HONEY ORANGE BBQ CHICKEN

1/2 cup freshly squeezed orange juice
1/4 cup olive oil
1/4 cup hot sauce
1/4 cup Dijon mustard
1 tablespoon grated orange zest
1 (4 pound chicken) cut into 10 pieces, patted dry with paper towels
4 tablespoons (1/2 stick) butter
1/4 cup honey
1/4 cup freshly squeezed orange Juice
1/4 cup Neely's BBQ sauce
1 tablespoon grated orange zest
2 tablespoons Dijon mustard
1/4 teaspoon allspice

Steps:

  • Mix the orange juice, olive oil, hot sauce, mustard, and orange zest together in a large bowl. Add the chicken and toss to combine. Cover with plastic wrap and let marinate for at least 1 hour and up to overnight in the refrigerator.
  • Prepare the grill to medium direct heat. Let chicken come to room temperature before grilling.
  • Drain the chicken from the marinade and pat dry. Grill on each side for 5 minutes, then turn the heat to medium-low and cover the lid of the grill. Continue cooking the chicken until it's cooked through, about 25 minutes more.
  • While the chicken is grilling, melt the butter in a small saucepan on the grill. Whisk in the honey, orange juice, BBQ sauce, zest, mustard and allspice. Reserve some of the glaze in a small ramekin for serving.
  • Brush the chicken pieces with glaze, then flip the chicken, glaze side down, and cook for 2 minutes. Brush second side of the chicken with glaze and flip again. Continue cooking for 3 more minutes. Remove the chicken from grill to a platter and serve with reserved glaze.

Hailed by aficionados as the easiest method to grill whole chickens, this up-to-date recipe adds zesty orange to the classic malty tones of beer, for meat that's incredibly juicy and flavorful.

2 whole chickens (about 4 lb each), washed, dried and giblets removed
4 teaspoons olive oil
4 to 6 tablespoons seasoned salt or dry rub of your choice
2 cans (12 oz each) beer
4 cloves garlic
2 oranges, each cut in half and 1 half cut into quarters

Steps:

  • Heat gas or charcoal grill for indirect grilling. Rub chickens with oil. Sprinkle seasoned salt over each chicken and inside cavities.
  • Discard half of beer in each can, leaving remaining half in each can. Place 2 garlic cloves in each can. Place each chicken over top of beer can by holding chicken up and pressing can into cavity. Place 1 quarter of orange in top cavity of each chicken. Insert ovenproof meat thermometer in each chicken so tip of thermometer is in thickest part of inside thigh muscle and does not touch bone.
  • Balance chickens on beer cans; place on grill over indirect medium heat. Cover grill; cook about 1 hour 30 minutes or until thermometers read at least 165°F and legs move easily when lifted or twisted.
  • Place orange halves and remaining quarters, flesh side down, directly on grill; cover and cook 3 to 5 minutes.
  • Remove chickens and oranges from grill; let chickens rest on beer cans 10 to 15 minutes before attempting to remove cans and carve chickens. Before serving, squeeze 2 of the orange halves over tops of chickens; serve others on the side.

2 tablespoons smoked paprika
2 tablespoons salt
2 tablespoons onion powder
1 tablespoon cayenne pepper
1 tablespoon ground cumin
2 teaspoons dried thyme
2 teaspoons dried oregano
2 teaspoons black pepper
2 teaspoons garlic powder
4 pounds chicken, washed and dried
Vegetable oil
Beer Can Chicken Rub
1 (12-ounce) can beer

Steps:

  • For the chicken rub: In a small bowl mix all the ingredients together and use for the grilled chicken. You can store extra rub mixture in an airtight container for up to 6 months.
  • For the chicken: Preheat your grill to medium-high heat.
  • Rub the chicken and its cavity down with the vegetable oil. Season the chicken with rub mixture, remembering to season the cavity. Pour out 1/4 of the beer and sit the chicken on top of the beer can. Place the chicken in the center of the hot grill and cover. Cook the chicken for 1 to 1 1/2 hours, or until an instant-read thermometer registers 165 degrees F. Once cooked, cover loosely with foil and let rest for 10 minutes before carving.

6 Tbsp brown sugar
6 Tbsp BBQ sauce
4 to 6 boneless skinless chicken

Steps:

  • Whisk together orange juice, brown sugar and BBQ sauce.
  • Place chicken in a gallon ziplock bag. Pour marinade over chicken. Seal bag and refrigerate 2 to 4 hours.
  • Remove chicken from marinade. Grill until done, 8 to 10 minutes.

3 12-ounce cans amber or bock beer
1/3 cup kosher salt, plus more for sprinkling
1/3 cup granulated sugar
2 tablespoons hot sauce
4 bay leaves
6 pounds assorted skin-on, bone-in chicken pieces
Juice of 2 large oranges
1/4 cup apple cider vinegar
1/2 small onion, finely chopped
4 cloves garlic, finely chopped
1/3 cup ketchup
1/3 cup packed dark brown sugar
1/3 cup honey
1 tablespoon Worcestershire sauce
1 tablespoon chili powder
Vegetable oil, for the grill

Steps:

  • Brine the chicken: Combine 1 can of beer, the salt, granulated sugar, hot sauce and bay leaves in a very large bowl and whisk until the salt and sugar dissolve. Add the remaining 2 cans of beer, 4 cups water and the chicken. Cover and refrigerate overnight.
  • Make the barbecue sauce: Combine the orange juice, vinegar, onion, garlic, ketchup, brown sugar, honey, Worcestershire sauce and chili powder in a small saucepan. Bring to a boil, then reduce the heat to medium low and simmer, stirring occasionally, until slightly thickened, about 20 minutes. Let cool slightly, then puree in a blender until smooth. (The sauce can be made up to 1 day ahead; cover and refrigerate.)
  • Preheat a grill to medium low and brush the grates with vegetable oil. Remove the chicken from the brine and pat dry with paper towels. Lightly season the chicken with salt, then arrange on the grill, skin-side up. Cover and cook until marked, about 12 minutes per side. Continue cooking, flipping and basting the chicken with the barbecue sauce every 3 to 4 minutes (keep covered in between), until a thermometer inserted into the center of a breast registers 165 degrees F, about 15 more minutes. Transfer to a platter and let rest 5 minutes before serving.

4 skinless, boneless chicken breast halves
¼ cup lemon juice
¼ cup lime juice
3 cups orange juice
¼ cup crushed fresh mint leaves
2 tablespoons honey

3 lbs chicken, cut up
1 (14 ounce) bottle barbecue sauce (we use KP Masterpiece)
1 cup beer

Steps:

  • Preheat oven to 350°F.
  • Melt 1 stick butter or margarine in baking pan (9x13-inches).
  • Add chicken to pan, turning to coat.
  • Bake 30 minutes.
  • While chicken is cooking, melt remaining butter with barbecue sauce and beer in saucepan over med-high heat.
  • Bring sauce to a boil, stirring constantly.
  • Remove from heat.
  • Preheat broiler or prepare barbecue.
  • Coat chicken with sauce.
  • Arrange chicken skin-side down on broiler pan rack or on grill.
  • Cook, turning and basting frequently until chicken is cooked (about 20 minutes in broiler and 30 minutes on grill).
  • Dip chicken in sauce again and place on serving plate.
  • Serve chicken with remaining sauce.
