3/4 cup balsamic vinegar
2 tablespoons maple syrup
1 tablespoon Dijon mustard
1 clove garlic, peeled and smashed or chopped
Four 6-ounce center-cut salmon fillets, skinned
2 tablespoons olive oil
Kosher salt and freshly ground pepper
2 tablespoons olive oil
1 large or 2 small shallots, thinly sliced
Kosher salt and freshly ground pepper

2 cloves garlic, peeled and smashed or chopped
2 1/2 cups frozen shelled edamame (12 ounces), thawed
2 cups sugar snap peas (6 ounces), halved

Steps:

  • For the glaze: In a small saucepan, bring the vinegar, maple syrup, mustard and garlic to a boil over medium heat. Reduce the heat to a simmer and cook until thick, about 12 minutes. Set aside to cool for 5 minutes.
  • For the salmon: Position a rack in the center of the oven and preheat the oven to 400 degrees F. Line a small baking sheet with parchment paper. Arrange the salmon on the baking sheet. Drizzle both sides of the salmon with the olive oil and season with 1 teaspoon salt and 1/2 teaspoon pepper. Roast until the salmon is cooked through and flakes easily with a fork, 8 to 10 minutes. Set aside to cool for 10 minutes.
  • For the vegetables: In a medium skillet, heat the olive oil over medium-high heat. Add the shallots, 1 teaspoon salt and 1/4 teaspoon pepper, and cook until the shallots are softened, about 3 minutes. Add the garlic and cook until aromatic, about 30 seconds. Add the edamame and snap peas and cook until warmed through, about 3 minutes. Season with salt and pepper.
  • Divide the vegetable mixture among 4 serving plates. Top with a piece of salmon and drizzle with the glaze.

1/2 Red Pepper; quartered
1/2 Green Pepper; quartered
2 Salmon Fillets with skin
Marinade and Seasoning:
Juice of half a lemon
3 Tbsp. Olive Oil
Salt (Pepper and Garlic Powder)
Strawberry Balsamic Glaze:
10 Strawberries Pureed (seeds strained out)
3 Tbsp. Brown Sugar
1/4 C. Balsamic Vinegar
1/4 Tsp. Red Pepper Flakes

Steps:

  • Season raw salmon generously with salt, pepper and garlic powder.
  • Place pepper quarters on 2 kabob sticks.
  • Mix together olive oil and lemon juice in small bowl.
  • Place seasoned salmon and pepper kabobs on a tray.
  • Lightly brush salmon and kabobs with olive oil/lemon juice mixture.
  • Lightly brush heated grill with olive oil to avoid sticking.
  • Place salmon on middle of grill (skin side up) and pepper kabobs on sides of grill to avoid overcooking.
  • Grill Salmon for around 3-4 minutes and flip.
  • Grill for around 8-10 more minutes (skin side down).
  • Turn pepper kabobs throughout the salmon cooking time.
  • Salmon is fully cooked when it easily flakes with a fork.
  • The salmon's skin easily peels off once fully cooked.
  • Prepare Glaze:
  • Puree strawberries in a blender or food processor and strain out seeds (I use a sifter)
  • Heat small skillet to medium heat.
  • Add strawberry puree and balsamic vinegar, brown sugar and pepper flakes; stirring continuously.
  • Cook until glaze slightly thickens and bubbles; around 5 minutes.
  • Serve:
  • Remove peppers from kabob sticks, place salmon fillet over half of peppers and top with glaze.

This is by far, my favorite company meal. We eat this salmon very often. It is so tender and delicious. Everyone I have served it to has always loved it - even children. Don't be afraid of the cayenne pepper - this is not a spicy dish. The original version of this recipe actually called for more cayenne (3/4 tsp.) which you are welcome to try if you like it a bit more spicy. The salmon called for in this recipe is a whole side of a fish - do not cut up until after it is cooked. The skin acts as a moisture protector on the grill and also helps hold the fish together- it can be removed after cooking, if you prefer. Adapted from a similar recipe in Quick Cooking magazine.

1 1/2 cups brown sugar, packed
4 tablespoons butter or 4 tablespoons margarine, melted
6 tablespoons lemon juice
2 1/4 teaspoons dried dill weed
1/2 teaspoon cayenne pepper, to taste
2 -3 lbs salmon fillets, skin on,deboned
lemon-pepper seasoning, to taste
sea salt, to taste

Steps:

  • In a small bowl, combine brown sugar, melted butter, lemon juice, dill, and cayenne pepper, mixing well.
  • Pour 1/2 cup of this sauce into a small saucepan- once the fish is in its final 5 minutes of cooking time, heat this until warm and pour over cooked fish.
  • Set aside the remaining unheated sauce to use for basting the fish as you grill.
  • Place the salmon, skin side down, on a large platter and season with lemon pepper seasoning and sea salt to taste.
  • Note: If your lemon-pepper seasoning already contains salt, then don't add the extra salt.
  • Lightly brush grill grates with some oil and heat grill to medium.
  • Carefully slide salmon off of the platter and onto the grill, skin side down,using a large metal spatula to help.
  • Cover grill and cook fish, undisturbed, for 5 minutes exactly.
  • Baste liberally with the reserved basting sauce, re-cover, and cook another 10-15 minutes- basting every 5 minutes.
  • Use up all of the basting sauce (Don't forgot to heat up the 1/2 cup reserved sauce from before).
  • Fish is ready when it begins to flake and is starting to appear as if milk is seeping out.
  • Carefullly remove to a fresh,clean platter and pour the 1/2 cup sauce you had simmering on the stove over the top of the fish.

3/4 cup diced strawberry
2 tablespoons cilantro
1 1/2 teaspoons diced jalapenos
1 tablespoon diced green onion

Steps:

  • 1. Place salmon fillet on a baking sheet and use a pastry brush to brush it with a few coats of balsamic vinegar. Reserve the rest of the balsamic for later. Season salmon with a dash of salt and pepper.
  • 2. Bake salmon for 15-20 minutes until cooked to your desired level of doneness. For well done fish, you may need to add a couple of extra minutes in the oven.

They were promoting their frozen salmon fillets - which are the only frozen fish I have even tasted that I enjoyed (thaw first). This is a really simple, yet tasty recipe for nights when you are too lazy or tired to do much else. You may certainly use fresh salmon, which is what I usually do. The type of salmon fillets you want are the ones cut from the side of the fish into thick strips (as opposed to the horseshoe-shaped type).

1/4 cup lemon-pepper seasoning, blend to taste
2 tablespoons extra virgin olive oil
2 -3 fresh garlic cloves, crushed
7 (6 ounce) salmon fillets, deboned, skinless
1 -2 lemon, cut into wedges
fresh parsley, to garnish (optional)

Steps:

  • Make a paste of the lemon pepper salt, olive oil, and garlic.
  • Rub some of the paste onto each salmon piece, as much or as little as you prefer to taste.
  • Cover and chill 20 minutes (don't let sit too long or the salt will start to cook the fish).
  • Grill (medium heat) or broil (high) until salmon is cooked through to your liking- it should be just starting to flake and it should look like milk is starting to seep out of the fish.
  • The time will vary,especially if you use an outdoor grill, but roughly 7-12 minutes or so is a good guess.
  • Garnish with a bit of fresh parsley and serve with lemon wedges on the side to squirt on each piece as desired.

All you have to do is warm slightly before using, and can be served with many kinds of grilled or seared fish or meat. I went ahead and doubled the glaze part of the recipe because I like plenty of sauce on my salmon!

My hubby decided we should make this for company this weekend, and I thought I'd share my neighbor's recipe with my friends at Zaar. (I have not personally prepared this dish yet). Prep time does not include 1 hour chilling time. Cook time does not include the time to prepare the charcoal grill.

6 skinless salmon fillet (or fish of your choice)
1 English cucumbers or 1 seedless cucumber, finely chopped
1 green onion, thinly sliced
1 yellow pepper, finely chopped
1 tablespoon cilantro, cut into strips
3 -4 tablespoons seasoned rice wine vinegar
2 cups fresh strawberries, hulled and diced small
1/4 lb butter, unsalted
1 clove garlic
1 tablespoon honey
2 tablespoons soy sauce
1 tablespoon fresh lemon juice

Steps:

  • ***Salsa***.
  • Mix together cucumbers, green onion, yellow pepper, cilanto and vinegar.
