BARLEY SALAD WITH CHICKPEAS AND PEARS



Barley Salad with Chickpeas and Pears image

This hearty barley salad is packed with chickpeas, walnuts, crunchy pears, sun dried tomatoes and parsley. It's such a flavorful combo and is perfect for meal prep and potlucks.

1 cup uncooked barley*
1 cup cooked chickpeas
2 pears (divided)
1/3 cup chopped sun dried tomatoes
1/3 cup walnuts
3/4 cup feta
1/4 cup chopped parsley
1 handful baby arugula
3 Tablespoons red onion
1/4 cup apple cider vinegar
1/3 cup olive oil
2 teaspoons maple syrup
1 teaspoon dijon mustard
1 teaspoon dried oregano
1/2 teaspoon sea salt
1/4 teaspoon pepper

Steps:

  • Cook barley according to package instructions. Drain.
  • Toast walnuts in a small skillet. This should only take 5-6 minutes. Let cool.
  • Start dressing by adding minced onion in a small bowl with the vinegar. Let marinate while you prep the salad.
  • Chop 1 1/2 pears and save remaining half for fanning and decorating salad.
  • Add cooked barley, chickpeas, pears, sun dried tomatoes, walnuts, arugula, parsley and feta into a large bowl.
  • Add oil, maple syrup, mustard, oregano, salt and pepper into the bowl with the vinegar and red onion. Whisk until combined. Pour dressing over salad mixture and toss to coat. Taste and season with additional salt and pepper, if needed.

Wonderful salad/main dish that we often go for on a hot summer evening. Serve with crusty bread and a glass of wine :) The olive oil accounts for 20% of calories in this recipe - for a lighter version you can substitute some of the olive oil with lemon juice. UPDATE June 28 - I agree with both reviewers - the recipe is better with less oil. I am reducing the oil and increasing the lemon in the recipe - so pleae note that the new version reflects this change

400 g chicken breasts, boneless, skinless
2/3 cup pearl barley
1 1/2 cups green beans, chopped, trimmed
1 cup cherry tomatoes, halved
1/4 cup red onion, finely minced
2 tablespoons basil, fresh, chopped
4 teaspoons olive oil
4 teaspoons lemon juice
2 tablespoons wine vinegar
1 tablespoon Dijon mustard
1/4 teaspoon oregano
1/4 teaspoon thyme
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • VINAIGRETTE: Whisk oil, lemon juice, vinegar, mustard, seasonings, salt and pepper.
  • CHICKEN: Marinate chicken using 2 TBSP (not all) of vinaigrette. Coat for 10 min and up to 8 hours if you want to prepare ahead. Grill chicken until done and cut into bite size pieces.
  • SALAD: Cook barley in boiling water for 10 min; add green beans and cook until tender crisp and barley is tender for approx 10 minute (barley should cook 20 min total).
  • Drain and toss with remaining vinaigrette.
  • Add chicken cubes, tomatoes, onion and fresh basil. Toss to combine.
  • Serve.

1/4 cup lemon juice
1 tablespoon plus 1 teaspoon canola oil, divided
2 garlic cloves, minced
1 teaspoon dried oregano
1/2 teaspoon dried basil
4 boneless skinless chicken breast halves (4 ounces each)
1 can (14-1/2 ounces) reduced-sodium chicken broth
1/2 cup medium pearl barley
1/4 teaspoon salt
1 medium carrot, chopped
1 small sweet red pepper, chopped
3 green onions, thinly sliced
1/4 teaspoon pepper

Steps:

  • In a small bowl, combine the lemon juice, 1 tablespoon oil, garlic, oregano and basil. Pour 2 tablespoons marinade into a large resealable plastic bag; add the chicken. Seal bag and turn to coat; refrigerate for 1 hour. Cover and refrigerate remaining marinade., In a large saucepan, bring broth to a boil. Stir in barley and salt. Reduce heat; cover and simmer for 45-50 minutes or until tender. In a small nonstick skillet, saute carrot and red pepper in remaining oil until crisp-tender. Add onions and pepper; saute 2-3 minutes longer or until tender. Stir vegetables and reserved marinade into cooked barley., Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill chicken, covered, over medium heat or broil 4 in. from the heat for 4-7 minutes on each side or until a thermometer reads 170°. Serve with barley mixture.

2 (6 ounce) skinless chicken breasts, boneless
1/8 teaspoon kosher salt
1 teaspoon olive oil
4 cups chicken broth, DIVIDED
1 cup pearl barley, uncooked
2 cups cucumbers, seeded cubed
1 cup grape tomatoes, halved
1/2 cup yellow bell pepper, cubed
1/3 cup reduced-fat feta cheese
1/4 cup kalamata olive, pitted chopped
3 tablespoons light extra virgin olive oil
1 teaspoon lemon rind, grated
2 tablespoons fresh lemon juice
1 tablespoon fresh basil, minced
1 teaspoon fresh thyme, minced
1 teaspoon red wine vinegar
1/2 teaspoon kosher salt
3 garlic cloves, minced

Steps:

  • To prepare salad, sprinkle chicken with 1/8 teaspoon salt.
  • Heat 1 teaspoon oil in a nonstick skillet over medium-high heat.
  • Add chicken; cook 2 minutes on each side or until browned.
  • Add 1 cup broth; cover, reduce heat, and simmer 10 minutes or until done.
  • Cool; shred chicken.
  • Discard broth.
  • Bring 3 cups broth to a boil in a large saucepan; add barley.
  • Cover, reduce heat, and simmer 35 minutes or until liquid is absorbed.
  • Fluff with a fork.
  • Cool.
  • Combine chicken, barley, cucumber, and next 4 ingredients (through olives) in a large bowl.
  • To prepare dressing, combine 3 tablespoons oil, rind, and remaining ingredients; stir well.
  • Add to barley mixture; toss well.
  • Cover and chill.

3 chicken cutlets
1 tablespoon honey
1 tablespoon mustard
1/2 tablespoon olive oil
2 tablespoons fresh lemon juice
1/2 teaspoon curry powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 head lettuce
1 red pepper (cut into thin strips)
1 yellow pepper (cut into thin strips)
5 baby corn (cut into pieces)
bamboo shoot (optional)
1/2 bunch scallion (sliced)
4 teaspoons soy sauce
1/4 cup oil
1/4 cup vinegar
1/4 cup sugar
4 cloves fresh garlic (crushed)

Steps:

  • Using a sharp knife cut 3-4 diagonal slits in each cutlet.
  • Place onto a lined small baking pan.
  • Combine marinade ingredients and pour over chicken cutlets.
  • Place on oven rack 8-10 inches away from top.
  • Grill for 10-12 minutes, turning every few minutes.
  • Remove from oven, cover, and let sit for ½ hour.
  • Combine salad ingredients.
  • Combine all dressing ingredients well by hand.
  • Pour over salad ½ hour before serving.
  • When chicken is cool, cut into strips.
  • Toss salad with dressing and chicken.

I created this dish in an effort to find something I can pack and bring to work for lunch that will keep me feeling full. Nothing undoes the hard work of eating a healthy diet quicker than a growling tummy. Studies have shown that barley contains dietary fiber that can slow glucose absorption and control blood sugar levels. I've used it as the base for the dish along with nutrient-packed veggies and lean protein. I suggest serving the salad at room temperature.

1 cup barley
3 cups chicken stock, fat free & low sodium
1/2 lb chicken breast, on the bone, skin on
1 tablespoon olive oil
1 teaspoon olive oil
salt
cracked black pepper
garlic powder
1 garlic clove, minced
9 ounces Baby Spinach, one pre-washed bag
1/4 teaspoon crushed red pepper flakes
1 cup grape tomatoes, quartered
1/4 cup red onion, finely diced
1/2 cup kalamata olive, pitted and halved
1/2 cup reduced-fat feta cheese, crumbled
1 tablespoon Italian dressing

Steps:

  • Preheat oven to 400 degrees.
  • Add barley and chicken stock to a medium pot. Bring to a boil. Cover and simmer for 1 hour. Set aside.
  • Place the chicken breast in a roasting pan, skin side up. Drizzle with 1 teaspoon olive oil and season with salt, pepper and garlic powder. Add about ¼ cup of water to the bottom of the pan. Roast at 400 degrees for 35 minutes or until the internal temperature reaches 160-165 degrees. Once the chicken is cool, discard the skin and bones and cut into cubes. Set aside.
  • Add 1 tablespoon olive oil and garlic to a deep pot. Cook garlic on medium heat for 2 minutes. Add spinach and crushed red pepper flakes. Saute until spinach is wilted, about 5 minutes. Drain off any excess liquid and set aside.
  • In a large bowl, combine the barley, cubed chicken, wilted spinach, grape tomatoes, red onion, kalamata olives, feta cheese and Italian dressing. Stir together and re-season if necessary. Serve at room temperature.
