4 Pork cutlets (2 cm thick)
1 garlic clove
3 Tbsps lemon juice
1 tsp honey
4 Tbsps olive oil
freshly ground peppers
1 garlic clove
1 lemon
1 small Iceberg lettuce
150 milliliters Sour cream
1 tsp sugar
2 Tbsps lemon juice
salt
freshly ground peppers
1 bunch Cress

Steps:

  • Rinse the pork and pat dry. For the marinade, peel and squeeze the garlic. Stir in the lemon juice, honey, oil and pepper to taste. Coat the meat, cover and marinate about 1 hour in the refrigerator.
  • For the salad, divide garlic bulb into individual cloves, place them in an aluminum grill pan with a little water and cook slowly on the grill for about 10 minutes. Cut the lemon into slices and add to the garlic cloves during the last 1-2 minutes of cooking.
  • Remove the cutlets from the marinade and grill on the hot grill on each side for 4-5 minutes. Season with salt and pepper.
  • Rinse lettuce, trim and cut into bite-sized pieces. Arrange on plates. Mix sour cream with the sugar and the lemon juice and season with salt and pepper. Drizzle over the salad and sprinkle with chopped cress.
  • Place the cutlets on the plates with the garlic and the lemon and serve.

1/2 cup maple syrup
1/2 cup chicken stock
1 1/2 teaspoons dried chipotle powder
1 teaspoon fresh thyme, chopped
2 teaspoons cornstarch
1 tablespoon water, cold
1 1/2 lbs pork cutlets, cut 3/4 inch thick
salt
pepper
1 tablespoon canola oil

Steps:

  • Preheat your grill. In a small saucepan, bring the first four glaze ingredients to a boil.
  • In a small jar, mix together the cornstarch and water. Put the lid on and shake vigorously (it should have the consistency of whole milk).
  • Pour the cornstarch slurry into the boiling glaze mixture and reduce to a simmer. Cook about 2 minutes until it becomes clear and thickens.
  • Season the cutlets with salt and pepper and brush with a little oil.
  • Grill cutlets 3 to 5 minutes per side, brushing glaze on while cooking.

1/4 cup honey
2 tablespoons vegetable oil
1 tablespoon apple cider vinegar
1 teaspoon ground cumin
1/2 teaspoon red pepper flakes
Eight 1/2-inch bone-in pork chops (about 3 ounces each)
Salt and freshly ground black pepper

Steps:

  • Begin by making the marinade. In a small bowl, whisk together the honey, oil, vinegar, cumin and red pepper flakes. Easy, right?
  • Sprinkle both sides of the pork chops with salt and pepper and place in a re-sealable plastic bag with the marinade. Let rest on the counter for 1 hour. That's easy.
  • Heat a grill or grill pan over medium heat. Remove the pork chops from the bag and lightly sprinkle with salt and pepper. Place on the grill and cook until the pork chop releases from the grill, about 4 minutes. Flip and cook on the other side for another 3 minutes. If using a grill pan, be sure to do in batches so you don't steam the chops. And don't worry if you have neither; you can do this in a pan. See, easy!

2 pork tenderloins (about 1 pounds total)
2 cups water
1 1/2 tablespoons salt
1 1/2 tablespoons pure maple syrup
1 tablespoon chili powder

Steps:

  • In a bowl large enough to hold pork covered with water stir together salt and water until salt is dissolved and add pork, making sure it is completely covered by brine. Marinate pork, covered and chilled, 1 day.
  • Prepare grill.
  • In a small bowl stir together syrup and chili powder. Discard brine and diagonally cut pork into 3/4-inch-thick pieces. Put pork between sheets of plastic wrap and flatten with a rolling pin to make 1/4-inch-thick cutlets. Pat pork dry and season with salt.
  • Grill pork on a lightly oiled rack set 5 to 6 inches over glowing coals until just cooked through, 2 to 3 minutes on each side. Brush pork with glaze and grill 15 seconds more on each side. (Alternatively, pork may be grilled in a hot well-seasoned ridged grill pan over moderately high heat.)

1/2 cup Worcestershire sauce
1/4 cup minced fresh parsley
1/4 cup balsamic vinegar
1/4 cup soy sauce

4 boneless pork loin chops (8 ounces each and 1 inch thick)

Steps:

  • In a large bowl, combine the first eight ingredients. Add pork chops; turn to coat. Refrigerate for 8 hours or overnight., Drain and discard marinade. 4 thick cut pork loin chops, trimmed of excess fat
1/4 cup extra virgin olive oil
1 tablespoon balsamic vinegar
2 tablespoons white wine
1 teaspoon lemon juice
1 1/2 teaspoons minced garlic
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon dried rosemary
1 small bay leaf, crumbled
1/4 teaspoon sugar
1/4 teaspoon black pepper

Steps:

  • Whisk marinade ingredients together and pour over chops.
  • Marinate 1 hour, turning occasionally.
  • Pre-heat and oil grill.
  • Sear chops over medium-hot direct heat, rotating 1/4 turn after a couple minutes to score.
  • Turn to seal other side.
  • Move to indirect heat, and turn occasionally.
  • Cook until just cooked through, 10 to 15 minutes.
  • Let rest a couple of minutes before serving.

1 pound watermelon (about 1 small), peeled and cut into small wedges (3 cups)
1/2 large cucumber halved lengthwise and sliced crosswise into half-moons
1 jalapeno chile, halved lengthwise and very thinly sliced on the bias (seeded if desired)
1/2 cup torn or small basil leaves
2 teaspoons nam pla (Asian fish sauce)
3/4 teaspoon whole coriander seeds, toasted and ground
Juice of 1 lime
8 boneless skinless pork cutlets (2 1/2 ounces each), pounded about 1/8 inch thick
1 teaspoon extra-virgin olive oil
Coarse salt

Steps:

  • Heat grill to high. Toss together watermelon, cucumber, jalapeno, basil, fish sauce, coriander, and lime juice in a bowl.
