GRILLED TILAPIA WITH CUCUMBER YOGURT SAUCE

- For the cucumber yogurt sauce: Add the dill, olive oil, cayenne pepper, garlic, yogurt, cucumber and lemon juice to a medium bowl and combine. Season the sauce with salt and pepper. Cover with plastic wrap and refrigerate until ready to serve.
- For the grilled tilapia: Preheat the grill to medium-high heat. Sprinkle the fish evenly with the salt and pepper. Oil the grill grates with a clean tea towel. Grill the tilapia 4 minutes, then flip and cook the second side, 4 to 5 minutes longer. Transfer to a platter. Top each fillet tableside with the cucumber yogurt sauce.
LEMON DILL GRILLED SHRIMP WITH YOGURT HERB SAUCE
Steps:
- In a large bowl combine all of the shrimp ingredients tossing to coat the shrimp. Let the shrimp marinate in the mixture for 10-15 minutes, but no longer than that.
- In a small bowl combine all of the ingredients for the yogurt herb sauce. Taste for seasoning, then cover and refrigerate until ready to serve.
- Preheat grill to medium-high heat and oil the grill grates. Thread the shrimp onto metal skewers then place them on the prepared grill. Grill for approximately 2 minutes per side depending on the size of your shrimp.
- Remove the shrimp from the skewers and serve with the yogurt herb sauce for dipping.
CUCUMBER-YOGURT DIP

- Cut the garlic clove in half and place the halves at the edge of the cutting board. Use the dull side of your chef's knife to cut the garlic almost to a mash, then use the sharp side to mince it. Put the garlic and lemon juice in a small bowl along with a pinch of salt to remove the raw taste from the garlic and lightly pickle it.
- Chop the cucumber, scallions, and parsley and add them to the garlic.
- Finish by mixing in the yogurt, dried mint, and olive oil. Season with salt and serve with crudités, pita, or latkes.

- Combine all prawn or shrimp ingredients except the prawns or shrimp in a large resealable plastic bag. Add prawns; turn to coat. Refrigerate 30 to 60 minutes.
- Meanwhile, mash 1 1/2 teaspoons garlic and salt with back of fork or side of chef's knife to form a paste. Combine garlic and all remaining sauce ingredients in small bowl; cover and refrigerate.
- Heat grill. Thread prawns onto 4 (12- to 16-inch) wooden or metal skewers.* Grill, covered, over medium-high heat or coals 3 to 4 minutes or until prawns turn pink, turning once. Serve with sauce.

- To make the sauce- stir together the sauce ingredients in a small bow. Set aside.
- For the prawns- Mix together the coriander, cumin, pepper and salt in a large bowl. Add the prawns, toss to coat.
- Preheat the barbecue. Thread the prawns onto skewers and cook on both sides until done- SHould take less than 5 minutes to cook.
- Serve warm or chilled with the mustard dipping sauce.
