4 cloves garlic, smashed
3 to 4 tablespoons fresh oregano
1 teaspoon salt
1 teaspoon black pepper
5 tablespoons extra-virgin olive oil
1/4 cup fresh lime juice (about 4 limes)
1 teaspoon sugar
1 pound piece of skirt steak

Steps:

  • To a large re-sealable bag, add 4 smashed garlic cloves, fresh oregano, salt, pepper, extra-virgin olive oil, lime juice, and sugar.
  • Add skirt steak, seal the bag and move the steak around, making sure it is submerged in the mixture.
  • Place the bag in a large glass bowl to store in the refrigerator for a few hours or overnight.
  • When the steak has finished marinating, remove it from the plastic bag and place it on a hot grill pan.
  • Cook about 4 minutes on each side.

MEXICAN SKIRT STEAK

1 cup salsa, plus more, for serving
1 tablespoon fresh lime juice, plus lime wedges, for serving
1 tablespoon Worcestershire sauce
2 cloves garlic
3 tablespoons extra-virgin olive oil
1 1/4 pounds skirt steak, trimmed and cut into 4 pieces
Kosher salt and freshly ground black pepper
Warm tortillas, sliced avocado and fresh cilantro leaves, for serving

Steps:

  • Combine the salsa, lime juice, Worcestershire, garlic and 2 tablespoons of the oil in a blender; puree until smooth. Pour into a resealable plastic bag and add the steak pieces. Seal tightly and rub the steaks with the marinade until evenly coated. Set aside for about 30 minutes at room temperature.
  • Heat the remaining 1 tablespoon oil in a large skillet over medium-high heat. Remove the steaks from the marinade, allowing the excess to drip off. Discard the marinade. Pat the steaks dry with paper towels and season generously with salt and pepper. Lay the steaks in the skillet and cook, turning once, until browned on the outside and medium-rare, 6 to 8 minutes total. Let the steaks rest for 5 minutes. Serve sliced with warm tortillas, sliced avocado, cilantro leaves, lime wedges and extra salsa to make tacos.

1 3/4 to 2 pounds skirt steak, trimmed and cut crosswise into 4-inch pieces
3 tablespoons sesame seeds
4 cloves garlic, smashed
1 cup cola
1/4 cup soy sauce
1/4 cup packed dark brown sugar
1/4 cup toasted sesame oil
Kosher salt and freshly ground pepper
1 large white onion, cut into 2-inch-thick wedges
6 to 8 slices thick-cut bacon
2 to 3 banana or Cubanelle peppers

Steps:

  • Pierce the steak a few times with a fork. Toast the sesame seeds in a skillet over medium heat until golden, shaking the pan, 2 to 3 minutes. Transfer to a plate to cool.
  • Combine the sesame seeds, garlic, cola, soy sauce, brown sugar, sesame oil, 1 teaspoon salt and 1/2 teaspoon pepper in a large bowl, stirring to dissolve the sugar. Add the steak, onion wedges and bacon, turning to coat. Cover and refrigerate 4 hours or overnight.
  • Remove the steak and onion wedges from the marinade with a slotted spoon and transfer to a baking sheet. Heat a grill pan over high heat. Grill the onion wedges and peppers, turning, until charred, 8 to 10 minutes. Transfer to a platter. Grill the steak until charred, 4 to 5 minutes per side for medium rare. Add to the platter.

2 large garlic cloves, minced and mashed to a paste with 1/2 teaspoon salt
1 1/2 teaspoon fresh lime juice

1/4 teaspoon cinnamon

Steps:

  • Prepare grill.
  • Cut steak into large pieces if necessary to fit on grill.
  • In a small bowl stir together remaining ingredients. On a sheet of wax paper spread spice paste evenly on both sides of steak. Marinate steak at room temperature 15 minutes.
  • Grill steak on an oiled rack set 5 to 6 inches over glowing coals 3 to 5 minutes on each side, or until just springy to the touch, for medium-rare meat. (Alternately, steak may be grilled in a hot well-seasoned ridged grill pan over moderately high heat.)
  • On a cutting board let steak stand 5 minutes and cut diagonally across grain into thin slices. Serve steak with quesadillas.

Living in California, we often see skirt steak available. I found this recipe to be fairly authentic to how they grill it out here. You can use lemon juice, but definitely use the lime juice if you can. The onion is wonderful with this but tends to fall though the grill grates, so have an extra sweet onion sliced thick to grill as well. Allow 2 to 4 hours to marinade. (Time for marinading is included in the cooking time)

2 tablespoons olive oil
1/2 cup fresh lime juice (about 8 limes)
1 garlic clove, minced
1/2 onion, thinly sliced (for marinade)
1 large sweet onion (for grilling)
1/4 teaspoon black pepper
1/4 teaspoon salt
2 lbs skirt steaks
12 medium corn tortillas, warmed
1 large tomatoes, peeled and seeded
1 medium ripe avocado, peeled and pitted
1 tablespoon red onion
2 tablespoons cilantro
1 jalapeno chile, seeded
1 tablespoon fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Place all the marinade ingredients in a bowl and mix. Place skirt steak and marinade in a ziplock bag and put in the fridge for 2 to 4 hours.
  • Meanwhile, mix all the salsa ingredients in a bowl, cover and refrigerate.
  • Place oven on 200°F and wrap your tortillas, sealed in foil for about 20 minutes.
  • Prepare your barbecue for medium heat grilling. Remove steak from the marinade and place on the grill for 4 to 6 minutes on each side (medium rare to medium).
  • Slice the sweet onion and place on the grill as well, brushing with the marinade. Grill until still firm, but just turning tender.
  • Place the steak and onions on a carving platter. Slice the steak thinly on the diagonal and serve on a platter with the onion.
  • To eat, place some steak, onion and Avocado-Tomato salsa in a warm tortilla and enjoy!

1 orange, thinly sliced with peel
1/2 onion, thinly sliced
4 garlic cloves, halved and smashed
2 1/4 lbs skirt steaks
kosher salt
fresh ground black pepper
1 cup light colored beer (preferably lager style)
1/2 cup soy sauce

Steps:

  • In a wide, shallow glass baking dish, scatter half of the orange slices, half of the onion slices and half of the garlic pieces on the bottom of the dish. Sprinkle the steak all over with salt and pepper and put in the dish on top of the orange and onion slices. Scatter the remaining orance, onion and garlic over the steak and pour in the beer and soy sauce. Cover with plastic wrap and marinate for 1 hour at room temperature or up to overnight in the refrigerator.
  • Prepare a barbeque on medium-high heat or prepare a broiler. Remove themeat from the marinade and discard the marinade. Grill the steak to desired doneness, about 4 minutes per side for medium rare. Serve as desired.
  • NOTES:.
  • Grilled skirt steak sliced into strips is a great filling for tacos. Top with shredded cheese and beans, or use your favorite taco fillings.

1 c uncooked long-grain white rice
1 (16-ounce) can refried beans
salt to taste
garlic powder to taste
2 small onions, chopped
1 Tbsp olive oil
4 beef steaks (trimmed)
2 avocados, peeled, pitted, sliced

Steps:

  • 1. Lightly oil grill grate and preheat grill to medium-high heat.
  • 2. In a medium-sized pot over high heat, bring water to a boil. Add rice, reduce heat to medium-low, and simmer with lid on for 20 minutes or until water is absorbed
  • 3. In a second pot over medium heat, stir together beans, salt, and garlic powder. Cook, stirring often, until heated through.
  • 4. In a medium-sized nonstick skillet over medium-high heat, saute onions in oil until golden.
  • 5. Grill steaks as directed above (follow the tips). When ready to serve, spread beans on top of steaks and top with onions and avocados. Serve over rice.

2 ounces pasilla chiles (6), wiped clean, stemmed, slit open, seeded, and deveined
2 ounces guajillo chiles (8), wiped clean, stemmed, slit open, seeded, and deveined
1/4 cup distilled white vinegar
1/4 cup light Mexican beer
1/2 cup chopped white onion
4 garlic cloves, peeled
1 teaspoon fine salt, or 2 teaspoons kosher salt
1/2 teaspoon dried oregano, preferably Mexican
1/4 teaspoon cumin seeds
5 whole cloves
For the steak:
2 pounds skirt steak, cut into four 8- to 9-inch pieces
1 teaspoon fine salt, or 2 teaspoons kosher salt
1/2 cup pasilla-guajillo adobo (above)
About 1 tablespoon mild olive oil or vegetable oil

Steps:

  • Make the adobo:
  • Heat a comal, griddle, or heavy skillet over medium-low heat, and toast the chiles 2 or 3 at a time, turning them over and pressing down on them with tongs frequently, until the chiles are fragrant, about 1 minute per batch. Soak the chiles in enough cold water to cover until they're soft, about 30 minutes. Drain and discard the soaking water.
  • Put the vinegar and beer in the blender jar with the chiles and the remaining adobo ingredients. Blend until smooth, at least 3 minutes, adding a little water if necessary to puree. If you like a silky, smooth texture, strain the adobo through a medium-mesh sieve. Set aside 1/2 cup of the adobo to marinate the steak, and keep the rest in an airtight container in the refrigerator for up to five days or in the freezer for up to one month.
  • Make the steak:
  • Pat the steaks dry, season them with the salt, then coat them generously with adobo. Let them marinate in the refrigerator for 1 to 2 hours.
  • Heat a grill or grill pan over medium-high heat. Lightly oil the grill or grill pan and cook the steaks, 3 to 5 minutes on each side for medium-rare, depending on their thickness. Let the steaks rest for 5 minutes before slicing for tacos or serving as whole steaks.
