GRILLED KNOCKWURST
Knockwurst can be boiled or steamed but is at its best when lightly grilled and served with good pretzels, yellow or Dijon mustard, and a pale ale; a "hobo pack" of cremini mushrooms and garlic, also cooked on the grill, makes the meal a feast.

- Preheat a grill to medium (if you are using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for just 5 to 6 seconds). Grill knockwurst, turning frequently, until marked by grill and heated through, about 5 minutes. Cut each knockwurst on the diagonal into 1/2-inch slices. Serve with grilled mushrooms and garlic.
DARK BEER BASTED KNOCKWURST WITH ONIONS AND HOT MUSTARD
A grilled knockwurst or bratwurst, basted in a dark beer marinade and served in a crunchy crust bun with caramelized, brown sugar topping and hot Duesseldorf mustard

Steps:
- Pierce the skin of the bratwurst with a fork.
- Grill sasuages for approximately 8 minutes until "just about" done.
- Add 2 tablespoons of butter into a pot over medium heat until butter is soft. Add sausages and Dark Bock or Oktoberfest beer. Cover and let simmer over very low heat for 20 minutes to 1 hour. The beer flavor will be stronger the longer you keep in the pot. The bratwurst will finish cooking during this step.
- As the bratwursts are simmering, add 1 to 2 tablespoons of butter into a saucepan with onion. Cook until the onions are clear. Once the onions are clear, add the brown sugar and mix with the onions. Take off heat before the brown sugar is added.
- Serve with hot Düsseldorf mustard on a bun with a bottle of Dark Bock or Oktoberfest beer.
OKTOBERFEST KNOCKWURST
This sounds like a great comfy meal on a chilly day. It can be made on the stove top or in a crockpot.

- Layer in either a Dutch oven for stove top cooking, or in a crockpot.
- Begin with potatoes, then sauerkraut, then a sprinkling of caraway seeds and half the brown sugar, then the apples, then the knockwurst, then the chicken broth, then the rest of the brown sugar.
- Cover and cook on low for stove top, for 2 hours.
- If using the crockpot, cover and cook on LOW for 7 hours.

- Light 1 chimney full of charcoal. When all charcoal is lit and covered with gray ash, pour out and arrange coals on one side of charcoal grate. Set cooking grate in place, cover grill, and allow to preheat for 5 minutes. Alternatively, set half the burners on a gas grill to the highest heat setting, cover, and preheat for 10 minutes. Clean and oil grilling grate.
- Combine beer, mustard, and sauerkraut in a 10-inch square-disposable aluminum pan. (Alternatively, construct a tray out of a double layer of heavy-duty aluminum foil, 10 inches square, with sides about 2 inches high.) Stir until mustard is broken up and mixture is homogeneous. Add thyme sprigs or bay leaves (if using). Nestle sausages into sauerkraut.
- Place tray on hot side of grill and cook until simmering, about 4 minutes. Slide to cooler side of grill. Cover grill, with vents over bratwurst. Cook with all vents open until bratwurst register 140 to 145°F (60 to 63°C) on an instant-read thermometer, about 20 minutes, turning once in the middle.
- Remove lid. Using tongs, remove bratwurst from sauerkraut and place directly on cooking grate over hot side of grill. Cook, turning occasionally, until well browned and crisp, about 3 minutes total. Return to sauerkraut. Toast buns over hot side of grill, if desired. Serve bratwurst with buns, mustard, and sauerkraut from pan.

GRILLED BRATWURST WITH CARAMELIZED ONIONS

- Combine the hard cider, 1 cup of the broth and the bratwurst in a large saucepan, bring to a simmer and gently simmer over low heat for 15 minutes.
- Meanwhile, heat the oil and butter in a large skillet over medium heat. Add the onions, sprinkle with 1 teaspoon salt and 1/4 teaspoon pepper and cook until just tender, about 5 minutes. Add the remaining 1/2 cup broth and simmer until the onions are browned and completely soft, about 5 minutes more. Keep the onion mixture warm while you cook the bratwurst.
- Preheat a grill to medium-high heat or heat a grill pan over medium-high heat.
- Transfer the bratwurst to the grill or grill pan and cook, turning occasionally, until browned, about 10 minutes. Lightly grill the pretzel rolls, cut-side down. Serve the bratwurst topped with the onions and with the pretzel rolls and mustard on the side.
KNOCKWURST OR WEINERS
The perfect thing if you'd like to know exactly what's in your sausages. These won't be the same color as the purchased variety due to no nitrates. Casings can be ordered from your local butcher. To stuff the casings, you will need a meat grinder with a sausage horn attachment.

- To prepare casings: Let casings soak in cool water about five minutes to remove salt on outer surface (no longer, or they will become too tender to stuff) and flush salt from the inside by placing one end on faucet nozzle and turn on cold tap water (if you see holes or water leaking, cut and discard that section).
- Remove casing from faucet and gently squeeze out water; cover rinsed casings and refrigerate until ready to use.
- Combine meats and grind coarsely.
- Add remaining ingredients, thoroughly knead by hand, and grind again.
- Bunch or tightly pleat prepared casings onto sausage horn; tie a knot in the end.
- Stuff ground meat into casings and twist into 6" lengths.
- Place in a heavy kettle with water to cover.
- Bring to a boil and simmer 10 minutes.
- Drain and rinse in cold water.
- Refrigerate until ready to use (no longer than three or four days) or freeze.
- They must be cooked again before being eaten.
- Pierce sausages with a fork first to allow grease to run out, then they are ready to grill, boil, or fry.
