6 cloves garlic, unpeeled
1 cup extra-virgin olive oil
Kosher salt
1/3 cup balsamic vinegar
1 tablespoon Dijon mustard
4 large portobello mushrooms, wiped of any dirt, washed and quickly dried, if necessary

Steps:

  • Preheat the grill. Preheat the oven to 350 degrees F.
  • In a small bowl, toss the garlic cloves with 2 tablespoons of the olive oil and some salt. Wrap the garlic cloves in tinfoil and place on the tray in the center of the oven. Cook until tender when pierced with the tip of a knife, 20 to 25 minutes.
  • In a medium bowl, whisk together the balsamic with 3/4 cup of the olive oil and the mustard.
  • In a medium bowl, toss the mushrooms in the remaining 2 tablespoons olive oil. Season with salt. Place them, stem-side up, on the hottest part of the grill. Cook for 3 to 4 minutes, you may see liquid starting to emerge from the stem area. Flip to the other side and cook for an additional 3 to 4 minutes. Transfer them to a tray and place in the center of the oven. Cook until they are tender when pierced with the tip of a knife, an additional 12 to 15 minutes. Season them lightly with salt.
  • Remove the garlic from the oven. Squeeze the garlic pulp out from their skins and whisk it vigorously into the dressing. Arrange the mushrooms on a serving platter and top with the dressing. Serve immediately.

450 g mixed fresh mushrooms
3 cloves of garlic sliced thinly
3 sprigs of fresh thyme
2 strips of dried orange peel
2 bay fresh leaves
100 ml dry white wine
400 ml white wine vinegar
6 black peppercorns
2 tsp sea salt
300 ml extra virgin olive oil

Steps:

  • Wipe the mushrooms clean and cut any large ones into smaller pieces
  • Bring the wine, vinegar, garlic, 1 sprig of thyme and salt and pepper to the boil
  • Lower heat and simmer for 10 minutes
  • Blanch the mushrooms in the brine in batches for approximately 1 minute then dry on kitchen paper
  • Pack the mushrooms into sterilised jars and add sprig of thyme, bay leaf and the strip of dried orange peel to each jar
  • Pour in the oil
  • Pop on the lids and let them mature for 1-2 weeks prior to using them

These delicious grilled portobello mushrooms are coated in a tasty marinade of balsamic vinegar, olive oil, lemon juice, and garlic.

2 tablespoons balsamic vinegar
2 tablespoons olive oil
1 tablespoon lemon juice
2 cloves garlic (minced)
1/2 teaspoon Diamond Crystal kosher salt ((or 1/4 teaspoon fine salt))
4 large portobello mushroom caps
2 tablespoons chopped parsley (for garnish)

Steps:

  • In a small bowl, whisk together the balsamic vinegar, olive oil, lemon juice, garlic, and kosher salt.
  • Wipe the mushrooms clean with a damp paper towel. Gently twist off or cut off the stems. Use a spoon to gently scrape out the gills.
  • Using a pastry brush, coat the gill side with about a third of the marinade.
  • Heat a 2-burner griddle, a grill pan, or an outdoor grill on medium heat. Grease the grill well.
  • Place the mushrooms, gill side down, on the grill. Grill until the gill side is browned and tender, 4-5 minutes.*
  • When the gill side is almost ready, brush the tops of the mushrooms with another third of the marinade.
  • Flip the mushrooms so that they're gill side up. Continue grilling them until they are browned and tender, 2-3 more minutes.
  • Transfer the mushrooms to a plate. Brush them with the remaining marinade, sprinkle them with parsley (if using), and serve.

I love stuffed mushrooms made with savory breadcrumbs, parsley, garlic and olive oil. BUT, watching carbs means fewer mushrooms. This recipe is so very satisfying I may never stuff a mushroom again. (My kids will insist I do though.)

1 lb large cap white mushrooms
1/4 c finely minced parsley (put parsley in 1 cup measuring cup and use scissors to finely cut parsley)
1/4 c olive oil, extra virgin (may need a bit more)
1/2 tsp salt
1/4 tsp balsamic vinegar
dash(es) red pepper flakes
1 large garlic clove crushed or mashed finely

Steps:

  • 1. Stem mushrooms and brush any soil off. Do not wash mushrooms. Combine all marinade ingredients in measuring cup blending with fork.
  • 2. In a large plastic ziplock bag, combine mushrooms and marinade, zip closed and "massage" the marinade throughout. Let marinate for at least 15 minutes or up to one hour at room temperature.
  • 3. Put mushrooms in grill basket (or gill side down) over high flame for 4 minutes. Turn grill basket over (or turn each mushroom over to top side) and over medium high flame, grill an additional 4 minutes. Mushrooms will be golden, tender and moist. (You know your grill--adjust your flame as necessary)

2 medium shallots, thinly sliced
1 Tbsp each olive oil and butter, unsalted and melted
1 lb mushrooms, sliced or quartered
4-5 clove garlic, minced
1/2 c butter, unsalted, cut into bits
kosher salt and freshly ground black pepper to taste
1/4 tsp thyme, dried
2 Tbsp fresh parsley, chopped
2-3 Tbsp dry sherry

Steps:

  • 1. Heat 1 butter and oil over medium-high heat. Add shallots and garlic, cook, stirring, until slightly softened, and translucent, about 3 minutes.
  • 2. You'll need a grill-proof dish, or alternatively, you could prepare these in foil packets (I use a glazed clay dish).
  • 3. Layer mushrooms and butter bits, seasonings each layer with salt and cracked black pepper. Drizzle with sherry
  • 4. Cover dish with foil. Grill over low coals about 20 minutes, or until cooked through, stirring occasionally.

  • Preheat a grill. Preheat the oven to 350 degrees F.
  • Combine butter, garlic, and 1/2 cup of the parsley, and mix well. Season with salt and pepper, to taste.

Steps:

  • Heat a large frying pan over medium-high heat. Add the butter to the pan then add the mushrooms.
  • Allow the mushrooms to fry until golden brown then add the garlic, chilli and oregano. Allow to cook for another minute then season with salt, pepper and lemon juice. Remove from the heat and set aside.
  • To assemble the sandwiches, mix the mozzarella with the cheddar. Divide the cheese between four slices of bread. Top with mushrooms and sandwich with the remaining slices of bread. Generously butter both sides of the sandwich .
  • Preheat a non-stick pan over medium heat. Add the sandwiches and cook until the cheese has melted and the sandwiches are golden brown and crisp on both sides.
  • Remove from the pan, slice and serve.

1 tablespoon soy sauce (gluten-free or coco aminos, as needed)
4 cloves garlic (very finely minced, divided)
2 lbs. button mushrooms (cut in half)
2 tablespoons butter
A generous pinch of salt

Steps:

  • In a large bowl, mix the balsamic vinegar, soy sauce, and half the garlic. Add the mushrooms and gently toss the mushrooms so they are coated in the marinade. Set aside on your counter for 30 minutes.
  • In a small saucepan melt the butter and add the remaining garlic and a pinch of salt.

  • Brush the dirt off the mushrooms with a paper towel or skin them
  • Build a raging hot fire
  • Dunk the mushrooms into the garlic infused olive oil
  • Place the mushrooms, cap side down on the hot grill (500°+ degrees)
  • After 4-5 minutes push them over to cook on the side, and allow the juice to run off, or flip over the stemless mushrooms
  • After another 4-5 minutes, remove from the heat and allow to cool
  • Serve
