My Husband's Favorite Grilled Cheese & Green Olive Sandwich image

Have you been thinking, lately, that you really need more green olives in your diet? Of course you have! This is just one of my husband's food brainstorms. He comes up with wonderful ideas for *me* to make. Isn't he sweet? I've started to notice a pattern: most of them involve green olives, or garlic, or both!

Number Of Ingredients 4

4 large pimento stuffed olives, sliced
2 slices honey wheat oatmeal bread (see my recipes)
2 slices American cheese (or your favorite)
olive oil

Steps:

  • Heat a small non-stick pan over medium heat.
  • Add olive oil and olives, and saute just until lightly browned.
  • Remove olives, temporarily, to your serving plate.
  • Add a bit more olive oil to pan, if needed.
  • Place one slice bread in pan, cover with olives, then with cheese slices, and lastly the other slice of bread.
  • Cook over medium heat until the bread is browned and crispy, pressing down with spatula.
  • Turn and brown on other side, until crispy brown and the cheese is all melty and just starting to ooze out onto the pan.

4 ounces Monterey Jack cheese, coarsely grated (about 1 1/2 cups)
1 cup frozen corn, thawed
2 tablespoons mayonnaise
2 scallions, thinly sliced crosswise
2 tablespoons chopped fresh cilantro
1 tablespoon chopped canned chipotle chiles in adobo
4 (8-inch) flour tortillas
1 tablespoon vegetable oil
Special Equipment
a well-seasoned ridged grill pan

Steps:

  • Stir together cheese, corn, mayonnaise, scallions, cilantro, and chiles in a small bowl. Lightly brush 1 tortilla with some of oil. Turn tortilla over and spread 1/2 cup filling over half, then fold other half over to form a half-moon. Assemble 3 more quesadillas in same manner.
  • Heat lightly oiled grill pan over moderate heat until hot, then cook quesadillas, 2 at a time, turning over once, until cheese is melted, about 4 minutes total per batch. Transfer to a cutting board and cut in half.

1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 cup chopped sweet red pepper
2 teaspoons chopped seeded jalapeno pepper
4 slices rye bread with caraway seeds
3/4 cup shredded Monterey Jack cheese
1 tablespoon butter, softened

Steps:

  • In a skillet, heat oil over medium-high heat; saute onion and peppers until tender. Divide between 2 bread slices. Top with cheese and remaining bread. Spread outsides of sandwiches with butter., In a large skillet, toast sandwiches over medium heat until golden brown and cheese is melted, 2-3 minutes per side.

2 tablespoons grapeseed oil
½ red onion, thinly sliced
8 slices German rye bread
salt and ground black pepper to taste
4 slices smoked Gouda cheese
4 slices provolone cheese
¼ cup marinated artichoke hearts, drained and chopped

Steps:

  • Heat grapeseed oil in a large skillet over medium heat; saute onion until softened and slightly browned, 5 to 10 minutes. Transfer onion to a small bowl, reserving the oil in the skillet.
  • Lightly brush each bread slice with grapeseed oil from the skillet and season with salt and pepper. Arrange half the bread slices, oil-side down, in the skillet. Top each bread slice with 1 slice Gouda cheese, 1 slice provolone cheese, artichoke hearts, and onion; top with remaining bread slices, oil-side up.
  • Cook sandwiches until bread is browned and crispy and cheeses are melted, about 4 minutes per side. Slice each sandwich in half to serve.

6 bacon strips, halved
6 boneless skinless chicken breast halves (4 ounces each)
1/2 cup olive oil
1/4 cup red wine vinegar
1/4 cup soy sauce
1 teaspoon minced garlic
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/4 teaspoon pepper
6 thin slices sweet onion
6 thin slices tomato
6 thin slices avocado
6 thin slices Monterey Jack cheese

Steps:

  • Cook bacon according to package directions; drain. Meanwhile, flatten chicken to 1/4-in. thickness. In a large resealable plastic bag, combine the oil, vinegar, soy sauce, garlic, salt, oregano and pepper; add chicken. Seal bag and turn to coat; refrigerate for at least 30 minutes. , Drain and discard marinade. Grill chicken, uncovered, over medium heat for 4-6 minutes on each side or until meat is no longer pink. , Move chicken to edges of grill. 1 1/2 cups monterey jack cheese, grated
1 medium onion, chopped
1 teaspoon garlic, minced
2 tablespoons butter
1 (14 ounce) can tomatoes
3/4 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon thyme
1/8 teaspoon pepper
1 (2 ounce) can sliced mushrooms
1 1/2 tablespoons flour
1/2 cup olive, sliced
1 1/2 cups cooked chicken, shredded
8 corn tortillas or 8 flour tortillas

Steps:

  • Cube or grate the cheese.
  • Saute onion and garlice in butter for 5 minutes.
  • Add tomatoes and spices. Bring to boil and simmer uncovered 20 minutes.
  • Blend liquid from mushrooms with flour. Stir into tomato mixture.
  • Add mushrooms, olives and chicken. Cook stirring until thick.
  • Divide chicken mixture between the 8 tortillas and sprinkle the 1 cup of cheese between them.
  • Roll and place in dish seam side down and top with the remaining cheese.
  • Place under broiler until cheese melts.
  • Serve.

2 tablespoons green olive tapenade
3 tablespoons Dijon mustard
8 slices seeded rye bread
8 -10 ounces monterey jack cheese, sliced (or other mild white cheese, such as Havarti or Edam)
olive oil, for brushing bread

Steps:

  • In a small bowl, mix the tapenade and mustard together.
  • Lay out the bread; spread 4 slices on one side with the tapenade mustard to taste.
  • Top with the cheese and the second piece of bread, then press together well.
  • Lightly brush the outside of each sandwich with olive oil.
  • Brown in a panini press or heavy nonstick skillet, weighted down to press the sandwiches as they brown.
  • Cook over medium-high heat until lightly crisped on the outside and the cheese is melting within.
  • Serve hot and sizzling.

  • Using a silicone pastry brush, brush melted butter on the top side of each slice of bread. Flip 4 of the slices over, and layer with ¼ cup shredded cheese, 6 jalapeño slices, 2 turkey slices, 2 strips bacon, and sliced avocado. Top with remaining bread slices with the buttered side up.
  • Preheat a large non-stick skillet over medium-low heat for 2 minutes. Put 2 sandwiches in the pan, and lightly press a round cake pan on top of the sandwiches to weight them down. Leave the cake pan on top of the sandwiches and cook until the first side is nice and golden brown, about 4-5 minutes. Remove the cake pan, flip the sandwiches over, and again press lightly with the cake pan. Cook until golden brown, about 2-3 minutes.
  • Move the sandwiches to a cutting board, and slice on the diagonal. Repeat with the remaining 2 sandwiches and serve immediately.
