Steps:
- Place corinader seeds, cumin seeds, black cardamom, green cardamom seeds, fennel seeds, 2 pieces cinnamon, 4 pieces cloves, and 8 pieces peppercorn in a heavy bottom frying pan over low heat, stirring constantly until the mixture turn a few shades darker and has a sweet aroma.
- Set aside the mixture and let it cool. Transfer the mixture to a spice grinder, and grind to a fine powder. Stir in nutmeg, turmeric and ginger.
- Set your indoor grill to 450°F Once hot, place skewered pineapple and close lid. Cook for three minutes or until golden brown. Remove from grill, and immediately sprinkle each skewer with 1/2 teaspoons sugar and Masala (2.5 ml).
- Grilled Masala pineapple can be used over freshly made Belgian waffles topped with your favorite yogurt and maple syrup.

GRILLED PINEAPPLE
Steps:
- Prepare a grill for medium heat.
- Cut the pineapple in half lengthwise from the very top to the bottom (keeping the leaves on). Then cut each half lengthwise in half again, so you have 4 long pieces with leaves at one end.
- Add the jelly, brown sugar, butter, cinnamon and salt to a medium saucepan over medium-low heat. Cook, stirring, until the mixture is fully combined and liquid.
- Brush the pineapple with some of the mixture (reserve the remaining mixture), transfer to the grill and grill 3 to 4 minutes per side. Remove to a platter and, using a sharp knife, cut the bottom ends off each piece of pineapple. Then, carefully cut lengthwise from the bottom to the top of each piece along the skin (separating the fruit from the skin), and then crosswise into 1-inch pieces.
- Drizzle the remaining apricot mixture over the pineapple. Serve with vanilla ice cream.

Steps:
- Season chicken with salt and pepper and grill.
- In the meantime, coat large skillet lightly with olive oil and set over medium-high heat.
- Add bacon and cook just until crisp and lightly browned. Add mushrooms and cook until just beginning to soften and brown.
- Combine Marsala, broth and corn starch.
- With pan over medium-high heat add the Marsala mixture and scrape up the browned bits from the bottom of the pan.
- Cook Marsala mixture until it is reduced by one quarter.
- Stir in cream and simmer until you get a nicely thickened sauce.
- Add the chicken to the pan and turn to coat and reheat for a minute.
- Serve with the sauce over top and a sprinkle of parsley.

- MARINATE STEAKS: In large measuring cup, whisk together marinade ingredients until combined. Pour half of marinade into 9 x 13-inch pan, add steaks, and pour remaining marinade over steaks. Cover tightly with plastic wrap and refrigerate at least 4 hours or overnight.
