Old Bay Marinated and Grilled Shrimp image

These shrimp marinate for only 30 minutes in a flavorful mix of lemon juice, garlic and the powerhouse spice blend, Old Bay seafood seasoning. Don't be tempted to let them sit in the sauce any longer than that because the lemon juice will start to cook the shrimp and make them tough. Serve with some boiled or roasted potatoes for a grill-lover's version of a shrimp boil.

1 large lemon
2 large cloves garlic
1 tablespoon seafood seasoning, such as Old Bay
2 tablespoons extra-virgin olive oil
1 pound jumbo shrimp (16/20), peeled and deveined
Hot sauce, for serving

Steps:

  • Juice half of the lemon and add the juice to a medium glass bowl. Finely grate the garlic and add to the bowl along with the Old Bay seasoning, olive oil and shrimp. Toss to combine.
  • Marinate in the refrigerator for 30 minutes. Meanwhile, cut the remaining lemon half into wedges and reserve for serving.
  • Heat a large grill pan over medium-high heat. Remove the shrimp from the marinade and put on a baking sheet lined with paper towels. In batches, cook the shrimp until lightly charred in spots on both sides and just cooked through, about 3 minutes total. Remove from the heat and transfer to a large plate.
  • Serve the shrimp with the reserved lemon wedges and hot sauce.

2 1/2 pounds jumbo shrimp
For the Marinade:
1/4 cup olive oil, plus more for the grill
1/4 cup chopped fresh cilantro, plus more for garnish
3 tablespoons freshly squeezed lemon juice, from 1 large lemon
1/2 medium shallot , diced
1 to 2 cloves garlic, minced
1 teaspoon finely chopped fresh basil, plus more for garnish
1/4 teaspoon kosher salt
Pinch white pepper, optional

Steps:

  • Gather the ingredients.
  • Peel and devein shrimp. Blot dry with paper towels and place in a resealable plastic bag.
  • Combine marinade ingredients: oil, cilantro, lemon juice, shallot, minced garlic, chopped basil, salt, and white pepper (if using) in a bowl or large mixing cup.
  • Pour mixture over shrimp. Seal bag and place in the refrigerator for 20 to 30 minutes-but no longer than that because the acid from the lemon juice will begin to soften the shrimp.
  • Preheat the grill to medium-high heat. Right before placing shrimp on the grill, oil the grill grates well-use tongs and paper towels dipped in oil. Make about 4 passes to create a nonstick surface.
  • Remove shrimp from the bag and discard marinade. Place shrimp on the grill and allow to cook for 2 to 3 minutes on each side or until they appear pink and firm all the way around.
  • Remove from heat and serve immediately with a little extra chopped cilantro or basil on top. Enjoy!

This grilled garlic and herb shrimp recipe is very easy, IF you can just walk out into the backyard, and pick a handful of your own fresh, green sprigs. However, these are so amazingly delicious, if you don't have a garden, then do splurge and buy a bunch of all the herbs. And get the extra large shrimp so they can grill longer and get maximum caramelization.

1 ½ teaspoons kosher salt
½ teaspoon lemon zest
3 cloves garlic, thinly sliced
3 tablespoons chopped fresh basil leaves
3 tablespoons chopped fresh flat-leaf parsley
1 tablespoon chopped fresh oregano leaves
1 tablespoon chopped fresh lemon thyme leaves
4 tablespoons olive oil, divided, or as needed
2 pounds extra large shrimp (16-20), peeled and deveined, tail left on
skewers
1 tablespoon olive oil
½ lemon, juiced
½ teaspoon red pepper flakes
1 pinch cayenne pepper
salt and ground black pepper to taste
1 lemon, cut into wedges

Steps:

  • Place salt, lemon zest, and 3 cloves garlic in bowl of a mortar and pestle. Pound with the pestle until mixture begins to form a paste, about 2 minutes. Add chopped basil, parsley, oregano, and thyme and pound with pestle until mixture begin to come together, about 5 minutes.
  • Drizzle about 1 tablespoon of the olive oil into herb mixture. Grind together until mixture begins to form a sauce for marinating, about 1 minute. Pour in the remaining 3 tablespoons olive oil. Stir mixture with a spoon until mixture is thoroughly combined, adding additional olive oil as needed. Mixture should be fairly thick but pourable.
  • Place shrimp in a large bowl and mix in about 2/3 of the sauce, reserving 1/3 for serving. Stir until shrimp are evenly coated with the sauce, about 2 minutes. Transfer shrimp to a resealable plastic bag. Refrigerate 2 to 3 hours. Cover and refrigerate remaining sauce.
  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Thread shrimp onto skewers (pierce each twice, once through large part of shrimp, once through small part). Place skewers on hot grill. Cook on each side until shrimp are bright pink and opaque and exterior is beginning to caramelize, 2 to 3 minutes per side. Transfer skewers to serving platter.
  • Pour remaining sauce into mixing bowl. Whisk in 1 tablespoon olive oil, lemon juice, red pepper flakes, cayenne pepper, salt and black pepper. Spoon sauce over shrimp. Serve with lemon wedges.

2 1/4 lbs jumbo shrimp, unpeeled
1/2 cup honeyed lemon-dijon vinaigrette, divided
1/4 teaspoon crushed red pepper flakes (or more if desired)
1/4 teaspoon salt
1/4 teaspoon black pepper, coarsely ground
lemon wedge

Steps:

  • Peel shrimp, leaving the tails intact. Starting at tail end, butterfly each shrimp, cutting to, but not through, underside of shrimp.
  • Combine shrimp, 6 tablespoons of Honeyed Lemon-Dijon Vinaigrette, and red pepper in a large zip-top plastic bag. Seal and marinate in refrigerator 15 minutes, turning bag occasionally.
  • Prepare grill to medium-high heat.
  • Remove shrimp from marinade; discard marinade.
  • Sprinkle shrimp evenly with salt and black pepper. Place the shrimp, cut sides down, on grill rack coated with cooking spray; grill 2 minutes on each side or until done, basting frequently with the rest of the marinade.
  • Stove Method: Coat a large skillet with cooking spray. Add a bit of oil (1 tsp) and heat. Add prawns, with marinade to the skillet and cook until prawns are pink: about 4 - 5 minutes (don't overcook or they will be tough).

1 tablespoon paprika
1 tablespoon garlic powder
1 tablespoon garlic salt
1/2 tablespoon black pepper
1 tablespoon italian seasoning
2 tablespoons brown sugar
if you like it hot Optional - 1 to 2 teaspoons of ground up crushed red pepper flakes
2 tablespoons olive oil (give or take)
2 lbs medium shrimp, peeled and deveined (U-25s ( I buy them peeled and deveined)

Steps:

  • In a 1 gal plastic food bag place shrimp and olive oil, toss to coat, sprinkle enough rub to coat the shrimp.
  • The bag should look dark red.
  • Refrigerate for 1-4 hrs, the longer you wait the hotter they'll be.
  • Light the grill and while it's heating place shrimp on skewers.
  • When coals are very hot, clean the area that the shrimp will be on and rub with a bit of canola oil on a rag (use a mitt please).
  • Immediately place shrimp on greased grill for 2-3 minutes, turn and cook an additional 2-3 minutes.
  • Remove from skewers and serve hot.
  • No dipping sauce required.
  • This rub works well on chicken wings too!

While a lexicographer might say that "jumbo shrimp" is an oxymoron, a chef knows it means something specific: Shrimp are marketed according to size, with different classifications depending on how many shrimp will constitute a pound. Jumbo shrimp are 11 to 15 per pound, and extra-large are 16 to 20 per pound; at the other end of the scale, miniature are 100 per pound, and small are 36 to 45\. In general, the larger the shrimp, the more expensive they are; but if you're peeling them or handling them in any way, the larger they are, the less work you have to do. A trade-off, like many things.

1 pound jumbo shrimp

Steps:

  • Brush 1 teaspoon of oil over a barbecue rack or a ridged grill pan. Prepare a charcoal or gas grill for high heat or preheat the grill pan over a high flame. Using scissors, cut the shell down the center of the back of the shrimp. Brush the shrimp with the remaining 2 tablespoons of oil and sprinkle with salt. 2 lbs jumbo shrimp, in shells
1/4 cup chili sauce (Heinz)
1/4 cup melted butter
1/4 cup orange juice
1/3 cup dark rum
2 tablespoons fresh chives, chopped
2 tablespoons coriander, chopped
2 teaspoons mustard
1/2 teaspoon vanilla
2 garlic cloves, minced

Steps:

  • Whisk the chili sauce with the butter and orange juice in a saucepan set over medium heat. Bring to a boil. Stir in the rum, half of each the chives, and the coriander, mustard, vanilla and garlic. Remove from the heat and cool completely.
  • Slice lengthwise through the top of each shrimp shell and almost all the way through the meat of each shrimp so that they can lie flat. Toss the shrimp with half the sauce mixture. Set aside.
  • Preheat the grill to medium-high and grease lightly. Grill shrimp for 3-5 minutes per side or until cooked through. Baste shrimp often with the reserved sauce. Gently toss hot, cooked shrimp, with any remaining sauce mixture. Sprinkle with remaining chives and coriander.
  • TWISTS:.
  • TWIST 1: For a delicious surf and turf meal, serve the shrimp alongside grilled steaks brushed eith BBQ sauce.
  • TWIST 2: For another tropical taste experience, use pineapple juice instead of orange juice.
  • TWIST 3: For a flavorful alcohol-free version, omit the rum and substitute for more chili sauce.
