GRILLED PORK WITH MANGO SALSA



Grilled Pork with Mango Salsa image

These grilled pork chopped are topped with a delicious mango salsa for the perfect barbecue experience.

6 Campari tomatoes, seeded
2 ripe mangoes, diced
4 small yellow and red sweet peppers, chopped
½ cup chopped red onion
¼ cup packed fresh cilantro leaves, chopped
2 small jalapeño peppers, seeded and minced
1 large lime, juiced (about ¼ cup)
⅛ teaspoon sea salt, to taste
2 garlic cloves, minced
1/2 tsp. ground cumin
splash balsamic vinegar
Juice from one large lime.
1 tbsp. extra virgin olive oil
1 tbsp. Worcestershire sauce
1 tbsp finely diced red onion
1 clove of garlic, minced
a few sprigs of fresh cilantro, chopped
1/2 tsp. sea salt
small bunch of fresh oregano, diced
1/2 tsp. ground cumin
1 1/2 pounds of bone in pork chops

Steps:

  • Mix all of the marinade ingredients together in a shallow dish.
  • Coat and place pork chops in marinade, and let sit, covered, in the fridge for at least 20 minutes - the longer the better. (you can even marinate it in the morning and then grill at night if you wish.)
  • Rotate the pork chops occasionally.
  • Remove the pork chops and grill them, either outdoors on a BBQ or inside on a grill pan on the stove.
  • Grill to an internal temperature of 145º. Mine took about 6 minutes per side.
  • To make the salsa. First seed the Campari tomatoes and chop them.
  • Then peel the mango and cut into small pieces. Combine these with the rest of the ingredients in a medium sized bowl.
  • Mix well and serve over the grilled pork chops.
  • Garnish with fresh cilantro

2 teaspoons dried oregano
2 teaspoons dried thyme

1 boneless whole pork loin roast (2-1/2 pounds)
SALSA:
1 medium mango, peeled and chopped
1/2 cup chopped seeded plum tomatoes
1/2 cup chopped red onion
1/2 cup chopped peeled cucumber
1/4 cup lime juice
2 tablespoons minced fresh cilantro
1 tablespoon olive oil
1 tablespoon dry red wine or cider vinegar
1 teaspoon ground cumin

Steps:

  • In a small bowl, combine the first nine ingredients. Rub over the roast. Place in a shallow baking dish; cover and refrigerate for 3 hours or overnight. In a large bowl, combine the salsa ingredients; cover and refrigerate until serving., Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Prepare grill for indirect heat using a drip pan. If baking the roast, place on a rack in a shallow roasting pan. , Place pork over drip pan and grill, covered, over indirect medium heat for 1-1/4 hours or bake, uncovered, at 350° for 1-1/2 hours or until a thermometer reads 160°. , Cover loosely with foil and let stand for 15 minutes before slicing. Serve with salsa.

1 tsp smoked paprika
1/2 tsp packed brown sugar
1 tsp salt
1/4 tsp cayenne pepper
1 ripe mango, diced
1 cup cherry or grape tomatoes, chopped
1 small jalapeno, diced
1/2 small onion, diced
1/2 cup fresh cilantro, chopped
1 teaspoon lime juice, or more to taste
1 teaspoon olive oil
1/4 tsp salt
1/4 tsp freshly ground black pepper

Steps:

  • Pat the pork chops dry on both sides with paper towels. Combine all of the spices for the dry rub in a small bowl, and coat the meat with the mixture on both sides. Place in a shallow baking dish without overlapping and set aside in the refrigerator or on the countertop for at least 20 minutes.
  • Preheat the grill, and oil the grates if necessary, to prevent sticking.
  • Combine all of the salsa ingredients in a medium-sized bowl, and adjust seasoning to taste. Keep in the refrigerator until ready to serve.

3 pounds boneless pork loin
3 tablespoons dry Jamaican jerk seasoning
3 tablespoons extra-virgin olive oil
2 bananas, peeled and sliced
2 mangos, peeled and diced
1 jalapeno, seeds removed, finely chopped
1/2 red onion, finely diced
2 tablespoons lime juice
1 cup chopped fresh cilantro leaves

Steps:

  • Preheat oven to 350 degrees F.
  • Pat the pork dry with a paper towel and rub 3 tablespoons of jerk seasoning on the meat. Let marinate for 45 minutes at room temperature, covered.
  • After 45 minutes have passed, rub the meat with the olive oil, put on a baking sheet, and bake for 45 minutes. Let rest for 10 minutes.
  • On another baking sheet, roast the bananas until they begin to caramelize, about 25 minutes. Set aside and let cool.

1/3 cup BULL'S-EYE Smoky Mesquite Barbecue Sauce, divided
1 mango, peeled
1 pork tenderloin (1 lb.), trimmed
1 tsp. oil
2 Tbsp. finely chopped red onions
2 Tbsp. each zest and juice from 2 large limes, divided
2-2/3 cups hot cooked long-grain brown rice

Steps:

  • Heat greased grill to medium heat.
  • Reserve 2 Tbsp. barbecue sauce for later use. Cut off 2 fleshy sides of mango; discard pit. Place fruit on grill. Add meat; brush with oil. Grill 2 to 3 min. or until mangos are grill marked and slightly softened; remove mangos from grill.
  • Grill meat additional 18 to 22 min. or until done (145ºF), turning occasionally and brushing with remaining barbecue sauce for the last 5 min. Transfer meat to cutting board. Tent with foil; let stand 10 min. Meanwhile, finely chop mangos; place in medium bowl. Stir in reserved barbecue sauce, onions, and 1 Tbsp. each lime zest and juice.
  • Combine rice with remaining lime zest and juice. Slice meat; serve with rice mixture and mango salsa.

2 tablespoons minced red onion
2 tablespoons fresh lime juice

Salt and freshly ground black pepper
2 cups reduced-sodium chicken broth
1 (10-ounce) box couscous
12 ounces cooked sliced pork tenderloin rounds (1/2-inch thick rounds)
1 tablespoon hot chili oil

Steps:

  • In a medium bowl, combine mango, avocado, onion, lime juice, cilantro, jalapeno, and cumin. Mix well. Season, to taste, with salt and black pepper.
  • In a saucepan, bring chicken broth to a boil. Add couscous, stir and cover. Remove from heat. After 5 minutes remove cover, fluff with a fork.
  • Meanwhile, set a stove-top grill pan over medium-high heat to preheat. Brush both sides of pork slices with hot chili oil and season with salt and black pepper. Add slices to hot pan and cook 1 to 2 minutes per side, until golden brown.
  • Serve pork over couscous with salsa spooned on top.
