AUTHENTIC BAKED FETA AND TOMATOES
For this delicious traditional Greek dish, feta and tomatoes along with a hot pepper are roasted until soft and melty.

Steps:
- Preheat the oven at 350 F (180 C)
- In medium sized baking dish spread the tomatoes.
- Drizzle 2 tablespoons over the tomatoes and toss.
- Place the feta in the center of the baking dish, sprinkle with oregano, black pepper and place the hot pepper on top of the feta. Drizzle with 1 tablespoon olive oil.
- Bake for 35 minutes. If adding pasta, start boiling it now and set aside.
- Remove from oven and smash the feta -tomato a bit before serving.
- Sprinkle with chopped mint before serving
GRILLED SHRIMP WITH TOMATO AND FETA
Steps:
- For the shrimp: Prepare a charcoal grill for high direct heat. Skewer a few shrimp onto 2 skewers so the shrimp lay flat. Do the same with the tomatoes. Brush the skewers with canola oil and sprinkle with salt and pepper. Grill the tomatoes first, until slightly charred on both sides and soft, about 2 minutes each side. Reserve the shrimp skewers to the side.
- Heat a few tablespoons of olive oil in a large saute pan over medium heat. Cook the garlic and shallots until soft, about 2 minutes. Add the grilled tomatoes, wine, paprika, cinnamon, red pepper flakes and sprinkle with salt and pepper. Bring to a simmer. Crush the tomatoes with a spoon. Cook until the sauce thickens. Taste; add some honey if the tomatoes aren't sweet. Sprinkle with salt and pepper. Stir in the mint, oregano and lemon zest.
- Grill the shrimp until just cooked through and slightly charred, about 1 1/2 minutes each side. Remove the shrimp from the skewers and add to the tomato mixture. Toss the shrimp just to coat and transfer to a platter. Top the shrimp with the feta and mint sprigs and drizzle with olive oil. Serve with the pitas to dip in tomato juices.

- Combine 3 T lemon juice, soy sauce, garlic and 1 tsp of the oregano in a gallon Ziploc bag. Add the chicken, turn to coat.
- Allow the chicken breast to marinate for 30 minutes a room temperature or overnight in the refrigerator.
- Combine the tomatoes and feta cheese in a small glass dish. Add the remaining 2 tsp lemon juice, olive oil and the remaining 1 tsp oregano.
- Stir to combine and allow to sit at room temperature for 30 minutes.
- For the yogurt sauce, whisk together the yogurt, garlic, walnuts and olive oil. Cover and refrigerate until ready to use.
- Preheat a grill pan to medium heat and coat with cooking spray.
- Grill the chicken breasts and onion rings for 8-10 minutes, turning frequently. (Grill until chicken is no longer pink in the thickest portion of the breast.).
- Remove chicken and onion rings from pan and set aside to cool. Slice the chicken into thin pieces.
- To assemble the sandwiches, cut each pita in half and split.
- Place several slices of grilled chicken, 3-4 slivers of onion, 1 T of the tomato-feta mixture, lettuce, olives and 1-2 slices of bacon to each pita.
- Top with yogurt sauce and a wad of alfalfa sprouts. Add salt and pepper, to taste.

- Brush both sides of each bread slice with some oil. Cut enough 1/4-inch-thick slices from feta to cover 2 slices of bread and cut tomato into 1/4-inch-thick slices. Assemble 2 sandwiches with feta and tomato slices, seasoning filling with oregano and LOTS of pepper.

- Preheat the oven to 375 degrees F. Arrange a top rack in the oven 4-6 inches from the broiler.
- Place the feta in a small baking dish. The cheese should have some space around it for the olives and tomatoes.
- In a medium bowl, combine the olives, tomatoes and garlic. Then spoon them around the feta.
- Whisk together the olive oil, oregano, red pepper flakes, salt and pepper in a small bowl. Pour the olive oil over everything in the baking dish.
- Bake the feta for 15-18 minutes, until it just starts browning at the edges. Turn on the broiler, and brown the top of the cheese, about 2-3 minutes.

- Whisk together lemon juice, oregano, garlic, sugar, salt, and pepper in a large bowl, then add oil and whisk dressing until combined well.

- Marinate the chicken: Slice the chicken breast in half horizontally. This will help the chicken absorb more flavor from the marinade and also cook faster at camp. Mix all of the marinade ingredients in an airtight container or bag and add the chicken. Store in the cooler on top of the ice.*
- Make the tzatziki: Use a cheese grater or food processor to shred the cucumber. Put the shredded cucumber in a clean kitchen cloth and squeeze the moisture out. This step is important. Really squeeze it!
- Mix the shredded cucumber in with the rest of the tzatziki ingredients in an airtight container the day before your trip. Store in the cooler.
- Cook the chicken on a grill grate over a small campfire. Cook times will vary depending on how hot your fire is, but I cook mine for about 5 minutes on each side. The safe internal temperature for cooked chicken is 165°F.
- Prepare your toppings: chop the tomatoes, cucumber, and olives into bite-sized pieces.
- Once the chicken is done, slice it into strips.
- Heat the pitas on the grill for a minute on each side just to warm them up, and then assemble. Layer the grilled chicken, tomatoes, cucumbers, olives, feta, and the tzatziki sauce onto the pita. Enjoy!
