off grill and onto a sheet pan. Arrange salmon on plank and brush it all over with maple mustard sauce. Season with salt and pepper.
  • Return plank with salmon to the grill with tongs. Close lid and grill until just done, about 10 minutes (about 20 minutes if using a whole piece).

MAPLE-DILL GLAZE:
1 1/2 tsps. Dijon mustard
2 tbsps. balsamic vinegar
1/4 cup Hungry Jack® Microwave Ready Lite Syrup or Hungry Jack® Microwave Ready Regular Syrup
1/2 tsp. finely minced garlic
1 tsp. dill weed
1/2 tsp. salt
2 tbsps. Crisco® Puritan Canola Oil with Omega-3 DHA

Steps:

  • WHISK together mustard, vinegar, syrup, garlic, dill weed and salt in small bowl. Gradually whisk in oil. Place 3 tablespoons glaze in a resealable food storage bag with salmon. Marinate 1 hour in refrigerator.
  • BRUSH grill pan with oil and heat over medium-high heat. Once grill is hot, place fillets, skin side up, in pan. Cook 10 to 12 minutes, turning once or until fish is opaque throughout. Place 3 tablespoons glaze in a small bowl. Brush the fillets with glaze during the last few minutes of cooking.

  • For the maple mustard sauce, place all ingredients in a tall container and use an immersion blender to blend to a smooth consistency. Alternatively, you can whisk together all ingredients except for the oil in a bowl, then stream in the oil while whisking constantly to incorporate. Once done, set aside while you prepare the salmon.
  • Rinse the salmon fillets and pat dry with paper towel. Drizzle or brush oil all over both sides, skin included. Combine your seasonings and sprinkle all over the salmon.
  • Heat your grill or grill pan to medium high heat. You can spray with avocado oil spray as an extra step to prevent sticking. Once heated, place the salmon skin side down on the grill and cook 3-4 minutes, adjusting heat if necessary. Use tongs to carefully flip the fillets without separating the skin. Cook on the second side another 3-4 minutes, or until the salmon flakes with a fork.
  • Remove salmon to a serving plate and drizzle all over with the maple mustard sauce right away. Garnish with extra black pepper and fresh herbs if desired. This is great served alongside cauliflower rice and over a salad. Enjoy!
