GRILLED CHEESE CAKE

- Preheat the oven to 350 degrees F. Coat a 9-inch square, 2 1/4-inch-deep cake pan with cooking spray. Prepare the cake mix as directed; pour the batter into the pan. Bake 30 to 35 minutes. Cool slightly, then invert onto a rack; cool completely.
- Meanwhile, make the "soup": Combine the strawberries, peaches, sugar and lemon juice in a large saucepan. Cook over medium heat until the fruit breaks down, about 15 minutes.
- Puree the sauce with an immersion blender (or in a blender) until mostly smooth. Transfer to a bowl.
- Prepare the pudding as directed; tint with yellow and red food coloring to resemble melted cheese.
- Trim the top of the cake with a large serrated knife to make it level.
- Cut the cake in half horizontally.
- Preheat the broiler. Put the cake on a foil-lined baking sheet and brush the top with the melted butter. Broil until toasted, about 4 minutes.
- Cut the cake in half diagonally. Spread the pudding on the bottom triangles, almost all the way to the edge.
- Cover with the toasted top triangles, pressing gently so the pudding oozes out. Serve with the fruit sauce.

- Heat a large skillet over medium-low heat. Place 4 slices of bread on a cutting board and generously butter the top sides of each slice. Melt another tablespoon of the butter in the skillet; swirl around to coat the pan.
- Lay 2 slices of bread, buttered side down, in the skillet. Put a few slices of the cheese on the bread. Lay the bacon, tomato, or ham on top of the cheese. Cover with a few more slices of cheese. Top with 2 of the remaining slices of bread, placed buttered-side up. Cook, without pressing, until the bread browns and the cheese is slightly melted, about 5 minutes. Turn the sandwiches with a spatula and add a small hazelnut-size piece of butter to the pan. Cook slowly, adjusting the heat as needed to melt the cheese completely before the sandwiches are brown, about 3 to 4 minutes more. Repeat with the other 2 sandwiches. Serve.

- Place 4 slices of bread on a cutting board. Lay half the cheese slices on the bread. Lay the bacon, tomato, or ham on top of the cheese. Cover with the remaining cheese. Top with the remaining slices of bread and press down slightly.
- Heat a large skillet over medium-low heat and melt a tablespoon of the butter. Carefully place 2 of the sandwiches in the pan, and cook until the bread browns and the cheese is slightly melted, about 5 minutes. Turn the sandwiches with a spatula and add a small hazelnut-size piece of butter to the pan. Cook until the other side of the sandwiches is toasted and the cheese is melted, about 3 to 5 minutes more.
- Repeat with the other sandwiches. (If at any time the bread starts to brown too quickly, lower the heat to prevent the bread from scorching before the cheese melts.) Serve.
GRILLED CHEESECAKE SANDWICHES
Though I have yet to try this recipe...it HAS to be good due to the yummy components that make it what it is. I can't recall where I found this recipe...however whoever thought of it is a genius in my book. :) This is one of those recipes you save for a raining day, broke the heel off your favorite shoes, dog ran away kinda recipes. The originator of this recipe left a serving note, For those who simply cat eat a grilled cheese without soup, I think a bowl of slightly melty strawberry ice cream would complement it quite nicely. ;) Please let me know what you think of this recipe, the good, the bad, and the ugly.

- 1. Butter one side of each slice of pound cake.
- 2. Assemble the sandwich as follows: one slice of pound cake (butter side down), as many slivers as you like of the cheesecake, we included bits from the crust for added crunch), and ther other slice of pound cake, buttered up.
- 3. Melt approximately 3 Tablespoons of butter in a frying pan over medium-low heat and add the sandwich to the pan.
- 4. After about a minute and a half, gently lift the sandwich with a spatula to see if it is lightly browned on the bottom. If it is browned to your liking, go ahead and flip; if not, let it brown just a little longer.
- 5. Once browned to your liking, carefully flip the sandwich. Press down on the top with the spatual to make everyting kind of meld. The second side will brown faster than the first one did, so keep a close eye on it.
- 5. Remove from heat, turn off the heat, slice in half (if you're into that), and enjoy!

- Spread 3 tablespoons butter on 1 side of bread slices. Toast bread, butter side down, in a large skillet or electric griddle over medium-low heat until golden brown, 2-3 minutes; remove. In a small bowl, mix together mayonnaise, Manchego cheese, onion powder and remaining 3 tablespoons butter. In another bowl, combine cheddar, Monterey Jack and Gruyere. , To assemble sandwiches, top toasted side of 4 bread slices with sliced Brie. Sprinkle cheddar cheese mixture evenly over Brie. Top with remaining bread slices, toasted side facing inward. Spread mayonnaise mixture on the outsides of each sandwich. Place in same skillet and cook until bread is golden brown and cheese is melted, 5-6 minutes on each side. Serve immediately.

- For the Cheddar cream cheesecake: Preheat the oven to 350 degrees F. Beat the cream cheese and Cheddar in a mixing bowl until soft. Beat in the sugar and vanilla until fluffy. Mix together the yolks, egg and milk. Add to the mixer on low speed. Add the creme fraiche. Pour into flexi-molds with 2.5-inch cavities and bake for about 22 minutes. Let cool, then freeze.
- For the pate de fruit: Weigh out 1 pound sugar in a small bowl with the glucose in the center. Mix together the remaining 2 tablespoons sugar and the pectin in a separate bowl. Bring the bloody mary mix and blood orange puree to a boil. Gradually stir in the sugar and pectin mix. Stir in the sugar and glucose mix in three stages while maintaining a boil. When the temperature reaches 219 degrees F, turn off the heat. Add the citric acid. Pour into desired molds or frames. Cool to set. Cut into 2-inch rounds
- Remove the cheesecakes from the mold. Top half the cheesecakes with pieces of pate de fruit. Top with the remaining cheesecakes and dust with confectioners' sugar. Heat up a metal skewer with a blow torch or over a flame and use it to make grill mark impressions on the sandwiches.
