1-ounce coriander, dried and ground
1/2-ounce lemon pepper
1/4-ounce arbol chili, dried and ground
1/4-ounce allspice
1/4-ounce cinnamon
1/4-ounce salt
1/4-ounce achiote paste
1 egg yolk*
1 teaspoon water
3 teaspoons Sherry wine vinegar
1 tablespoon lemon juice, fresh
2/3 cup olive oil
2 teaspoons mint leaves
1 tablespoon onion, minced
2/3 teaspoon lemon pepper
1/4-ounce chives
4 (7-ounce) Sea Bass fillets
Salt
1/2 habanero pepper, dried
1/3 ancho chili pepper, dried
1/3 papaya, chopped
1/3 mango, chopped
1/2 Roma tomato, diced
3 teaspoons Sherry wine vinegar
1 teaspoon cilantro, finely chopped
1 teaspoon mint, finely chopped
1 tablespoon onion, diced
1/2 teaspoon garlic, minced
1/3 teaspoon steak salt blend

Steps:

  • For the Arbol Chili Rub: In a dry sauce pot, heat and stir coriander, lemon pepper, arbol chili, allspice, cinnamon, salt, and achiote paste until it just starts to smoke and flavors are released. Transfer to a blender or food processor and grind until it is powder. Remainder may be stored in an airtight container.
  • For the Lemon Mint Vinaigrette: In a mixing bowl, whip egg yolk and water. Place in a blender, add 1/3 of the vinegar and lemon juice. On high speed, drizzle in approx. 2/3 of the olive oil. Add remainder of the vinegar and lemon juice and drizzle in the rest of the olive oil, add mint, onions, lemon pepper, and chives. Refrigerate immediately.
  • Rub fillets with Arbol Chili Rub and salt and grill to 130 degrees (medium). Drizzle plate with Lemon Mint Vinaigrette and top with Habanero Salsa (recipe follows). Serve with rice of your choice.
  • Soak the habaneros and anchos in hot water to soften. De-seed (use gloves) and remove stems before they are diced. Combine remaining ingredients in a mixing bowl. Transfer to a storage container and refrigerate.

This is a truly flavorful dish with a lovely plate presentation. My mom and I experimented and made this for lunch. It came out so good I promptly went to the fish market so I could make it for my dinner guests that night. YUMMY!

¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon paprika
lemon pepper to taste
sea salt to taste
2 pounds sea bass
3 tablespoons butter
2 large cloves garlic, chopped
1 tablespoon chopped Italian flat leaf parsley
1 ½ tablespoons extra virgin olive oil

Steps:

  • Preheat grill for high heat.
  • In a small bowl, stir together the garlic powder, onion powder, paprika, lemon pepper, and sea salt. Sprinkle seasonings onto the fish.
  • In a small saucepan over medium heat, melt the butter with the garlic and parsley. Remove from heat when the butter has melted, and set aside.
  • Lightly oil grill grate. Grill fish for 7 minutes, then turn and drizzle with butter. Continue cooking for 7 minutes, or until easily flaked with a fork. Drizzle with olive oil before serving.

1 clove garlic, finely minced, or more to taste
1 lime, zested
2 tablespoons seasoned rice vinegar
2 tablespoons Asian fish sauce
2 tablespoons lime juice
1 tablespoon Asian chile pepper sauce (such as sambal oelek)
1 teaspoon Asian (toasted) sesame oil
4 (4 ounce) fillets sea bass
2 teaspoons vegetable oil, or as needed
salt to taste
1 tablespoon coarsely chopped cilantro leaves, or to taste

Steps:

  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Whisk garlic, lime zest, rice vinegar, fish sauce, lime juice, chile pepper sauce, and sesame oil in a glass bowl.
  • Brush both sides of sea bass fillets with vegetable oil and sprinkle lightly with salt.
  • Cook on the preheated grill until fish is opaque, shows good grill marks, and springs back when pressed lightly, 3 to 4 minutes per side. Transfer fillets to a serving platter.
  • Whisk dressing again; taste and and adjust seasoning. Drizzle dressing over warm fish. Sprinkle fillets with cilantro leaves.

1 lb chilean sea bass fillet, bones removed, cut into serving pieces
3/4 cup orange juice
3 tablespoons tomato paste
2 tablespoons vegetable oil
2 tablespoons vinegar
1 tablespoon brown sugar or 1 tablespoon honey
2 garlic cloves (minced or pressed)
1 teaspoon grated orange zest
1 teaspoon ground ginger
1/2 teaspoon hot red pepper flakes

Steps:

  • Rinse the Chilean sea bass with cold water and pat dry with paper towels.
  • Set the fish in a shallow dish.
  • Stir together the remaining ingredients in a small bowl until well combined, then pour over the fish, turning the fish so that it is evenly coated.
  • Cover and marinate in the refrigerator for 1 to 3 hours.
  • Preheat a charcoal grill or the broiler.
  • Grill or broil the fish about 4 inches from the heat until well browned on one side, 3 to 5 minutes; brush with more marinade and cook on the other side until the fish is no longer opaque in the center, about 5 minutes longer.
  • Note: If cooking the Chilean sea bass on a charcoal grill, be sure that the fillet pieces are at least 1 1/2 inches thick to ensure that the fish won't fall apart when it is cooked.

2 teaspoons water
1 teaspoon prepared Chinese-style hot mustard or Dijon mustard
1/3 cup white miso (fermented soybean paste)*
3 tablespoons rice vinegar
2 tablespoons mirin (sweet Japanese rice wine)**
4 teaspoons sugar
1 teaspoon soy sauce
4 5- to 6-ounce sea bass fillets
8 green onions, trimmed
Olive oil
Toasted sesame seeds

Steps:

  • Whisk water and mustard in small bowl until smooth. Combine miso, vinegar, mirin, sugar and soy sauce in small saucepan. Stir over medium heat until smooth, about 3 minutes. Whisk in mustard mixture. (Can be made 1 day ahead. Rewarm over low heat before using.)
  • Prepare barbecue (medium-high heat). Brush fish and green onions with oil. Sprinkle both with salt and pepper. Grill fish until opaque in center, about 4 minutes per side. Grill onions until beginning to brown, about 3 minutes per side. Transfer fish and onions to 4 plates. Spread sauce atop fish. Sprinkle sesame seeds over sauce and serve.

1 1/3 lb Chilean Sea Bass (about 1/3 pound per person), cut into individual serving pieces, skin and bones removed
1 cup Teriyaki Sauce
1/2 cup Dark Honey
1/4 cup Olive Oil

Steps:

  • Whisk Teriyaki, honey and olive oil together until combined. Place fish in zip lock bag. Add the marinade and marinate, refrigerated for at least 4 hours and up to 24 hours which makes the flavoring wonderful. Remove fish from fridge, keeping bag sealed about 15 to 20 minutes before grilling. Heat grill to medium low. Spray or coat grill grates generously with olive oil to prevent fish from sticking. Spraying the spatula with olive oil also helps prevent the fish from falling apart when turning. Grill fish about 6 minutes per inch of thickness, turning once until a table knife inserts across the grain without resistance. Fish should be oily and opaque. I turn up the heat a bit near the end to caramelize some of the residual marinade. Serve immediately. Alternative preparation: vacuum seal the fish and marinade (or seal in the ziplock bag using the water method of excluding air from the ziplock bag. Marinate for time as above. Sous vide at 114.8 degrees F until it reaches an internal temperature of 113 (about 35 min. for ¾ inch thick pieces). Can be held at 113 for about 15 minutes (I haven't tried more). Sear/carmelize briefly with blow torch (use MAPP gas one for higher heat) or sear to caramelize in a lightly oiled hot pan (use canola oil). Serve immediately on warm plate (at 113 degrees, fish is wonderfully textured, but not very warm, so serve right as it is ready to be eaten). Enjoy!

Steps:

  • Preheat barbecue grill.
  • Combine all seasonings in small bowl and mix well.
  • Melt butter in small saucepan over medium heat and pour into pie plate.
  • Dip sea bass into melted butter, evenly coating both sides.
  • Sprinkle both sides of sea bass with seasoning mixture.
  • Place on grill and cook covered for approximately 6 to 8 minutes or until it is blackened and flakes easily.
  • Turn halfway through grilling time.
  • Serve with lemon and garnish with dill sprigs.
