This is a recipe that I got from my oldest son when he was a student at Purdue University in their Hospitality and Tourism program. This is the flank steak recipe that is served in the restaurant at the Student Union. Marinating time not included. This also works well on other cuts of steak.

1/4 cup fresh lime juice
1/4 cup gluten-free soy sauce
2 tablespoons water
1 teaspoon garlic, minced
1/2 teaspoon sugar
1/4 teaspoon salt
1 -2 lb flank steak

Steps:

  • Combine all ingredients except steak in a small bowl.
  • Mix well to combine.
  • Place flank steak in a large zip top bag.
  • Add marinade ingredients.
  • Refrigerate 8 hours or overnight.
  • When ready to cook, remove from marinade and discard marinade.
  • Grill 5 minutes per side.
  • Allow to rest 5-10 minutes after grilling before slicing.

⅓ cup Kikkoman Less Sodium Soy Sauce
4 medium cloves garlic, minced or pressed through a garlic press

2 pounds flank steak, uncut
1 loaf flat rustic bread

Steps:

  • Pulse all marinade ingredients in blender until a rough paste, scraping down blender jar as needed.
  • Combine marinade and meat in gallon-size zipper-lock bag; press out as much air as possible and seal bag. Refrigerate 1 hour, flipping bag after 30 minutes to ensure that meat marinates evenly.
  • Drain and discard marinade. Grill steak, over medium high heat for 7-9 minutes on each side or until meat reaches desired doneness. Let rest for 10 minutes before slicing.
  • Transfer steaks to cutting board; tent loosely with foil and let rest 5 minutes. Slice steak very thinly on the bias. Split Loaf, brush a bit of oil on the inside, and grill for about 1 minute until warm and slightly toasted. Mix together the Kikkoman Sriracha Sauce and mayonnaise, and smear onto the toasted bread. Compose your sandwich with sliced steak, arugula, and brie.

There are some steaks that need nothing more than a little salt and pepper to bring out their beefy goodness. Flank steak is not one of them. This bold marinade is just the sort of seasoning the brawny cut begs for: lime juice and zest add brightness, brown sugar sweetness, and jalapeño and sriracha a complex heat. Just whiz it all together in a food processor and slather it on the meat. Marinate overnight (or 20 minutes if that's all the time you have) before tossing it on the grill. Lastly, always make more flank steak that you think you want. Leftovers are the best part.

3 Tbsp. extra-virgin olive oil, divided, plus more for grill
1 1/2 lb. flank steak
Kosher salt, freshly ground pepper
1 bunch scallions, trimmed
1/4 cup mirin (sweet Japanese rice wine)
1/4 cup soy sauce
2 Tbsp. light brown sugar
1 Tbsp. distilled white vinegar
1 Tbsp. Sriracha

Steps:

  • Prepare a grill for medium-high heat; lightly oil grate. Pat steak dry and place on a rimmed baking sheet. Lightly score both sides of steak with the tip of a paring knife, making shallow parallel cuts (no deeper than an 1/8") about 1" apart and running across the grain of the meat (this will prevent the steak from curling as it cooks). Season generously all over with salt and pepper; let sit at room temperature at least 30 minutes and up to 1 hour.
  • Meanwhile, toss scallions on another baking sheet with 2 Tbsp. olive oil to coat; season with salt and pepper.
  • Whisk mirin, soy sauce, brown sugar, vinegar, Sriracha, and sesame oil in a medium bowl until sugar is dissolved; set marinade aside.
  • Pat steak dry again (the salt will have drawn out more moisture) and rub with remaining 1 Tbsp. olive oil. Grill scallions, turning often, until tender and charred in spots, about 1 minute. Return to baking sheet. Grill steak, turning every 2 minutes or so, until medium-rare, 6-8 minutes. Transfer to a cutting board and let rest 10-15 minutes.
  • Thinly slice steak crosswise and arrange on a rimmed platter; drizzle all of the juices that have collected on the cutting board over. Arrange grilled scallions on top of the steak, then pour reserved marinade over. Let sit at least 15 minutes and up to 1 hour before serving. To serve, sprinkle with sesame seeds as desired.

1 pound piece skirt steak, cut into 3 equal pieces
3 cloves garlic, minced
1/2 cup low-sodium soy sauce
2 tablespoons packed light brown sugar
2 tablespoons rice wine vinegar
2 tablespoons grated fresh ginger
2 teaspoon sesame oil
1 teaspoon red chili flakes
6 scallions, sliced, whites and greens kept separate
3 tablespoons olive oil
2 1/2 tablespoons unsalted butter
3 heads baby bok choy, halved and rinsed
4 ounces shiitake mushrooms, thinly sliced
1 cup mayonnaise
2 tablespoons sriracha

Steps:

  • Put the skirt steak into a 1-gallon resealable plastic bag. Whisk together the garlic, soy sauce, brown sugar, rice wine vinegar, ginger, sesame oil, chili flakes and scallion whites in a small bowl. Pour two-thirds of the marinade over the steak, reserving the remaining marinade. Seal the bag, removing as much air as possible. Set aside and let marinate for at least 10 minutes.
  • Meanwhile, whisk together the mayonnaise and sriracha in another small bowl.
  • Heat 2 tablespoons each of olive oil and butter in a large cast iron skillet over medium-high heat. Remove the steak from the marinade and sear on each side until cooked to the desired temperature, 3 to 4 minutes per side for medium rare. Remove the steak to a cutting board to rest while you cook the vegetables.
  • Add the remaining 1 tablespoon olive oil and 1/2 tablespoon butter to the skillet. Add the bok choy, cut side-down, and sprinkle the mushrooms around the skillet. Allow to brown and cook for 2 to 3 minutes. Flip the bok choy, whisk the reserved marinade to combine and pour into the skillet and let reduce slightly. Remove from the heat.
  • Slice the steak against the grain. Transfer the bok choy to a platter with any sauce that is in the skillet, top with the shiitake mushrooms, arrange the sliced steak along the edges, and garnish with the reserved scallion greens. Serve with the sriracha mayo.

Flank steaks, sometimes called London Broil steaks, are cheaper because they have very little fat, and they can be chewy if you overcook them or cut them improperly. This is the only recipe you'll ever need in order to get them cooked perfectly on the grill.

1 flank steak ((approximately 4 pounds))
1/2 tablespoon vegetable oil
1 teaspoon Morton Coarse Kosher Salt

Steps:

  • Prep. An hour or two before cooking, moisten the surface of the meat, salt it, and place it in the fridge. This technique is called a dry brine and it does a great job of amplifying flavor because the salt is sucked down deep into the meat.
  • Flank steak is usually wedge shaped. One end is a lot thicker than the other. When you cook it hot and fast one side is either overcooked or undercooked. So here's how to outsmart the steak. If your steak is more than 1/4" thicker at one end than the other, cut it in half and start the thick half first. This is important: Make a mental note of which way the grain of the fibers is running. You can even put a toothpick in there as a pointer.
  • Lightly coat the meat with oil to help darken the surface and keep it from sticking.
  • Fire up. Start a 2-zone fire and get the hot zone as hot as possible. Flank steak is best over charcoal or the sear burner of a gas grill. If you are using charcoal, here's a trick: Raise the coals so they are about 2" below the cooking grate. On a Weber Kettle, put a couple of bricks under the charcoal grate as shown here. We want high heat so we can take the surface to dark brown and crusty, almost but not quite charred.
  • Cook. Put the thick half of the flank steak on first, about 2 minutes ahead of the thin half. Leave the lid off. Cook about 4 minutes on the first side or until it gets dark brown and from the side you can see the color has changed about 1/4" up the side. Cook on the other side about 3 minutes. The exact time will depend on your grill. If the skinny section finishes too fast you can move it to the indirect zone.I like mine rare to medium rare, at about 125°F, which is where it is when the juices start to come through the surface. Use an instant read meat thermometer to be sure you get it right.
  • Slice. Remove the flank steak from the grill and set on a cutting board. The way you carve the meat is crucial to making it easy to chew. Flank steak tends to be tough, but if you cut it thin and across the grain, it is easier to chew. Click here to learn more about the proper way to carve flank steak. Place the meat on a cutting board. Hold a thin blade at a 45 degree angle and cut 1/8" slices across the grain.If you slice with the grain it will be much too chewy. On a flank steak, the first cut will be a little overcooked. Not to worry, the center cuts will be just fine.
  • Serve. Plate the meat, laying it out in a fan. If wanted, top it with a little chimichurri sauce but be careful not to add too much as you want to meat taste to shine through. It can also be served over salad.

1 tablespoon Dijon mustard
1/4 cup dry red wine
1/4 cup pure olive oil
4 large garlic cloves

1/2 cup mayonnaise

salt & freshly ground black pepper
8 rosemary focaccia rolls or 8 other rolls, split
1/2 lb sliced imported provolone cheese or 1/2 lb Fontina cheese

Steps:

  • Brush the flank steak on both sides with the mustard. Put the steak in a sturdy resealable plastic bag and add the wine. Seal the bag, pressing out any air, and refrigerate overnight. Drain the steak, pat dry and bring to room temperature before grilling.
  • Meanwhile, in a small saucepan, combine the olive oil and garlic and cook over low heat until the garlic is golden and soft, about 15 minutes. Using a slotted spoon, transfer the garlic to a small bowl; reserve the garlic oil. Add the thyme to the garlic and mash to a paste. Stir in the mayonnaise and lemon juice and season with salt and pepper.
  • Light a charcoal grill or preheat a cast iron grill pan. Brush the steak with the reserved garlic oil, season liberally with salt and pepper and grill over moderate heat for about 15 minutes, turning once, for medium-rare meat. Transfer the steak to a cutting board to rest for 5 minutes. Thinly slice the meat across the grain on the diagonal.
  • Spread the garlic mayonnaise on the rolls and top with the flank steak, cheese and lettuce. Cut the sandwiches in half and serve.

  • Take softened butter and place in a medium bowl.
  • Stir in the cilantro, lime juice, lime zest, green onion, and garlic paste. Mash with a fork or spoon to fully combine.
  • Place butter over plastic wrap and form into a log. Wrap and place in fridge for 1 hour or until firm.
  • Brush a grill or grill pan with canola oil and heat to high heat. (You want the grill HOT)
  • In a small bowl, combine salt and pepper, garlic paste, olive oil and mustard powder. Stir to combine and form a paste. Rub both sides of steak with the paste.

  • Remove from heat.
  • Cut into slices, against the grain.
  • Before separating, slice butter and allow to melt over the steak.
