6 slices packaged ready-to-serve cooked bacon, crisped in microwave, Oscar Mayer®
12 large jalapeño chile peppers
1 cup Mexican shredded cheese blend, Kraft®

Steps:

  • 1. Cut a slit lengthwise down one side of each pepper to create a pocket, being careful to not cut through jalapeño. Leave stem intact and remove seeds and veins. Fill each pepper with cheese. Cut bacon in half crosswise. Wrap each pepper with half-piece of bacon. Secure with a toothpick.
  • 2. Set up grill for direct cooking over medium-high heat. When ready to start cooking, brush grate with oil. Place peppers on hot oiled grill and cook for 6 to 10 minutes or until heated through, turning halfway through cooking. Remove from grill. Serve hot.

12 large jalapeno peppers
1 cup Mexican blend shredded cheese
6 thick slices bacon

Steps:

  • CAUTION: Jalapenos can be very hot. Use caution and wear rubber gloves if you have skin sensitivity. Keep hands away from face and eyes. Wash hands thoroughly with warm water and soap when finished handling peppers.
  • Slice peppers from stem to tip on 1 side. Carefully squeeze ends of pepper (like a change purse) and scoop out seeds and veins with a small spoon. Stuff each pepper with shredded cheese. Cut bacon slices in half. Wrap each pepper with a piece of bacon and secure with a toothpick.
  • Preheat grill. Grill peppers 3 to 5 minutes on each side or until bacon is cooked, but not crisp.
  • Remove from grill and serve while hot.

These are delicious as appetizers or include them on your beef or chicken kabobs. The smokiness of the bacon and the smokiness of your grill's charcoal is a wonderful combination. The cheese chills out the heat of the jalapeños leaving them just slightly hot. Dip them in Ranch dressing to chill the heat even more. Cream cheese is a perfect substitute for neufchatel cheese.

12 fresh jalapenos
1 (8 ounce) package neufchatel cheese or 1 (8 ounce) package cream cheese
12 slices bacon

Steps:

  • Cut peppers in half.
  • Use a spoon to remove the seeds and white membranes.
  • Fill each half with the cheese.
  • Cut the bacon slices in half so that you have 24 shorter slices.
  • Wrap each cheese stuffed jalapeño with a bacon slice; secure with toothpicks if you need to or slide them on skewers.
  • Grill over hot coals until the bacon is crispy and browned, turning every few minutes (stay with them and watch for flare ups from the dripping bacon fat or they will burn); grill for about 15 or 20 minutes.
  • The bacon should be crisp, the jalapeño crisp tender and the cheese should be hot.

Steps:

  • Take several bell peppers, cleaned of the stems and seeds. Cut into strips lengthwise. These can be four to six depending on the size of the peppers and your preference.
  • Season LIGHTLY with salt and freshly ground black pepper.
  • Brush both sides of the strips with good olive oil.
  • Place skin side down on hot grill, until skin blisters and peppers soften (3-8 minutes depending on grill). You can let the skin brown a bit if desired.
  • Turn peppers and grill until inner side is done (about half the time of the skin side -- 2-4 minutes).
  • Try this with different color peppers. Maybe add a few green onions.
  • Try this with Anaheim peppers -- Very good!
  • Try adding sliced zucchini, too.

16 jalapeno peppers, halved lengthwise and seeded

  • Prepare grill to medium high heat.

16 miniature sweet peppers (They are about the size of a jalapeno, usually red and yellow, I find them at Costco)
1 cup shredded Mexican blend cheese
1 tomatoes, cored, seeded, and diced
1/4 cup red onion, diced
1/4 cup fresh cilantro, chopped
1/2 teaspoon sea salt

Steps:

  • Spoon sour cream into a 1-quart zip-loc freezer bag; seal and chill.
  • Preheat grill to medium-high heat.
  • Rinse peppers; cut in half length-wise. Remove seeds and veins.
  • Mix together in small bowl cheese, tomato, onion, cilantro and salt.
  • Fill pepper halves evenly with cheese mixture; pressing it into hollows.
  • Lay filled peppers, cheese side up on grill (I use a grill pan for ease, but it's not necessary).
  • Cook until blistered and slightly charred on the bottoms, approximately 3-5 minutes.
  • With a wide spatula, move peppers to serving platter.
  • Snip 3/4-inch corner off the sour cream bag and pipe evenly over the hot peppers.

This hearty sandwich comes together quickly on a small portable grill, making it perfect for a tailgate or picnic. Make the balsamic vinaigrette at home and take it along in a small jar. You can purchase the Italian sausage ring (shaped like a spiral) at an Italian butcher. If you can't get the cheese and parsley flavor, use any flavor you like. If you'd like to make this on a full-size grill, you can cook everything at once and remove the ingredients as they finish cooking.

1/3 cup extra-virgin olive oil, plus more for brushing
3 tablespoons balsamic vinegar
1/2 teaspoon dried oregano
2 cloves garlic, crushed and peeled
Kosher salt and freshly ground black pepper
1 red bell pepper, top and bottom removed, cut into 4 planks
1 yellow bell pepper, top and bottom removed, cut into 4 planks
1 large sweet onion, peeled and sliced into 1/4-inch-thick rings
One 1 1/2-pound Italian pork sausage ring, preferably cheese and parsley flavor
Four 6-to-8-inch hoagie rolls, split
8 slices provolone (about 6 ounces)

Steps:

  • Combine the olive oil, vinegar, oregano, garlic, 1/2 teaspoon salt and several grinds of pepper in a small jar or other lidded container. Shake to combine. Soak 2 long wooden skewers in water for 15 minutes (alternatively, use metal skewers).
  • Preheat a small grill to medium-high heat and brush with olive oil. Brush the peppers and onions with 2 to 3 tablespoons of the dressing. Stick the skewers through the sausage ring at a perpendicular angle to each other (in an X). Place the sausage ring in the middle of the grill and cook until the underside is charred, 5 to 6 minutes.
  • Flip the sausage ring with tongs and a spatula and arrange the peppers around the ring. Grill the sausage until browned and crispy in places and cooked through, 5 to 6 minutes more. Transfer to a cutting board. Add the onion rings to the empty space on the grill. Cook the peppers and onions until crisp-tender and charred on the edges, about 4 minutes per side (the peppers will come off first, since you put them on first). Transfer the vegetables to a cutting board as they finish cooking.
  • Brush the cut sides of the rolls with olive oil and grill, cut-side down, until toasted, about 1 minute. Flip and lay 2 slices of cheese on the grilled cut sides of each roll and cook until the cheese just begins to melt, moving as needed so they don't burn, 1 to 2 minutes.
  • Remove the skewers from the sausage, cut into serving pieces 4 to 5 inches long and divide evenly among the rolls. Cut the peppers into strips and separate the onions into rings. Pile on top of the sausage. Drizzle the heroes with the remaining dressing and serve immediately.

4 red bell peppers or 4 yellow bell peppers, halved, undamaged stem, seeded and white membrane removed
1 slice whole wheat bread, grilled and cut in dice of 1/4 inch
1/4 cup fresh basil, chopped
4 garlic cloves, finely chopped
2 cups monterey jack pepper cheese or 2 cups Fontina cheese, grated

Steps:

  • Put bell peppers, cut side down, on a greased baking sheet. Grill in a preheated oven of 400 F for about 20 minutes or until they are tender.
  • Flip the bell peppers, distribute the cubes of bread in the holes and cover with half the basil. Sprinkle with garlic and cheese. Keep cooking for about 15 minutes or until peppers are lightly black on the sides and cheese is bubbling. Sprinkle with remaining basil.

1/4 cup milk

10 slices OSCAR MAYER Bacon, cut crosswise in half

Steps:

  • Heat grill to medium-high heat.
  • Cook macaroni in medium saucepan as directed on package, omitting salt; drain. Return macaroni to pan. Add VELVEETA and milk; cook on low heat 5 min. or until VELVEETA is completely melted and mixture is well blended, stirring constantly.
  • Spoon macaroni mixture into pepper halves; wrap with bacon to completely enclose filling, overlapping edges of bacon as needed. Secure with wooden toothpicks. Cover grill grate with foil. Place peppers, cut sides down, on foil.
  • Grill 20 min. or until bacon is crisp and peppers are heated through, turning after 10 min. Remove and discard toothpicks before serving peppers.

1/4 cup sour cream
1 tomatoes, cored, seeded and chopped
180 g shredded monterey jack cheese
1/4 cup chopped onion

Steps:

  • Spoon sour cream into a ziploc bag and chill.
  • Prepare bbq for direct heat cooking.
  • Rinse peppers and cut in half lengthwise through stems. Scoop out seeds and veins.

  • Spoon mixture evenly into pepper halves, pressing it into hollows.
