Lamb Chops marinated in tangy mustard lemon marinade and grilled for wonderful char flavor. Lamb chops are perfect for grilling since the cut of meat is best prepared when seared on high heat. For this recipe, I marinated lamb in mustard, lemon and garlic. I usually allow marinate to flavor meat for at least for 5-6 hours, so that, meat is most flavorful and tender. This marinade is enough for 4 or 5, 1/2 to 1 inch thick lamb chops, if you are making more than 4-5 chops, I suggest to increase the marinade quantity.

1 lbs Lamb, Chops - frenched (just ask your butcher to do this)
1/2 tsp Salt
1 tbsp Olive Oil
1/2 tsp Grill Mates Chicken Seasoning
1 tbsp Mustard, Ground Or Paste
2 tbsp Lemon, Juice
1/2 tsp Red Pepper Powder
1/2 tsp Black Pepper
1/2 tsp Garlic, Powder

Steps:

  • Take all of the above given ingredients (except oil and lamb chops) in a bowl and mix well.
  • Then slowly add oil to the mixture and whisk well.
  • Add lamb chops and make sure to coat marinade to all sides of chops. Transfer all contents to zip lock bag, close the bag and refrigerate for 1 hour (preferably 3-4 hours).
  • Bring to room temperature 30 minutes before grilling. Sear Lamb Chops on oiled Charcoal or Gas grill on both sides for 4-5 minutes. Then shift these away from direct flame and grill till desired doneness is achieved. Brush left over marinade over chops 1 to 2 times for more flavor.
  • Squeeze lemon juice and serve hot with your choice of side dish. I like crispy potatoes and grilled onions/Tomato on side.

2 large garlic cloves, crushed
1 tablespoon fresh rosemary leaves
1 teaspoon fresh thyme leaves
Pinch cayenne pepper
Coarse sea salt
2 tablespoons extra-virgin olive oil
6 lamb chops, about 3/4-inch thick

Steps:

  • In a food processor fitted with a metal blade add the garlic, rosemary, thyme, cayenne, and salt. Pulse until combined. Pour in olive oil and pulse into a paste. Rub the paste on both sides of the lamb chops and let them marinate for at least 1 hour in the refrigerator. Remove from refrigerator and allow the chops to come to room temperature; it will take about 20 minutes.
  • Heat a grill pan over high heat until almost smoking, add the chops and sear for about 2 minutes. Flip the chops over and cook for another 3 minutes for medium-rare and 3 1/2 minutes for medium.

8 bone-in lamb rib or loin chops, cut 1 1/4 to 1 1/2 inches thick
2 tablespoons (30g) salt
2 tablespoons (30ml olive oil
Freshly ground black pepper, to taste

Steps:

  • Salt lamb on both sides and let sit at room temperature for 40 minutes while you prepare the grill.
  • Light 1 chimney full of charcoal. When all charcoal is lit and covered with gray ash, pour out and arrange coals on one side of charcoal grate. Set cooking grate in place, cover grill, and allow to preheat for 5 minutes. Alternatively, set half the burners on a gas grill to high. Cover and preheat for 10 minutes. Clean and oil grilling grate. Rub lamb chops with olive oil, season with black pepper, and place on cool side of grill. Cover grill and let cook until an instant-read thermometer inserted into thickest part of chops registers 110°F (43°C) for rare or 120°F (49°C) for medium-rare.
  • Move lamb to hot side of grill and cook until browned on both sides, 2 to 3 minutes per side, or until an instant-read thermometer inserted into thickest part of chops registers 120°F for rare or 130°F (54°C) for medium-rare. Transfer to a platter and let rest for 10 minutes. Serve immediately.

I love lamb riblets and this is a great way to cook them on the grill--I think it will work for lamb chops too just changing the cooking times. The original recipe called for lemons, but when I made this I was out of lemons so used lime for rubbing on the lamb itself. Recipe source: Bon Appetit (August 1990)

3 tablespoons butter
3 tablespoons olive oil
1/4 cup shallot, minced
4 garlic cloves, pressed
2 teaspoons dried thyme
1/2 cup honey
1/4 cup lemon juice
1/2 cup of fresh mint, minced
salt
pepper
8 1/2 lbs lamb riblets, breast (about 6 racks)
2 lemons, halved (or limes, halved, see note above)
4 teaspoons ground coriander
4 teaspoons ground cumin
salt
pepper
1 bunch of fresh mint (garnish)
lemon wedge (garnish)

Steps:

  • To make the glaze: in a saucepan over medium high heat melt butter and oil together. Stir in shallots and sauté for 4 minutes or until golden brown.
  • Stir in garlic and sauté for 2 minutes.
  • Stir in thyme and cook stirring for 1 minute.
  • Stir in honey and lemon juice and bring to a simmer, stirring until honey dissolves. Reduce heat and simmer for 10 minutes, stirring frequently.
  • Stir in mint and simmer stirring frequently for 10 more minutes or until glaze is thick.
  • Add salt and pepper to taste.
  • Cover and let stand for 3 hours. (*Glaze can be prepared one day ahead, covered and refrigerated. Before using, stir over low heat until heated.).
  • To prepare riblets: rub riblets with cut sides of lemons (or limes see note above in description). Season both sides with spices, salt and pepper. Cover and let stand for 45 minutes while preparing barbecue grill.
  • Prepare grill to medium high heat. Brush grill with oil.
  • Place ribs on grill and sear for 8 - 10 minutes per side.
  • Cover with grill lid or aluminum foil and continue grilling, turning occasionally for 20-30 minutes or until lamb is done. Uncover.
  • Brush riblets with some of the glaze and continue grilling for 10 minutes or until lightly charred.
  • Cut riblets into serving pieces and then arrange them on platter, garnishing with mint and lemon wedges.

6 australian lamb rib chops (about 1 1/4 inches thick, trimmed of all fat)
1/2 cup pompeian burgundy cooking wine or 1/2 cup other red wine
1/4 cup fresh parsley leaves
1 tablespoon fresh rosemary leaf
2 teaspoons fresh thyme leaves
2 large garlic cloves, crushed
1 tablespoon Dijon mustard
1/4 cup extra virgin olive oil
coarse sea salt
fresh coarse ground black pepper

Steps:

  • Place the lamb chops in a shallow dish.
  • Pour the wine over the chops and let marinate at room temperature for 30 minutes, turning once.
  • In the work bowl of a food processor, combine the parsley, rosemary, thyme, garlic, mustard and olive oil and process until smooth. Reserve.
  • Prepare a gas or charcoal grill - the gas grill should be set to high.
  • Remove the chops from the wine and spread each side with the herb mixture.
  • Sprinkle with coarse salt and freshly ground pepper and when the gas grill is hot, or when the coals of the charcoal grill are red hot, place the chops on the gas grill or directly above the coals of the charcoal grill and cook for about 2 minutes on each side for medium rare.
  • Serve at once.

Easy to cook and exceptionally tender, these grilled lamb chops get a kick of flavor from garlic, lemon, parsley and just a touch of honey.

2 lb. lamb rib or loin chops
2 tsp. salt
1 tsp. ground black pepper
1/2 c. chopped fresh parsley
1 tbsp. chopped fresh oregano
1/2 c. plus 2 tbsp. olive oil
2 garlic cloves, grated
2 tsp. lemon zest
1 tbsp. fresh lemon juice
2 tsp. honey
1/4 tsp. red chile flakes
1 c. chopped mixed olives

Steps:

  • Add lamb chops to a resealable plastic bag. Season with salt and pepper; set aside.
  • In a medium bowl, stir together parsley, oregano, 1/2 cup olive oil, garlic, lemon zest, salt, pepper, honey, and chile flakes. Reserve 2 tablespoons of the marinade in a small bowl. Pour the remaining marinade over the lamb. Seal the bag, and gently massage the marinade into the lamb chops. Refrigerate at least one hour or overnight. Add the olives to the remaining unused marinade; stir in the remaining 2 tablespoons olive oil; cover and refrigerate until ready to serve.
  • Remove the lamb and olive mixture from the refrigerator 30 minutes before grilling. Meanwhile, pre-heat the grill to medium-high heat, 400° to 450°. Oil the grill grates well. Remove the lamb chops from the marinade and scrape off any excess marinade. Discard the remaining marinade.
  • Grill the lamb chops uncovered until grill marks appear, 3 to 4 minutes for rib chops, or 4 to 5 minutes for loin chops. Turn the chops, and grill until an instant-read thermometer inserted in the meat registers 135°, 3 to 4 minutes for rib chops, or 4 to 5 minutes for loin chops. Cover cooked lamb chops with foil, and let rest 5 minutes.
  • Stir the olive mixture to recombine the ingredients; spoon over the lamb just before serving.

2 tablespoons soy sauce
2 tablespoons Worcestershire sauce

2 pounds double-cut lamb rib chops, frenched if desired

1 tablespoon pink peppercorns, coarsely crushed

Steps:

  • Make the marinade for the lamb chops: Combine the oil, mustard, soy sauce, Worcestershire sauce, parsley, rosemary and garlic in a medium bowl. Place the lamb chops in a baking dish or large resealable plastic bag. Pour the marinade over the meat, turning to coat. Cover or seal. Marinate the lamb chops for at least 1 hour at room temperature or up to 8 hours in the refrigerator.
  • Place a grill pan over medium heat until hot. Remove the lamb chops from the marinade. Sprinkle lightly with salt and pepper. Grill until an instant-read thermometer inserted in the thickest part (avoiding bone) registers 135 degrees F for medium-rare, 6 to 8 minutes per side. Remove the lamb chops from the grill and let rest 15 minutes before serving.
  • Meanwhile, make the pink peppercorn sauce: Melt the butter in a medium saucepan over medium-high heat. Add the onion and cook until it begins to soften, about 3 minutes. Slowly pour in the brandy. (If using a gas cooktop, to avoid flare-ups from the alcohol, remove the pan from the heat before adding the brandy.) Cook until the alcohol cooks off, 1 to 2 minutes, stirring the bottom of the pan to loosen any browned bits. Slowly whisk in the heavy cream and peppercorns. Simmer, stirring frequently, until the sauce reduces by half, about 5 minutes. Season with salt.
  • To serve, arrange the lamb chops on a platter. Garnish with parsley and rosemary and serve with the pink peppercorn sauce.
