Steps:
- Place chicken pieces and remaining ingredients into a large zip top bag. Mix around to coat all pieces. Marinate for 30 minutes-overnight.
- Preheat indoor or outdoor grill to medium heat. Grease grill and place chicken pieces onto grill. Grill both sides until chicken is cooked through. Breasts, about 12 minutes per side. Drumsticks, about 6 minutes per side. Serve with your favorite Bush's Grillin' Beans variety.

Steps:
- In a skillet, toast peppercorns, cumin, coriander and cinnamon over medium heat, stirring, until fragrant, about 1 minute.
- Finely grind in small food processor.
- Add garlic and 2 teaspoons salt; pulse until paste forms.
- Transfer to a large bowl.
- Add the onion, zest, juice, oil and parsley.
- Add chicken quarters; turn to coat.
- Cover, refrigerate 8 hours or overnight.
- Prepare outdoor grill with medium hot coals.
- Remove chicken from bowl; scrape off excess marinade.
- Sprinkle chicken with remaining salt.
- Grill, turning 20 to 25 minutes, or until cooked through.
MARINATED CHICKEN WITH CUMIN, GARLIC & LIME
I tried a version of this chicken after watching a Robin Miller episode. She made this with olives in the mix and did not let it marinate. We didn't care for the olives with this, and I prefer to let it marinate. The leftover chicken is great in Recipe #226933.

- In a large ziptop baggie, combine chicken, onion, garlic, lime juice, molasses, Worcestershire sauce, cumin, oregano, salt, and black pepper; seal bag and let marinate in the fridge for several hours or overnight.
- Preheat oven to 400°F.
- Coat a large roasting pan with cooking spray.
- Transfer chicken to prepared pan and pour over any remaining marinade on top.
- Roast 30 to 35 minutes, until chicken is cooked through (mine was ready at 30, so check early).

- For the marinade: In a medium bowl, whisk together the oil, lemon zest, lemon juice, garlic, cumin, salt and pepper flakes until smooth. Add the chicken and toss until coated with the marinade. Cover and refrigerate for at least 4 hours or overnight. (Can also be made in a resealable plastic bag.)
- For the pesto: In a food processor, blend the mint, spinach, cheese, walnuts, garlic, lemon juice, salt and pepper until chunky. With the machine running, slowly add the olive oil until smooth.
- Place a grill pan over medium-high heat or preheat a gas or charcoal grill. Spray the grill lightly with vegetable oil cooking spray. Remove the chicken from the marinade. Discard the marinade. - Prepare an outdoor grill for medium heat.
- Whisk the oil, oregano, lemon zest and juice and garlic in a large bowl. Add the chicken, toss to coat and set aside for 10 minutes at room temperature.
- Remove the chicken from the marinade and pat dry and sprinkle generously with salt and pepper.

- Lightly pound chicken to an even 3/4-inch thickness. Pat chicken dry using paper towels and place in a large resealable plastic bag.

- Whisk 2 large shallots, finely chopped, 4 garlic cloves, finely grated, ⅔ cup extra-virgin olive oil, ¼ cup sherry vinegar or red wine vinegar, 3 Tbsp. fresh lemon juice, 2 Tbsp. fresh lime juice, 1 Tbsp. Diamond Crystal or 1¾ tsp. Morton kosher salt, 1 tsp. sugar, and ½ tsp. freshly ground black pepper in a medium bowl to combine. Set ⅓ cup marinade aside.
- Arrange 4 skinless, boneless chicken breasts (about 1½ lb.) in a single layer in a baking dish. Pour remaining marinade over chicken and turn to coat. Cover dish and chill, turning chicken halfway through, at least 30 minutes and up to 4 hours.
- Prepare a grill for medium-high heat; oil grate. Remove chicken from marinade, letting excess drip back into dish; discard marinade in dish. Grill chicken, turning halfway through, until cooked through and blackened grill marks appear, 10-14 minutes. Transfer to a cutting board and let rest 5-10 minutes before slicing.
- Serve chicken with reserved marinade spooned over.
GRILLED LEMON GARLIC CHICKEN
Found this recipe way back in the Taste of Home's Quick Cooking magazine and tweaked it for my family's taste. I have pounded the chicken breasts before I marinated them and fixed them on the Foreman Grill. It takes little time to prepare marinade but it needs to marinate for 6-8 hours then cook for 1 hour or until the chicken juice is clear.

- In a large plastic bag, combine the first eight ingredients; mix well. Remove 1/4 cup for basting and refrigerate.

- Zest and juice 4 lemons; reserve remaining 2 whole.
- Combine olive oil, lemon zest and juice, rosemary, sage, garlic, and crushed red pepper for marinade in a small bowl. Whisk to combine.
- Place chicken thighs in a single layer in a wide, flat dish. Add the herb mixture and massage to coat. Cover and refrigerate, 8 hours to overnight.
- Preheat an outdoor grill for medium heat and lightly oil the grate.
- Remove the chicken from the marinade and brush off any excess herbs and oil. Season generously with salt and drizzle with olive oil.
- Cut the 2 whole lemons in half and cut the tips off of the ends; this will allow the lemons to stand up without rolling around.
- Place the chicken, skin side-down, on the preheated grill. Grill chicken for 3 to 4 minutes, then rotate 90 degrees to create a crosshatch pattern. Grill another 3 to 4 minutes, then turn and grill until no longer pink in the center and juices run clear, 4 to 5 minutes more. - In a saute/fry pan, combine the peppercorns, cumin, coriander seeds and cinnamon; toast the spices, shaking the pan gently, over medium heat for about 1 minute, till fragrant. Take care not to burn them. Transfer them to a food processor or possibly spice grinder and pulse to blend.
- In a stainless steel mixing bowl, combine the onion, lemon juice, canola oil, parsley, lemon zest and garlic. Season the chicken with the grnd spices, then add in the chicken pcs to the bowl with the marinade. Mix well. Put the chicken in a dish, cover, and chill for at least 8 hrs, and ideally overnight.
- Build a charcoal fire in a grill and let the coals burn till covered with white ash. Spread them out in the grill. Lightly oil the grill grate.
- Lift the chicken from the dish and scrape off the excess marinade. Season the chicken with salt, and grill it, turning the pcs several times, for 20 to 25 min, or possibly till the chicken is cooked through and the thigh juices run clear when pricked with a small, sharp knife.
