1 sweet onion, cut into wedges
1 medium zucchini, sliced in 1/2 lengthwise
1 red bell pepper, cheeks removed
1/2 pound button mushrooms, stemmed
2 1/2 tablespoons olive oil, divided
Kosher salt and freshly ground black pepper
1/2 pint grape tomatoes, washed and dried
2 sweet or hot Italian sausages, thinly sliced or casings removed
1/4 cup white wine
12 ounces whole-grain penne, cooked according to package instructions, 1/2 cup pasta water reserved
Freshly grated Parmesan, for garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • In a bowl, toss all the vegetables, except the tomatoes, with 1 1/2 tablespoons oil. Season with salt and pepper, to taste. Arrange on a baking sheet and roast, until caramelized, about 30 minutes, turning vegetables halfway through the cooking time. In a small bowl, add the tomatoes and the remaining olive oil and toss to coat. Season with salt and pepper, to taste, and add to the baking sheet, at the halfway point of cooking, to caramelize.
  • Meanwhile, in a large skillet over medium heat, add the sausage and saute until cooked through. Turn up the heat and deglaze with white wine. Once the vegetables are cooked, cool slightly, then coarsely chop. Add the vegetables and any pan juices to the sausage in the skillet. Toss in the cooked penne, adding reserved pasta water, if needed, to moisten. Season with salt and pepper, to taste, and serve in bowls topped with Parmesan.

Steps:

  • Heat coals or gas grill for direct heat. Grill sausages 4 to 6 inches from medium heat 15 to 20 minutes, turning frequently, until no longer pink in center.
  • Brush bell pepper pieces with about 2 tablespoons of the dressing. Add to grill for last 10 minutes of cooking time, turning frequently, until crisp-tender.
  • Meanwhile, cook and drain pasta as directed on package.
  • Cut sausages into 1/2-inch slices; cut bell peppers into 1 1/2-inch pieces. Toss pasta, sausages, bell peppers, tomatoes and remaining dressing. Sprinkle with basil.

1 1/2 pounds cherry tomatoes
3 bell peppers (any color)
2 medium red onions
2 pound zucchini (4 medium), trimmed and halved lengthwise
4 garlic cloves, peeled
1 1/4 pound sweet or hot Italian sausages
3 tablespoons Sherry vinegar
1/2 teaspoon sugar
1 pound ziti
1/2 cup chopped fresh flat-leaf parsley
1/3 cup chopped fresh basil
1 cup crumbled or thinly shaved ricotta salata or French feta
Special Equipment
5 (12-inch) wooden skewers (soaked in water 30 minutes)

Steps:

  • Stir 1 teaspoon each of salt and pepper into 6 tablespoons oil.
  • Toss tomatoes with 1 tablespoon seasoned oil, then thouread onto skewers.
  • Trim off bottoms and tops of bell peppers, then halve peppers lengthwise.
  • Quarter onions lengthwise, leaving root ends intact. Brush onions, peppers, and zucchini generously with some seasoned oil.
  • Put garlic on a double layer of foil and drizzle with some seasoned oil, then wrap tightly in foil, twisting to seal.
  • Put vegetables on a large tray.
  • Brush sausages lightly with some seasoned oil and put on a plate.
  • Prepare grill for direct-heat cooking over medium-hot charcoal (medium-high heat for gas). Grill vegetables, garlic, and sausages, in batches if necessary, covered only if using a gas grill, turning occasionally (frequently for garlic), until tomatoes are charred and slightly wilted, 3 to 5 minutesutes; bell peppers are blackened in spots, 8 to 10 minutesutes; onions and zucchini are tender, 8 to 12 minutesutes; garlic is softened and caramelized in spots, about 10 minutesutes; sausages are browned and cooked thourough, 12 to 15 minutesutes. Transfer as cooked to a platter (or platters) and keep warm, covered.
  • Peel peppers. Coarsely chop 2 bell pepper halves and 2 zucchini halves and transfer to a blender. Add garlic, 4 pieces of onion, vinegar, sugar, 3/4 teaspoon salt, 1/2 teaspoon pepper, half of tomatoes, and remaining 1/4 cup oil and purée until as smooth as possible.
  • Transfer remaining tomatoes to a large serving bowl and keep warm, covered. Chop remaining peppers, onion, and zucchini and add to tomatoes.
  • Meanwhile, cook ziti in a pasta pot of boiling salted water (3 tablespoons salt for 6 quarts water) until al dente. Drain in a colander, then add to grilled vegetables and toss with sauce. Sprinkle with herbs and cheese, then serve with sausages.

1/4 cup raisins

  • In a small non-stick skillet, toast almonds over medium heat for 1-2 minutes.

Spaghetti sauce is typically about a pound of browned meat bound by a scant amount of marinara and served over pasta. Here we reverse the ratio, letting hot Italian turkey sausage be the flavor agent while adding plenty of colorful vegetables like yellow squash, broccoli florets, and mushrooms. Canned whole peeled tomatoes are less watery than diced, but have a little more texture than crushed. Break the tomatoes apart with a spoon in the pan. Tomato paste will add a robust tomato flavor; look for the kind sold in tubes so you can use as little or as much as you need.
