AVOCADO RANCH BURGERS WITH SMOKED CHEDDAR
These are each served open-faced on a single piece of toasted bread, but you can certainly double up there. I'm seriously considering doing these in the Cameron's Smoker I just got... :o)

Steps:
- Place 1/4 of the dry ranch mix in a small bowl; set aside.
- In a medium bowl, mix together the remaining ranch mix, ground beef, onion and barbecue sauce; mix well.
- Form into 4 large flat patties and grill over medium heat for 5 to 6 minutes per side or until cooked through.
- Top each with about 3 tablespoons shredded cheese while still warm.
- Grill bread slices until lightly toasted.
- Add mashed avocado to remaining dry ranch mix and mix well.
- To assemble, top each bread slice with a lettuce leaf, 2 tomato slices and a burger patty.
- Add a heaping spoonful of seasoned avocado.

Steps:
- In a small skillet, heat olive oil over medium heat.
- Add onion, mushrooms and garlic; cook 4 to 6 minutes, or until tender.
- Let cool 10 minutes.
- While cooling, make the ranch sauce by combining the mayonnaise, sour cream and dressing mix.
- Cover and chill.
- In a large bowl, combine ground chuck, onion mixture, blue cheese, salt and pepper until well blended.
- Shape mixture into 4 (5-inch) patties.
- Grill, covered with grill lid, over medium-high heat (350-400 degrees) for 5-6 minutes per side or until desired degree of doneness.
- Serve on toasted buns with Zesty Ranch Sauce and desired toppings.

SMOKY SWEET POTATO BURGERS WITH ROASTED GARLIC CREAM AND AVOCADO
This recipe is slightly different than the other sweet potato burger with roasted garlic recipe found on this site. This particular recipe comes from a blog called How sweet it is.

- To roast garlic, see Recipe #6570.
- Pierce potatoes all over with a fork and place on a paper towel, setting in the microwave. Microwave for 5 minutes, then flip and cook for 5 minutes more. Remove, slice in half and let cool until you can scoop out the flesh.
- In a large bowl, coarsely mash beans with a fork. Add in sweet potato and mash together, then add in spices, salt and pepper, minced garlic, egg, panko and flour. Mix together until combined, then place bowl in the fridge for 15-20 minutes. This helps form them into patties, but as a warning they are still somewhat messy.
- While mixture is chilling, combine yogurt/sour cream with 2 bulbs (squeezed out) of roasted garlic cloves, maple syrup and a sprinkle of salt and pepper in a blender or food processor. Process until smooth then set aside until ready to use.
- Heat a large skillet over medium heat and add 2 tablespoons olive oil. Remove mixture from fridge and form into 4 equal patties, then place in the skillet once hot. Since the mixture can be wet and messy, do not move until they are fully cooked and golden on one side! This takes about 5-6 minutes. Then, add more oil if needed (this really helps cook them) and flip burgers very gently. Cook for another 5-6 minutes. Toast buns if desired.
- Assemble by topping burgers with roasted garlic cream and avocado!
- The use of caramelized red onion would also makes a delicious addition.

BACON & CHEDDAR CHIPOTLE BURGERS
I had ground beef thawed, a 1/2 used can of chipotle in adobo and didn't know what to make. I honestly didn't even think about using the chipotles until I came across a recipe here using them. I didn't really follow that recipe much though :-) I looked at around 20 burger recipes trying to decide what to do. As I started looking, I started writing a list of the items from each recipe that sounded good. Then I put them together and made this. I found that my Kaiser rolls had molded and had to do a "quick bread change" and I think it came out better for it. The handsome man (DB) liked it so much he asked me to write it down immediately, then he had me read it back to him to make sure I didn't forget anything LOL.

Steps:
- Mix all ingredients for meat together in a medium sized bowl. Allow to sit while preparing other items.
- Mix all ingredients for dressing. Place into refrigerator until ready to use.
- Slice tomatoes, onions & mushrooms.
- Melt butter under medium heat, add olive oil & syrah, saute mushrooms until cooked & slightly browned. Set aside.
- Cook bacon. I prefer to fry it but use whatever method you prefer. Set aside.
- Toast sour dough bread.
- Form meat into two large patties the same shape as your bread.
- Place patties on pre-heated grill & grill until moderately charred on the outside and medium or medium rare on the inside.
- When patties are almost done place cheese on patties. Cook until melted.
- Spread dressing on bread, to the thickness you prefer.
- Place patty on bread along with all toppings (mushrooms, bacon, tomatoes, & onions.

- Preheat oven to 375 degrees Fahrenheit.
- Pierce sweet potatoes all over with a fork and place in the oven .
- Bake potatoes 45 minutes.
- Peel the skin away from the sweet potatoes and mash in a medium size bowl.
- Add the cooked quinoa, egg, whole wheat flour, chipotle pepper, lime juice, cilantro, cumin, smoked paprika, salt and pepper.
- Mix to combine and then fold in the white cheddar cheese.
- Place bowl in refrigerator for 15 to 20 minutes. This helps form them into patties.
- While mixture is chilling make the avocado ranch.
- Combine avocado, yogurt, parsley, dill, paprika, onion powder, minced garlic, vinegar, salt and pepper in a food processor and blend until creamy, scraping down the sides occasionally when needed.
- Taste and adjust seasonings if desired.
- Heat a large skillet over medium heat and add 2 tablespoons olive oil. Remove mixture from refrigerator and form into 4 equal patties.
- Place in the skillet once hot.
- Cook for 5 to 6 minutes.
- If needed add more oil and flip the burgers very gently.
- Cook for another 5 to 6 minutes.

- Preheat oven to 375. Chop off the top portion of the garlic head to reveal cloves. Peel any excess paper/skin off from the bulb of garlic. Pour about a teaspoon of olive oil on top the garlic cloves and cover with foil and roast in a baking dish for 45 minutes, or until golden brown. Pierce potatoes (I used 2 large) all over with a fork and place in the oven with the garlic. Roast about the same amount of time as the garlic or until the sweet potatoes are soft. When garlic and potatoes are done remove from the oven and let cool 5 minutes.
- To remove the garlic squeeze from the bottom of the garlic head to remove carmelized cloves. Mash and set aside. Peel the skin away from the sweet potatoes and mash in a medium size bowl. Add the garlic, cooked quinoa, egg, flour, chipotle peppers, adobo sauce, lime juice, cilantro, smoked paprika, salt and pepper. Mix to combine and then fold in the cheddar cheese. Place bowl in the fridge for 15-20 minutes. This helps form them into patties, but making them will still be messy!
- While mixture is chilling make the avocado ranch. Combine all ingredients in a food processor and blend until creamy, scraping down the sides occasionally when needed. Taste and season additionally if desired. The avocado ranch can be stored in a seal-tight container for 1-2 days.
- Heat a large skillet over medium heat and add 2 tablespoons olive oil. Remove mixture from fridge and form into 4 equal patties, then place in the skillet once hot. Cook for 5-6 minutes. The if needed add more oil and flip the burgers very gently (be gentle, they crumble easily when hot). Cook for another 5-6 minutes. Toast buns if desired.

- Wash the sweet potato well and then poke it several times with a fork so that steam can escape while it cooks.
- To cook it in the microwave: wrap it loosely with a paper towel, set it on a microwave safe plate, and microwave on high for five minutes. Carefully squeeze the potato to make sure it is soft all the way through. If it is not, microwave longer, in one minute increments, until it is soft all the way through (mine took 8 minutes).
