1 tablespoon sesame seeds (toasted)
2 teaspoons fresh grated ginger
2 tablespoons honey
2 tablespoons reduced-sodium soy sauce
3-4 skinless (boneless chicken breasts)
Vegetable cooking spray for the grill (or vegetable oil)
Thin sliced green onions (for garnish)

Steps:

  • Toast the sesame seeds, stirring frequently, in a small non-stick skillet over medium heat until lightly browned,
  • Combine the sesame seeds, ginger, honey and soy sauce in a small bowl. Whisk until combined.
  • Place the chicken in a heavy-duty zip lock bag and flatten the breasts using a meat mallet or rolling pin. Pound each to an even thickness starting at the biggest end.
  • Lightly spray or oil the grill to prevent sticking.
  • Preheat grill on medium-high. Cook the breasts about 8 minutes on each side or until clear juices are visible. Baste the chicken frequently with the soy mixture, using it all or discarding any remaining sauce.
  • Allow the chicken to rest 5 minutes before serving. Garnish this thin sliced green onions if desired.

0.333 cup plum sauce or sweet-sour sauce
0.25 cup water
3 tablespoon hoisin sauce
1.5 teaspoon sesame seed (toasted, if desired)
1 clove garlic, minced
1 teaspoon grated fresh ginger or 1/4 teaspoon ground ginger
0.25 - 0.5 teaspoon Oriental chili sauce or several dashes bottled hot pepper sauce
6 small skinless, boneless chicken breast halves and/or thighs (about 1-1/2 pounds total)

Steps:

  • For sauce, in a small saucepan combine all of the ingredients except the chicken. Bring to boiling over medium heat, stirring frequently; reduce heat. Simmer, covered, for 3 minutes. Set aside.
  • Grill chicken on the lightly greased rack of an uncovered grill directly over medium heat for 12 to 15 minutes or until tender and no longer pink, turning once and brushing with sauce once or twice during the last 5 minutes of grilling.
  • In a small saucepan heat the remaining sauce until bubbly; pass with chicken. Makes 6 servings.

1 cup chopped scallions (from 1 to 2 bunches)
1/4 cup vegetable oil
2 tablespoons rice vinegar
1 tablespoon grated fresh ginger
1 tablespoon low-sodium soy sauce
2 teaspoons toasted sesame oil
1 clove garlic, grated
2 tablespoons vegetable oil
2 tablespoons low-sodium soy sauce
2 tablespoons rice vinegar
1 teaspoon sambal oelek
5 to 6 boneless, skinless chicken thighs
Kosher salt and freshly ground black pepper

Steps:

  • To make the scallion sauce: Add the scallions, vegetable oil, vinegar, ginger, soy sauce, sesame oil and garlic to a small bowl and stir to combine. Add 2 tablespoons of the ginger scallion sauce to a large bowl and keep the rest refrigerated until ready to serve the chicken.
  • For the chicken thighs: To the bowl with the 2 tablespoons reserved ginger scallion sauce, add the oil, soy sauce, vinegar and sambal oelek. Whisk to combine, then add the chicken thighs. Stir to coat the chicken in the marinade. Let the chicken marinate at room temperature for 30 minutes.
  • Preheat a grill pan over medium-high heat. Remove the chicken to a paper towel-lined baking sheet, smooth-side up. Sprinkle the smooth side with 1/2 teaspoon salt and 1/2 teaspoon pepper. Transfer the chicken to the heated grill pan, seasoning-side down. Sprinkle the underside with 1/2 teaspoon salt and 1/4 teaspoon pepper. Grill for 10 minutes, rotating the chicken once. Flip the chicken and cook until it is 165 degrees F all the way through and has nice grill marks, an additional 7 to 10 minutes. Remove the chicken to a plate.
  • Serve the chicken with the remaining ginger scallion sauce.

1 small head napa cabbage (about 1 pound), cut into bite-size pieces
1 medium carrot, thinly sliced
4 scallions, thinly sliced
1/4 pound snow peas, cut crosswise into thirds

Steps:

  • Preheat a grill or grill pan to medium high. Make the dressing: Whisk the vinegar, soy sauce, honey mustard and ginger in a medium bowl, then add the vegetable and sesame oils in a slow stream, whisking until combined. Toss the chicken with 1/4 cup of the dressing in another bowl; let marinate 10 minutes at room temperature. 1 tbsp vegetable oil
1 ½ tbsp sriracha chilli sauce (see tip below)
2 tsp grated ginger
2 tbsp clear honey
2 tbsp rice vinegar
240g pack Tenderstem broccoli
1 tbsp sesame seeds , toasted

Steps:

  • Slice each chicken breast lengthways into 2 thin pieces. Rub with the oil and season on both sides. Heat a grill pan and cook the pieces for 2-3 mins each side.
  • While the chicken is cooking, mix the chilli sauce, ginger, honey and vinegar with a little seasoning in a small bowl. Brush over the chicken as it cooks - wait until it is grilled on one side first before brushing, or it will burn.
  • Blanch the broccoli, divide between the plates and pour over the remaining sauce. Top with the chicken and sesame seeds.

1 clove garlic, minced

  • Toast the peppercorns in a small pan over medium heat for five minutes, or until they begin to smoke. Cool and crush finely with a mortar and pestle.
