GRILLED POTATO BUNDLES

Number Of Ingredients 7

6 russet potatoes, scrubbed clean and diced (not peeled)
1/2 yellow onion, diced
1 1/2 sticks (12 tablespoons) butter
1/2 cup heavy cream
Paprika, to taste
Kosher salt and freshly ground black pepper
2 tablespoons minced fresh parsley

Steps:

  • Preheat a grill to medium-high heat.
  • Pile the potatoes and onions evenly on 6 squares of foil. Add 2 tablespoons butter to each and splash on some cream. Sprinkle on some paprika, salt and black pepper, then finish with a sprinkle of minced parsley on top. Fold the foil pieces to wrap into bundles.
  • Place the potato bundles on the hottest spot on the grill for 30 minutes. Serve the bundles right on the dinner plates.

Foil packets are a quick and easy way to prepare potatoes for the grill, oven or even the campfire!

3 lbs potatoes (cut ¼" slices)
1 small onion (thinly)
3 tablespoons butter
salt & pepper (to taste)
mushrooms
real bacon bits
cheese

Steps:

  • Place foil packets on the counter and spray with cooking spray.
  • Wash and slice potatoes (and onions/mushrooms if using).
  • Place potato slices (approx 1 potato per packet) and any optional toppings on each foil piece. Top with a generous pat of butter and salt/pepper to taste. Fold each packet closed.
  • Grill over medium heat for 30 minutes or until soft.

4 large shiitake mushrooms
2 large portobello mushroom, stems removed
1 cup olive oil, divided
Salt and freshly ground pepper
8 large red potatoes, cut into 1-inch cubes, cooked
1 large red onion, finely sliced
2 red peppers, julienned
1/2 cup white wine vinegar
2 tablespoons Dijon mustard
2 cloves garlic, finely chopped
1 tablespoon finely chopped fresh thyme
1/4 cup coarsely chopped fresh flat leaf parsley

Steps:

  • Preheat grill. Brush the mushrooms with 1/4 cup of the olive oil and season with salt and pepper to taste. Grill on both sides until golden brown and cooked through, about 10 minutes. Remove the mushrooms and slice thinly. Place the potatoes in a large bowl and add the mushrooms, onions and red pepper. Whisk together the vinegar, mustard and garlic in a medium bowl until combined. Slowly add the remaining 3/4 cup of olive oil and season with salt and pepper. Pour the vinaigrette over the potato mixture and mix gently to combine. Add the thyme and parsley and season with salt and pepper to taste. Serve at room temperature.

Grilled Tilapia Packets With Mushrooms, Zucchini and Potatoes image

aluminum foil
1 tablespoon pure olive oil
8 petite potatoes (yellow, thinly sliced)
1 zucchini, sliced
8 cremini mushrooms, sliced
4 tilapia fillets, about 4 oz each
1/2 cup pesto sauce
4 teaspoons grated parmesan cheese

Steps:

  • Cut four 8x14 pieces of foil.
  • .Preheat barbecue to medium.
  • Brush foil with oil, fold in half (to crease), then open. On one half, layer potatoes, zucchini and mushrooms. Place Tilapia on top of vegetables. Spoon pesto over fish; sprinkle with cheese.
  • Fold foil over to cover and crimp edges to seal packages. Grill packages, with lid closed, until fish is firm and opaque and vegetables are tender, 10-15 minutes. Season to taste with salt and pepper.
