CHINESE EGG DROP SOUP

Chinese Egg Drop Soup image

Make the restaurant-style Chinese egg drop soup with the minimum ingredients, within 15 minutes, and without any fuss.

Provided by Maggie Zhu

Categories     Side     Soup

Time 15m

Number Of Ingredients 9

4 cups chicken broth
3 green onions (, chopped, white and green parts separated)
1 slice ginger
1/4 teaspoon white pepper powder
1/4 teaspoon fine sea salt ((or to taste))
4 teaspoons cornstarch
1/8 teaspoon turmeric powder (, for the yellow color (Optional))
4 large eggs (, beaten (Footnote 1))
2 teaspoons sesame oil

Steps:

  • Combine the chicken broth, the white part of the green onion and ginger in a small pot. Cook over high heat until brought to a boil. Turn to a low heat and let the soup reduce to a simmer.
  • Combine cornstarch, white pepper, turmeric, sea salt and 2 tablespoons of water in a small bowl. Whisk until cornstarch is completely dissolved. Swirl into the soup and mix well with a spatula.
  • To add eggs, hold a fork (or two chopsticks slightly apart) across the top of a small bowl, drizzle the egg mixture slowly through the gaps into the soup. Let the eggs set for a few seconds, then stir gently to break up the egg to the desired sized pieces.
  • Drizzle sesame oil and sprinkle with the green part of the green onion.
  • Serve warm.

EGG DROP SOUP

Egg Drop Soup image

This easy egg drop soup recipe will taste just like your favorite Chinese restaurant's egg drop soup (maybe a little better). It's delicious, and can be made in minutes.

Provided by Bill

Categories     Soups and Stocks

Time 15m

Number Of Ingredients 9

4 cups chicken stock ((about 1 liter, organic or homemade preferred!))
1/2 teaspoon sesame oil
3/4 teaspoon salt
1/8 teaspoon sugar
1/8 teaspoon white pepper
1/2 teaspoon turmeric
3 tablespoons cornstarch ((mixed with 1/3 cup water))
3 eggs ((lightly beaten))
1 scallion ((chopped))

Steps:

  • Bring the chicken stock to a simmer in a medium soup pot. Stir in the sesame oil, salt, sugar, and white pepper. Add in the turmeric or 5 drops of yellow food coloring, if using. This will give the soup that rich restaurant-style yellow color, but it is optional. Taste the soup, and adjust the seasoning if needed.
  • Next add the cornstarch and water mixture. Make sure the cornstarch and water is mixed well, as the cornstarch settles very quickly. Stir the soup continuously as you drizzle in the slurry, or you'll get clumps of cooked starch in your soup. Use more or less starch if you like a thicker or thinner soup. You can also add the starch in a couple small batches, let the soup simmer for a couple of minutes, then check to see if the consistency is to your liking.
  • Now we're ready for the most exciting part: the egg. This recipe calls for the egg to be lightly beaten, which results in both white and yellow egg swirls. The speed at which you stir the soup when adding the egg also determines whether you get large "egg flowers" or small egg flowers (i.e. swirly bits of egg). Use a ladle to stir the soup in a circular motion, and slowly drizzle in the egg until you have added it all.
  • Ladle the soup into bowls, top with scallions, and serve!

ASIAN EGG DROP SOUP

Asian Egg Drop Soup image

I love this soup! I used to buy the prepackaged seasoning for Egg Drop Soup at the grocery store until I found this recipe that is better and cheaper! Tastes just like what you would order at a restaurant and takes just minutes to prepare. I use chicken bouillon for the base most of the time and leave out the extra salt. Dried chives are good if you don't have fresh and any extras like thinnly sliced mushrooms or green onions are a great addition, but not necessary.

  • Egg Drop Soup. Considered Chinese comfort food, egg drop soup is basically a chicken broth with beaten eggs and spring onion. Some cooks prefer a more bland broth to allow the eggs and onions to shine through, but a chicken or vegetable broth makes for a nicely flavored soup.
  • Egg Foo Yung with Gravy. Egg foo yung is basically the Chinese version of the French omelet, which, although it tastes great on its own, is frequently accompanied by a brown sauce or gravy.
  • Tea Eggs. This savory snack is sold by street vendors throughout China and Taiwan. Hard-boiled eggs are gently tapped all over the shell so that cracks appear, then simmered in an aromatic mixture of black tea, soy, and spices.
  • Steamed Pork in Egg Custard. A traditional Cantonese dish, egg custard with pork is somewhat simple to make. Ground pork and spices are covered in a flavorful egg custard and then steamed for 10 minutes or until the eggs are thoroughly cooked.
  • Chinese Scrambled Eggs With Garlic Chives. This recipe is made with Chinese garlic chives, known for their super “garlicky” flavor, but use regular chives if you can't find the Chinese type.
  • Scrambled Eggs With Shrimp. If you’re looking for a way to jazz up scrambled eggs for your next brunch, use Chinese seasonings like oyster sauce and rice wine (or sherry).
  • Chop Suey With Quail Eggs. Chop suey is a Chinese-American dish comprised of meat, eggs, and vegetables quickly cooked in a thick sauce. This recipe includes quail eggs, which are speckled and smaller than hen eggs, but also higher in protein, vitamin A, and certain B vitamins.
