GRILLED PATTY MELTS
This is a grilled version of the classic patty melt sandwich on rye bread. Simple and delicious!

- Preheat an outdoor grill for medium heat and lightly oil the grate.
- Pat out three 1/3-pound hamburger patties, pressing each patty down with your index and middle fingers to get a nice, flat burger instead of a ball. Season patties on both sides with salt and pepper.
- Cook on the preheated grill until no longer pink in the centers, 10 to 12 minutes, flipping halfway. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
- Meanwhile, melt butter in a saucepan over low heat. Increase heat to medium-low, add onion, and saute until tender, 5 to 7 minutes.
- Place 3 slices of bread on the grill. Top each with a slice of American cheese, a cooked patty, sauteed onions, a slice of Swiss cheese, and the remaining bread. Grill sandwiches until cheese melts, about 1 minute per side.

JUICY GRILLED CHEESEBURGERS
These quarter-pounders are lightened up with 90-percent lean beef and a mere half-ounce of Cheddar, and they're served on wholesome whole wheat English muffins.

- Heat a grill to medium-high direct heat and lightly oil the grates using a paper towel soaked in canola oil or nonstick grilling cooking spray.
- Spread a 16-inch-long piece of nonstick aluminum foil on a cutting board (or mist a piece of regular aluminum foil with nonstick cooking spray). Top with the onions, 1/4 teaspoon each salt and pepper and 1 tablespoon water. Bring two sides of the foil together, fold over twice to create a seal and then seal the remaining two ends. Put on the grill and cook for 12 minutes, flipping once. The onions should be tender with only a bit of charring. Carefully open the top of the foil to let all the steam out and continue to cook the onions, tossing, until browned and lightly charred, 3 minutes longer. Remove from the heat.
- While the onions cook, mix the ketchup and mustard together in a small bowl. Season with pepper and set aside.
- Lightly toast the English muffins on the grill and place one top and bottom on each of 4 plates. Spread some of the ketchup sauce on the bottom half of each muffin and top with a slice of tomato.
- Divide the beef into 4 patties about 4 inches in diameter and just under 1/2-inch thick. Sprinkle with a total of 1/2 teaspoon salt and 1/4 teaspoon pepper. Place the burgers on the grill. Cook until the edges of the burgers are browning, 3 to 5 minutes, and then flip. Brush the burgers with the remaining ketchup sauce and evenly top with the shredded cheese. Cover the burgers with the grill lid or a large heatproof bowl and continue to cook until the cheese has melted and the burgers are still a bit pink on the inside, about 3 minutes more.
- Put one burger on top of the assembled muffin bottom and top with some of the grilled onions and the top of the muffin. Serve with pickles if desired.
GOURMET GRILLED CHEESE ON RYE
Savory grilled cheese with a little extra decadence. In my family, we all have different tastes. This recipe is to my liking, but please feel free to experiment with different types of cheese and seasonings.

- Heat grapeseed oil in a large skillet over medium heat; saute onion until softened and slightly browned, 5 to 10 minutes. Transfer onion to a small bowl, reserving the oil in the skillet.
- Lightly brush each bread slice with grapeseed oil from the skillet and season with salt and pepper. Arrange half the bread slices, oil-side down, in the skillet. Top each bread slice with 1 slice Gouda cheese, 1 slice provolone cheese, artichoke hearts, and onion; top with remaining bread slices, oil-side up.
- Cook sandwiches until bread is browned and crispy and cheeses are melted, about 4 minutes per side. Slice each sandwich in half to serve.

THE ULTIMATE PATTY MELT BURGER
I used to work at Friendly's, a family restaurant chain where patty melts were a major feature of the menu. The ordinary patty melt is a grilled swiss on rye with a hamburger and some grilled onions inside. But its even better with bacon and mushrooms. My DH's absolute, favorite burger. The prep work takes a little time as you cook each element but if you have the bacon, onions, and mushroom ready ahead you can assemble the patty melts as fast as you can cook a hamburger. Good for race day, game day, or any time you've got a crowd of hearty eaters at your table.

- Cut the bacon strips in half. Fry to preferred doneness (I like mine moderately soft).
- Fry onions in a little butter over medium to medium-high heat until cooked and browned.
- Fry mushrooms in butter or bacon grease until nicely cooked and a little browned.
- Form ground sirloin into 6, slightly oval patties. Fry or grill to preferred doneness (I like medium-well).
- While patties are cooking, make 6 sandwiches of rye bread and cheese. Butter the outsides and cook like a normal grilled-cheese sandwich -- in restaurant-speak this is a "set-up".
- When set-ups are ready them pry them open and set them on the individual plates.
- Put cooked patties on one side of the set-up. Top with bacon strips, onions, and mushrooms.
- Close sandwiches, pin with frilly toothpicks, and cut in half.
- Offer mayonnaise and/or mustard (preferably brown or Dijon), at the table.
- I prefer to offer coleslaw (try Recipe #209944 ), or a green salad but really crisp french fries and a pickle on the side are customary.

PATTY MELTS WITH SWISS ON RYE

- Heat the olive oil in a large skillet over medium high heat. Add the onions and cook for 20 minutes, until they have caramelized. Remove the onions from the skillet and set aside.
- Heat the olive oil in a large skillet over medium high heat. Add the beef patties to the hot skillet and season with salt and pepper.
- Cook on each side for 2 minutes, or until beef is cooked through. Remove the patties from the skillet and wipe the pan if needed.
- Butter each slice of bread on one side. Place one slice of bread butter side down in the hot skillet. Add 1 beef patty to the top of the bread slice along with ¼ of the onions and a slice of cheese.
- Top each sandwich with the 2nd slice of bread. Cook for 3-4 minutes or until the bread is toasted. Flip the sandwich over and cook 3 minutes more, until bread is toasted and the cheese has melted.

- Cook hamburger patties to your favorite degree of doneness.
- Top each cooked patty with a spoonful of chopped green chilies or ever how much you like.

- Place 1/2 cup bread crumbs on a plate. Combine remaining bread crumbs with ground beef, eggs, Worcestershire sauce, and 1/2 of the garlic in a large bowl. Mix well and form into 4 large balls. Place each ball in the bread crumbs and press to flatten and coat burgers on each side.
- Heat 1 tablespoon oil in a skillet over medium heat. Add onions and remaining garlic and cook until browned, 5 to 7 minutes. Reduce heat to low, add butter and mushrooms, and season with salt and pepper. Add red wine and cook for 5 minutes more.
- Meanwhile, heat remaining oil in another skillet over medium-low heat. Add burgers, cover, and cook until bread crumbs on the bottom have turned a nice brown color, 5 to 7 minutes. - Heat a frying pan over medium-low heat.
- Butter slices of bread.
- Spread the opposite side of one slice of bread with the ketchup and mustard. Sprinkle with the onions. Then layer on the Muenster cheese, cheddar cheese, ham, and American cheese.
- Lay the half-assembled sandwich into the pan, and then top with the second slice of of buttered bread.
