EASY TUNA CAKES
Easy tuna cakes that takes 15 minutes and less than 10 ingredients to prepare and cook!

Steps:
- Remember to drain your tuna before mixing all your ingredients.
- In a medium mixing bowl, add all the ingredients and mix until combined.
- To form the tuna cakes, use a 1/4 measuring cup to get all of the cakes of the same size.
- Heat a medium nonstick skillet, place your cakes and cook for 2 minutes on each side or until golden brown. Try not to overcrowd your skillet, and cook them in batches of 3. Repeat until finished. Try not to move them too much to avoid them falling apart.
- Serve immediately with some mayonnaise or tartar sauce, and Enjoy!

- In a large bowl, stir together tuna, egg, cilantro, breadcrumbs, mayonnaise, lemon juice, and jalapeno. Mix gently until ingredients just hold together.
- Using a packed 1/3-cup measure of tuna mixture per patty, shape into 8 cakes.
- In a large nonstick skillet, heat oil over medium. Working in batches if necessary, cook cakes until golden brown and crisp on the outside, about 2 minutes per side. Serve hot, accompanied by salsa, and garnish with cilantro sprigs.

- Boil the potatoes in lightly salted water for 15-20 minutes, until they're tender.
- When they're just cooked, drain and mash them.
- Then stir in the tuna and lemon juice then season to taste.
- Divide this into eight and shape into round fish cakes.
- Heat the oil in a large, non stick frying pan and fry the fish cakes on one side for three minutes.
- gently turn them over and fry the other side for a further two minutes.
- Serve two tuna cakes per person, ideally with some spring onion salsa.

- In a large bowl, combine 12 crushed crackers and next 5 ingredients.
- Place tuna in bowl with cracker mixture; with rubber spatula, gently fold mixture together.

- Crush the remaining 3 crackers on a plate and lightly coat the cakes.

- In a bowl, mix together tuna, cajun seasoning, garlic powder, bread crumbs and mayo together. If you feel it is too wet add more bread crumbs. I you feel it is too dry add more mayo.
- Add oil to skillet and heat on medium high heat.
- Grab mixture and form into patties about 1/2 inch thick.
- Place them in hot skillet and cook for about 5-7 min on each side depending on how big you made them.
- Once browned and cooked through serve with your favorite sauce and enjoy!

TUNA CAKES
This Tuna Cake recipe is from the Kraft Food & Family Magazine Spring 2008 Edition. They are simple and easy to make. Using Stove Top Stuffing Mix gives this a perfectly seasoned taste. Please try them......the are delicious ! The only thing I did not add was the shredded carrots, because I didn't have any on hand. Also they suggested to use an Ice Cream scoop to make evenly portioned cakes. I also might suggest to dip them in flour before frying. It might help keep them together.

VERY SIMPLE TUNA CAKES
This is a very rich and easy tuna cake. You can change the canned tuna for chicken, salmon, crab. Whatever floats your boat.

- Mix everything except the oil in a bowl.
- Make sure you taste the mix to make sure you like it and it's seasoned right.
- Scoop up a walnut sized ball, and flatten to about 1/2 inch thick.
- Put the patties in freezer.
- Heat oil in skillet
- When oil is hot take patties out and place in frying pan.
- Fry for 3 minutes on each side.
- Goes nicely with a salad =) Enjoy.
