- Preheat oven to 350 degrees F (175 degrees C).
- Spray a large piece of aluminum foil with nonstick cooking spray. Layer the zucchini, onion, pepper, and olives onto the center. Sprinkle with feta cheese, and drizzle with vinaigrette. Fold into a packet and seal the edges.
- Bake in preheated oven until vegetables are tender, about 30 minutes. Open the foil packet, turn the oven onto Broil, and broil until the feta lightly browns. Add the grape tomatoes and serve.

- Mix together the grated Parmesan, thyme, and spices in a medium bowl.
- Prepare a large baking sheet that's topped with a wire baking rack. Lightly brush the wire baking rack with extra virgin olive oil (or use a healthy cooking spray.) Place the zucchini spears, skin-side down, on the baking rack in a single layer. Brush each one with extra virgin olive oil.
- Sprinkle the herb and cheese topping on each zucchini stick so they are all lightly coated.
- Bake in the heated oven for 15 to 20 minutes, or until tender. For a crispy golden topping, broil for 2 to 3 minutes more. Watch it carefully so the zucchini does not burn.

- Preheat the oven to 375 degrees F. Put a roasting pan in the oven to preheat.
- Cut the zucchini in half lengthwise, then cut across into thirds. Put the zucchini into a bowl and add the olive oil, lemon juice, garlic, shallots, parsley and oregano, and season with salt and pepper, to taste. Toss to combine.
- Carefully remove the hot roasting pan from the oven and add the zucchini mixture. Put the pan to the oven and roast for 3 minutes. Remove it, and stir in the olives and preserved lemon. Return the pan to the oven and cook for about 3 to 4 minutes, don't let the zucchini get too soft. Transfer to a serving bowl and serve immediately.

- Learning to make grilled zucchini in the oven is very simple and quick to do. The first thing we will do is wash the vegetables to remove any toxic residues that may be impregnated on their peel. When ready cut them into thick slices to prevent them from breaking or burning whilst cooking.The best way is to cut vertically as this will make the pieces look bigger but you can also cut them into slices, the result is the same.
- Once cut, we must extend a piece of kitchen paper on a kitchen surface for the courgette to rest on. This will ensure the moisture is fully absorbed by the paper.
