1 blood orange, Cara Cara orange, or regular orange
1/2 cup 1/3-inch cubes avocado
1/3 cup chopped red onion
2 teaspoons minced red jalapeño
2 teaspoons fresh lime juice
2 teaspoons olive oil
2 6-ounce mahi-mahi fillets

Steps:

  • Using small sharp knife, cut peel and white pith from orange. Working over small bowl, cut between membranes to release segments. Add avocado, onion, jalapeño, and lime juice to oranges in bowl; stir gently to blend. Season salsa to taste with salt.
  • Heat oil in heavy medium skillet over medium-high heat. Sprinkle fish with salt and pepper. Add fish to skillet and sauté until brown and cooked through, about 5 minutes per side.
  • Place 1 fillet on each of 2 plates. Spoon salsa atop fish and serve.

2 teaspoons minced red jalapeno chiles, to taste (remove seed and membrane for less heat)
2 teaspoons fresh lime juice
2 teaspoons olive oil
2 mahi mahi fillets (6 ounce each)

Steps:

  • Using a small sharp knife, cut peel and white pith from orange, Working over small bowl, cut between membrane to release segments.
  • Add Avocado, onion, jalapeño and lime juice to bowl with orange; stir gently to blend. Season salsa to taste with salt.

4 mahi mahi steaks (4-6 oz each)
2 limes, juiced
3 tablespoons dark soy sauce, low sodium
1 1/2 tablespoons ginger paste
1 tablespoon canola oil
2 tablespoons chives, chopped
1 1/2 tablespoons brown sugar
1 tablespoon butter

Steps:

  • Preheat to medium high. Slightly oil grate to prevent fish from sticking. Season mahi mahi with salt and pepper. Combine lime juice, soy sauce, ginger paste and oil mix well. Place mahi mahi in plastic bag and add marinade. Marinade for 20-30 minutes. Grill for 6 - 8 minutes on each side.
  • Meanwhile drain marinade into sauce pan. Bring to a boil and reduce until reduced by half. Add brown sugar and butter.
  • Plate mahi mahi with sauced drizzled on top.

4 skinless mahi-mahi fillets, approximately 2 pounds
2 teaspoons kosher salt
1/2 cup diced red onion
1/4 cup freshly squeezed lime juice
1/4 cup freshly squeezed orange juice
1 tablespoon minced jalapeno
1/4 cup dark brown sugar, packed
1/4 cup tequila
1 tablespoon olive oil
1/4 cup freshly chopped cilantro leaves

Steps:

  • Rub the fillets with kosher salt and set aside. In a non-reactive bowl, combine the onion, lime juice, orange juice, jalapeno, sugar and tequila. Mix to dissolve the sugar, and add the fillets to the bowl. Marinate in the refrigerator for 2 hours, turning the fillets once after 1 hour. Remove the fillets from the marinade and set it aside. Pat the fillets dry with paper towels and lightly coat with the olive oil.
  • Heat a grill to high and place the fillets over direct heat until they are just cooked through - opaque at the center but still moist, approximately 3 to 4 minutes per side. While the fish is grilling, transfer the reserved marinade to a saucepan and heat until it is reduced to about 3/4 cup. Using tongs, remove the fillets to serving plates and divide sauce equally among them. Top with the cilantro.

1 yellow zucchini or yellow squash
Kosher salt
2 tomatoes, diced
1/2 red onion, finely chopped
1/2 jalapeno pepper, minced (remove seeds for less heat)
Juice of 2 limes
2/3 cup packed fresh cilantro (leaves and tender stems), chopped
1 1/2 teaspoons ground cumin
1 1/2 teaspoons ground coriander
8 skinless mahi mahi or striped bass fillets (about 6 ounces each)
Extra-virgin olive oil, for brushing
Freshly ground pepper

Steps:

  • Quarter the zucchini lengthwise, then thinly slice with a knife or mandoline. Transfer to a colander set over a bowl and toss with 1/2 teaspoon salt. Let drain 15 minutes.
  • Combine the zucchini, tomatoes, red onion, jalapeno, lime juice and half of the cilantro in a bowl. Set aside 1 hour.
  • Preheat a grill to medium high. Mix the cumin and coriander in a small bowl. Brush the fish all over with olive oil, then rub with the spice mixture and season generously with salt and pepper. Grill the fish until it is well marked and releases easily from the grill, about 4 minutes. Flip the fish and continue cooking until firm, 2 to 4 more minutes, depending on the thickness. Transfer to a platter.
  • Stir the remaining cilantro into the zucchini mixture and season with salt. Spoon over the fish.

2 fresh limes
8 (6-ounce) mahi-mahi fillets
1/2 teaspoon salt
1/8 teaspoon black pepper
1/2 cup tequila
2 tablespoons canola oil
2 tablespoons butter
1 cup orange juice
1/2 cup dry white wine
1 cup heavy cream
1 tablespoon very finely chopped fresh parsley leaves
4 tablespoons (1/2 stick) butter, cut into cubes

Steps:

  • Microwave limes in a small bowl to release essential oils. Since these will be hot coming from the microwave, set them aside until just cool enough to handle. Season fish with salt and pepper and place in a non-reactive container for marinating. Squeeze lime juice over fish and add rinds to the bowl. Pour tequila over fillets, cover and let marinate in refrigerator for at least 2 hours.
  • About 20 to 25 minutes before mealtime, prepare orange beurre blanc by combining orange juice and wine in a saucepan and simmering on medium heat until reduced by half the volume. Stir in heavy cream, bring to a gentle simmer, and allow to reduce and thicken over low heat. Stir in parsley and set aside briefly in a warm place.
  • Heat oil over medium heat in a large saute pan and add butter. Sear marinated fillets flesh side first, leaving undisturbed for at least 2 to 3 minutes to allow the surface to begin to caramelize and prevent tearing of the fish. Flip over to sear the skin side. Allow to cook for 5 to 8 minutes or until flesh springs back when gently prodded. Remove to a tray and let rest.
  • Whisk butter into sauce just before serving and spoon over and around the fish.

1 1/2 teaspoons minced garlic
1 teaspoon salt
1/4 cup dark rum
1/4 cup lime juice
1/4 cup chopped of fresh mint
1/4 cup chopped fresh cilantro
1 anaheim chili, minced
2 tablespoons olive oil
2 tablespoons honey
1 1/2 teaspoons lime zest
3/4 teaspoon ground cumin
6 (6 ounce) mahi mahi fillets
cracked pepper

Steps:

  • With mortar and pestle, mash garlic and salt to form paste; place in a gallon bag.
  • Add rum, lime juice, mint, cilantro, peppers, oil, honey, lime peel, cumin, salt and pepper.
  • Add fish; turn and rub to distribute marinade evenly.
  • Refrigerate for no more than 30 minutes so fish doesn't break down.
  • Place fish on grill over medium heat or 4 to 6 inches from coals.
  • Grill 8 to 10 minutes or until fish flakes.
  • Turn once and spoon remaining marinade over fish halfway through grilling time.

2 tablespoons sherry or pineapple juice
2 garlic cloves
8 mahi mahi fillets (6 ounces each)
