GRILLED ITALIAN SAUSAGE WITH PEPPERS AND ONIONS
Italian sausage, bell peppers, and onions made easy on the grill. You can also serve the sausage in hot dog buns and finely chop the veggies once grilled as a "relish". I like to add a squirt of mustard when I serve them this way.

PAN GRILLED CHICKEN IN PEPERONATA
[Peh-peh-roh-NAH-tah] is an incredibly flavorful dish of stewed peppers, tomatoes and onions cooked in olive oil. Succulent, tender, boneless-skinless chicken breast is pre-grilled to retain a nice smokey flavor in this preparation yet allows it to marry with the rich tasting sauce.

Steps:
- In a large hot pan, saute smashed garlic and chili pepper in 4-5 tablespoons of olive oil for 2 minutes. Add chopped peppers and onions and saute for 10 minutes on high heat. Now add tomatoes and their juices, salt, pepper and sugar, cover with lid and cook for 20 minutes on medium heat. For chicken, drizzle chicken breasts in olive oil and sprinkle with smoked sea salt ( I use smoked Fleur de sel ), black pepper and some dry oregano. Place in a very hot grill pan and cook for 2 minutes per side. Once chicken is grilled, add the breasts into the peperonata, cover with lid and place into a pre heated 350*F oven for 20 minutes. As a finishing touch, I remove the lid and set under the broiler for 5 minutes to give a nice caramelized coating to the chicken and sauce. I like to plate the chicken and peperonata over a slice of Italian bread that has been rubbed with garlic and olive oil and toasted until golden brown.

GRILLED SAUSAGE WITH PEPPERONATTA
We took a cooking class and learned this recipe. We LOVE it! Roasting the peppers gives it a rustic, slightly smoky layer of flavor. We serve it on top of Allrecipes' 'Pasta with Fennel and Onions,' for an Italian family feast!

Steps:
- Preheat grill for medium heat and lightly oil the grate.
- Roast red, yellow, and orange bell peppers on the preheated grill until blackened on all sides, about 15 minutes. Turn peppers as they blacken. Transfer peppers to a large resealable plastic bag and close the bag; set peppers aside until cool. Strip off and discard the skins, remove stems and seeds, and dice the peppers.
- Cook sausages on the grill until browned and no longer pink inside, about 8 minutes per side. An instant-read meat thermometer inserted into the center of a sausage should read at least 160 degrees F (70 degrees C).
- Heat olive oil in a large skillet over medium heat and cook onion until tender, stirring occasionally, about 5 minutes. Add diced peppers to the onion mixture; cook and stir until heated through. Slice cooked sausages on the diagonal into bite-size pieces and stir into the onion and peppers.
- Raise heat to medium-high and stir in red wine and oregano. Bring to a boil and cook, stirring often, until the red wine has reduced by one third, about 10 minutes. Season to taste with salt and black pepper.

FESTIVAL-STYLE GRILLED ITALIAN SAUSAGE SANDWICHES
These delicious grilled sausage sandwiches are my attempt to duplicate the ones I ate when I was growing up and attended Italian street festivals in the North End of Boston. They come together really quickly, and make a great summer lunch. Choose hot or mild sausages as you prefer.

- While the grill is preheating toss sweet peppers with one tablespoon of olive oil, salt, and pepper.
- Reduce the heat to medium-low on the grill. Place sausage on one side of the grill and peppers on the other side of the grill. Grill for 20 minutes or until the internal temperature of the sausage reaches 165 degrees. *You'll want to turn the sausage and peppers two-to-three times during the cooking process to prevent burning. If peppers begin to char remove from heat.

- Prep the veggies: Place the sliced peppers & onions in a medium bowl, then toss with the olive oil and ½ teaspoon each salt & ground black pepper. Set aside.
- Grill the sausage: Place the sausages directly on the grill grates and grill for 5-7 minutes per side, or until cooked through. Once done cooking, transfer the sausage to a dish or plate and tent in foil to keep them warm. You could also place the sausages on a rack in your grill to keep them warm over indirect heat as the veggies cook.
- Grill the veggies: Meanwhile, as the sausage cooks, grill the veggies. Place the veggies in a grill basket over medium heat, and grill for 7-10 minutes, tossing them often, until they are softened and have a nice char.
