1 teaspoon mayonnaise
1 teaspoon prepared mustard
2 slices cooked ham
2 slices cooked turkey meat
1 slice Swiss cheese
1 egg
½ cup milk

Steps:

  • Spread bread with mayonnaise and mustard. Alternate ham, Swiss and turkey slices on bread.
  • Beat egg and milk in a small bowl. Coat the sandwich with the egg and milk mixture. Heat a greased skillet over medium heat, brown the sandwich on both sides. Serve hot.

3 slices farmhouse white sandwich bread, brioche, or challah ((approx. 1/2-inch thick slices))
2-1/2 tablespoons unsalted butter (, divided (I use European-style, such as Kerrygold or Plugra))
1 teaspoon Dijon mustard
1/4 cup red currant jelly or seedless raspberry jam (, plus 1 teaspoon, divided)
2 slices Swiss cheese (or shredded Gruyere (2 ounces))
2 slices ham ((2 ounces))
2 slices turkey ((2 ounces))
1 large egg
1 tablespoon milk
pinch kosher salt
pinch ground nutmeg
1/2 tablespoon vegetable oil
confectioner's sugar (, for dusting)

Steps:

  • Soften 1 tablespoon of butter and very lightly butter one side of two slices of the bread, and both sides of the third slice of bread. Spread Dijon mustard onto the unbuttered side of one slice of bread, and 1 teaspoon of jam or jelly onto the unbuttered side of the final slice.
  • Assemble sandwich in the following order: 1 ounce/slice of Swiss/Gruyere on top of the Dijon, followed by the ham, the slice of fully buttered bread, turkey, 1 ounce/slice of Swiss/Gruyere, and the remaining slice of bread, jelly side down. Trim crusts, if desired.
  • Loosely wrap the sandwich with plastic wrap and weigh it down with a grill press or skillet for 3-5 minutes.
  • In a shallow dish, whisk together egg, milk, salt, and nutmeg. Dip sandwich into the egg mixture, until some of the liquid absorbs into the bread, but it isn't falling apart.
  • Melt together vegetable oil and remaining butter in a skillet (I like to use cast iron). Cook 3-4 minutes per side, until sandwich is golden and cheese is melted. Transfer to paper towels to drain.
  • Heat remaining jam or jelly in a small saucepan or microwave until warmed. Dust sandwich with confectioner's sugar, slice in half, and serve with jelly on the side.

What started as a Croque Madame with custard instead of the usual white sauce turned into a Monte Cristo with a poached egg on top. Unable call it a Croque Madame anymore, I turned to Twitter for help. Some dude who goes by the name Zap Shakur suggested I go with Madame Cristo, and the rest is history. Top with poached or fried eggs and garnish with fresh chives.

2 large eggs
½ cup heavy cream
½ teaspoon salt
1 pinch cayenne pepper
1 pinch freshly grated nutmeg
1 teaspoon freshly grated lemon zest
4 slices white bread
8 thin slices Havarti cheese
4 ounces thinly sliced honey baked ham, halved
2 tablespoons butter
½ teaspoon champagne vinegar
2 eggs
1 pinch cayenne pepper

Steps:

  • Combine egg, heavy cream or milk, salt, cayenne pepper, nutmeg, and lemon zest in a bowl. Mix until batter is thin and runny. (Add 2 tablespoons more milk or cream if needed.)
  • Toast bread until lightly browned. Add Havarti cheese to each slice. Divide ham between two sandwiches. Bring the two halves of the sandwich together and place into the batter. Flip several times to coat evenly; place on a plate. Repeat with second sandwich.
  • Fill a large saucepan with 2 inches of water and bring to a boil. In the meantime, melt butter in a skillet over medium heat. Cook sandwiches in the hot butter until outside is browned and cheese is melted, about 4 minutes per side.
  • Meanwhile, reduce saucepan heat to medium-low, pour in vinegar, and keep the water at a gentle simmer. Crack an egg into a small bowl, then gently slip it into the simmering water, holding the bowl just above the surface of water. Repeat with second egg. Cook until the egg white is firm and the yolk has thickened but is not hard, 2 1/2 to 3 minutes.
  • Transfer sandwiches to plates and dust with cayenne pepper. Remove the eggs from the water with a slotted spoon, dab on a kitchen towel to remove excess water, and place onto each sandwich. Dust with cayenne pepper.

Steps:

  • On a work surface, lay out 2 slices of bread and spread with mayonnaise. Top each slice with the 1 slice of Gouda and 1 slice of turkey each. Put the third slice of bread on top of one stack, and flip the remaining stack on top, cheese-side down, to make a triple-decker sandwich.
  • Using a knife, cut the crusts off the sandwich (this helps to pinch and seal the ends). Wrap the sandwich tightly with plastic wrap and refrigerate for at least 30 minutes and up to 6 hours. (Wrapping the sandwich in plastic wrap, compacts it, and prevents the egg batter from seeping in.)
  • Combine the eggs and milk in a bowl. Heat the oil and butter in a skillet over medium-high heat. Unwrap the sandwich and dip it in the egg batter, to coat evenly. Gently place it in the skillet, and fry, turning once, until golden brown and hot, about 5 minutes total.
  • Cut the Monte Cristo in 1/2, transfer it to a place, and garnish with the strawberry and orange. Spoon some jam over each 1/2 and serve immediately.

You will also want to use a nonstick skillet that is at least ten inches in diameter -- the omelet won't fit in a smaller pan.

Kosher salt
2 slices Swiss cheese
1/2 teaspoon Dijon mustard
1/2 tablespoon confectioners' sugar
1 tablespoon unsalted butter
2 slices sourdough or white bread
2 large slices ham

Steps:

  • Add the eggs, 1 tablespoon water and 1/4 teaspoon salt to a small bowl and whisk to combine. Spread each cheese slice with 1/4 teaspoon of the Dijon and set the slices mustard-side-up on a flat surface. Put the confectioners' sugar in a small fine-mesh sieve set over a plate.
  • Heat the butter in a large nonstick skillet over medium-high heat until melted and starting to brown around the edges of the pan. Add the egg mixture and swirl the pan to coat the bottom. Working quickly, dip 1 slice of the bread in the eggs, then flip the slice and place it so the top edge of the slice is near the edge of the pan furthest from you. Repeat with the remaining slice of bread, setting it across the pan from the first bread slice. The bottom edges of the two slices should be in a straight line, with eggs all around.
  • Continue to cook the eggs until they are completely set on the bottom and mostly cooked on the top, 1 to 2 minutes more. Slide a large nonstick spatula under the bread and flip the whole omelet in one single motion. Set the cheese mustard-side up on top of the omelet, covering the bread. Lay the ham on top of one of the slices of cheese. Using the spatula, fold one side of the omelet (but not the bread side) over the cheese and ham, then fold over the other side. Fold in half so the bread slices meet and form a sandwich.
  • Cook until the bread on the bottom is golden brown and the cheese is beginning to melt, 1 to 2 minutes. Reduce the heat if the bread begins to darken too quickly before the cheese melts. Flip and cook until the other side is golden brown, 1 to 2 minutes.
  • Set the sandwich on a plate and dust with the confectioners' sugar.
