Grilled Potatoes or Roasted Potatoes on the Grill image

My favorite way to have potatoes. It works the best to do the first step (microwaving the potatoes) earlier in the day.

4 large red potatoes, cooked and cubed
1/2 sweet onion, cut into large pieces
2 -4 tablespoons olive oil
seasoning salt

Steps:

  • Cook potatoes in microwave until tender but firm (about 3-4 minutes).
  • Cool (at least an hour works best) and cube.
  • Microwave onion pieces for about 1-2 minutes so they are slightly soft.
  • Mix with cubed potatoes.
  • Coat thoroughly (but lightly) with olive oil and as much seasoning salt as you like.
  • Place mixture on grill, I recommend using a vegetable/seafood grate, over hot coals. Cover to prevent flair-ups due to the oil.
  • Cook approximately 20 minutes, until golden, turning about every 5 minutes.
  • Serve with sour cream and/or ketchup.
  • This method can be used for squash, broccoli, carrots etc.
  • You can also use garlic salt or other spices like oregano in place of, or in addition to, the seasoning salt.

When it is hot outside, who wants to heat up the oven and the house. These are great to go along side with any meat or fish dish. I clipped this recipe out of a Taste of Home Magazine. Updated 7/25/11, I now have made the recipe and the whole family loved the potatoes this way. I also added onion, but the recipe doesn't call for it. To really make it easy, I used "Simply Potatoes" already peeled and sliced potatoes, and used an 8"x8" foil pan; so quick and simple, yet so flavorful.

6 medium baking potatoes, sliced
1 teaspoon garlic powder
1 teaspoon seasoning salt (to taste)
1/2 teaspoon paprika
1/4 cup parmesan cheese, grated
6 tablespoons butter

Steps:

  • On half of a 24-inch piece of heavy-duty aluminum foil, arrange the potato slices in overlapping rows.
  • Combine garlic powder, seasoned salt, paprika and Parmesan cheese; sprinkle over the potatoes.
  • Dot with butter.
  • Seal foil over potatoes.
  • Grill over medium heat for 30 minutes or until tender, turning once.
  • Note: I cook it off the direct heat so I don't burn them, and I cook them for about 45 to 60 minutes.

Steps:

  • Preheat grill to medium-high heat.
  • Add the potatoes to a large pot and fill with enough cold water to cover. Bring to a boil and add salt. Cook the potatoes until just tender. Drain well.
  • Add the cooked potatoes to a large bowl and season with salt and pepper. Divide the potatoes between sheets of tin foil and wrap well. Place on grill and cook until the potatoes are very tender, about 10 minutes.

Steps:

  • Use an 8 inch round cake pan and spray it with pam.
  • Thinly slice the potatoes and layer them in single layers.
  • Top each layer with salt, pepper, garlic powder, onion flakes and dots of margarine.
  • Cover the pan with foil and place on the grill, cooking 20 to 30 minutes on a medium setting.
  • You want the potatoes to get crispy on the bottom without getting burned.
  • (You may have to experiment a little.) These are great with any kind of meat you prepare on the grill!

8 slices bacon, cut into 1-inch pieces
3 russet potatoes, thinly sliced
Kosher salt and freshly ground black pepper
8 ounces Cheddar, grated
2 tablespoons sour cream
3 scallions, sliced

Steps:

  • Prepare a grill for direct and indirect heat: For gas grills (with 3 or more burners), turn all the burners to medium-high heat; after about 15 minutes, turn off one of the side burners and turn the remaining burners down to medium. For charcoal grills, bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. Set up a drip pan on the other side to avoid flare-ups. (Be sure to consult the grill manufacturer's guide for best results.)
  • Heat a 10-inch cast-iron skillet on direct heat and add the bacon; cook, stirring often, until crispy, about 5 minutes. Remove the bacon with a slotted spoon to a paper-towel lined plate; set aside.
  • Add the potatoes and sprinkle with salt and pepper. Stir to coat with the bacon fat, then move to indirect heat and cover the grill. Cook, uncovering the grill and stirring every 5 minutes, until the potatoes are tender, about 20 minutes.
  • Sprinkle with the Cheddar and move back to direct heat. Cook, uncovered, until the potato bottoms are golden and the cheese is melted, about 10 minutes, depending on the heat of your grill. 3 to 4 large russet potatoes, cut lengthwise into 1/4- to 1/2-inch oval slices
Kosher salt and freshly ground black pepper
Garlic Oil, recipe follows
4 cloves garlic
3/4 teaspoon kosher salt
1 cup extra-virgin olive oil
2 tablespoons finely diced fresh chives
2 tablespoon chopped fresh parsley
Juice of 1/2 lemon

Steps:

  • Heat grill to medium heat and oil the grates with cooking spray.
  • Add the sliced potatoes to a rimmed tray or baking dish. Sprinkle with salt and pepper on both sides. Pour 1/2 cup Garlic Oil over the potatoes and toss gently to coat. Add the potatoes to the hot grill, then brush with the remaining oil mixture. Grill, flipping the potatoes once, until golden brown, about 5 minutes per side.
  • Mash together the garlic and 1/2 teaspoon salt with a knife or bench scraper on a cutting board until it is a paste. Add the garlic to a small saucepan with the oil, chives, parsley, lemon juice and remaining 1/4 teaspoon salt. Cook over medium-low heat until the ingredients have combined, 3 to 4 minutes. Use as a marinade for potatoes, brush on rolls before toasting or brush on proteins for extra flavor.

I'm sure you are familiar with Russet potatoes, baby red potatoes...what they look like, how to cook with them. But don't pass these guys up in the produce department. I love that you don't have to peel them because their skin is really thin (and also gives great texture to mashed potatoes, like these here!) Once cooked, they are creamy, smooth and have a buttery texture. As you'll see below, they have a creamy golden colored skin. They are great for pretty mush every cooking type (roasting, mashing, baking, and grilling)...so that's why I decided to grill and mash them. :) Here's how it goes...

2 tablespoons olive oil
1 teaspoon johnny's sea salt seasoning
1/2 cup milk or 1/2 cup sour cream

Steps:

  • Toss the quartered potatoes with the seasoning salt and olive oil.
