SHISH TAWOOK GRILLED CHICKEN
These are served in every restaurant in the Middle East. You can easily make them at home and make them taste just as good, if not better. Don't substitute sour cream for the yogurt, as the yogurt is a meat tenderizer.

Steps:
- Whisk together the lemon juice, vegetable oil, plain yogurt, garlic, tomato paste, salt, oregano, pepper, allspice, cinnamon, and cardamom in a large bowl; add the chicken and toss to coat. Transfer the chicken mixture into a large plastic bag; refrigerate at least 4 hours.
- Preheat an outdoor grill for medium-high heat and lightly oil grate. Thread the chicken, onions, and pepper onto metal skewers. Cook on preheated grill until the chicken is golden and no longer pink in the center, about 5 minutes each side. Sprinkle the parsley over the skewers.

GRILLED LEBANESE CHICKEN TAWOOK
This lemony, garlicky Lebanese chicken marinade results in tender, juicy chicken every single time. Serve chicken tawook on salads, over rice or in a pita.

Steps:
- Whisk together the marinade then pour over chicken breasts in a resealable plastic bag. Seal and marinate for 30 minutes or overnight.
- Grill over high heat for 6-7 minutes per side, turning once. Once the internal temp is 165°F, remove from grill and let cool 10 minutes before slicing.

SHISH TAWOOK CHICKEN RECIPE - GRILLED CHICKEN KABOBS WRAPS
Steps:
- Cut the chicken breasts into cubes of about 2 inches each. The cubes shouldn't be too small otherwise they'll dry quickly on the grill.
- Place chicken cubes in a bowl, add all marinade ingredients and rub with hands until all ingredients assimilated well.
- Let marinate in a covered container in the fridge for at least 4 hours, preferably overnight.
- Skewer the chicken right before grilling.
- Grill on a BBQ on medium heat for 12-15 minutes maximum turning frequently. Overcooking can dry the chicken.
- Alternatively, you can lay the skewers on the edges of a deep Pyrex dish and bake in the oven at 400F for 15 mins.
- Once cooked, remove the chicken cubes and place in a pot while covering the lid tightly. Let rest for 5 minutes to help the chicken self-steam and turn juicier and softer.
- Spread 1 teaspoon of Lebanese garlic paste along the center/diameter of a pita bread.
- Add 4-5 chicken kabobs.
- Garnish with salted cucumber pickles, French fries, grilled tomatoes or peppers (optional)., Roll and enjoy. You could also toast the wrap roll through a panini grill for 2-3 minutes.

SHISH TAOUK TOUM - GRILLED / BBQ CHICKEN WITH GARLIC SAUCE
This is a chicken on a skewers recipe with Lebanese flavours. The whole family enjoyed this dish, even three year old Little Miss (DD). The only change I would make is I would make less of the Toum (Garlic Sauce) as it was way too much for our family and I don't know how to divided the quantity as it's impossible to half an egg. (Any suggestions)? I used Chicken thighs instead of breast, Egg Replacer to substitute the egg and I would recommend to marinate overnight. We served it with Recipe #218542 . This recipe comes from a book called 'The Lebanese Cookbook' by Hussien Dekmak - Passive work time does not include marinated time

Steps:
- Cut the chicken breasts into 2 cms pieces and place in a bowl. Add the olive oil, tomato puree, garlic 1 tablespoon Toum (garlic sauce - see below recipe), salt, pepper and lemon juice. Mix well to coat the chicken and leave to marinate in the fridge for at least 1 hour or overnight.
- Tread the chicken pieces on to skewers and grill for about 10 minutes on the barbecue or under a preheated grill. Turning from time to time.
- Serve with Toum (garlic sauce) for dipping and a salad.
- Toum (Garlic Sauce) - Put the garlic clove and salt in a blender or food-processor and whiz to a smooth puree. Add the egg white and whiz again until smooth. Very slowly pour in the vegetable oil in a constant, steady stream until all the oil is used up and the sauce is the consistency and colour of mayonnaise. Add the lemon juice and keep whizzing until smooth. Taste and add more lemon if necessary.
GRILLED CHICKEN - SHISH TAOUK
I found this recipe in a Lebanese Cook Book by Hussien Dekmak. Really, really delicious. Nice and easy to prepare. I served them on brown rice with grilled vegetables. They would also go nice with a fresh salad.
