- Layer 1 slice sandwich bread with 1 slice Swiss cheese, ham, pineapple, fresh basil, and another slice of cheese; top with bread.
- In a skillet over medium-low, melt butter. Add sandwich. Cover; cook until golden, 2 to 3 minutes.
- Flip; cook, covered, until cheese is melted.
GRILLED CHEESE WITH ROASTED PINEAPPLE, HAM, AND SWISS RECIPE

- Heat 1 tablepsoon butter in a 10-inch nonstick skillet over medium heat until foaming subsides. Add pineapple slices and cook, swirling pan occasionally, until softened and lightly browned, about 5 minutes total. Remove from skillet and set aside. Add ham and cook until lightly browned, about 3 minutes. Remove from skillet and set aside. Wipe out skillet with paper towels.
- Melt 2 teaspoons of butter in the skillet over medium heat until foaming subsides. Add both bread slices and cook, swirling occasionally, until pale golden brown on bottom side, about 2 minutes.
- Transfer to a cutting board toasted-side-up. Place one cheese slice on top of one slice of bread. Top with pinapple, ham, and second cheese slice. Close sandwich, with both toasted sides facing inwards.
- Melt 2 more teaspoons of butter in the skillet and reduce heat to medium low. Add sandwich and cook, swirling occasionally, until deep, even golden brown, about 5 minutes. Remove sandwich using a flexible metal spatula. Add the remaining 2 teaspoons butter. Return sandwich to skillet cooked-side up. Season with salt. Cook, swirling occasionally, until second side is deep, even golden brown and cheese is thoroughly melted, about 5 minutes. Serve immediately.

- Begin by roasting the chiles over the flame on your stovetop (or under the broiler) until the skin is totally blackened (if using fresh). When the chiles are totally charred, throw them into a plastic bag. Seal and allow them to steam and cool.
- Next, pour the white vinegar over the sliced red onion and let them sit awhile. This'll take away a little of the crazy onion flavor and leave them with a nice sweetness.
- Finally, make the special sauce: equal amounts of mayonnaise and Dijon. It's the simple things in life!
- When you're ready to make the sandwiches, scrape the blackened skin off the chiles. Scrape out the seeds, too, so you'll wind up with big pieces of roasted green chiles.
- For each sandwich, generously spread 2 pieces of rye bread with the special sauce. Lay on 2 slices of provolone, 2 slices of tomato, 2 slices of Cheddar... a nice layer of roasted green chiles... a few red onion slices... and one more slice of provolone just to hold it all together.
- Top with the other slice of bread and spread the outsides with a good amount of butter.
- Toast the sandwich in a skillet over medium-low heat until the cheese is thoroughly melted inside. Be careful not to burn the bread!

- Prepare a large skillet or cast-iron skillet.
- Place two slices of bread on a work surface.
- Cover/sprinkle each of the two slices with one portion of cheese, then one slice of ham, then one portion of pineapple.
- Finish with the second portion of cheese.
- Top each sandwich with a slice of bread.
- Melt butter in a hot skillet.
- Add the two sandwiches to the skillet; cook until cheese is beginning to melt and the undersides are golden.
- Butter the tops of the sandwiches, using a spatula carefully turn them over.
- Cook until the cheese is fully melted and the undersides are golden.
- Let stand for about 2 minutes before slicing.

- On the sandwich bread, layer cheese, ham, pineapple, basil and a second slice of cheese; top with remaining bread.
- Melt the butter in a heavy skillet over medium heat.

This is a favorite I made up while working in my family's restaurant in New Orleans. I got tired of the same ole' stuff on the menu so had fun with making this. I even served it to my favorite customers if they asked real nice!

- First, grill your onions to your liking in a pan with a small amount of oil. Put aside.
- Wash lettuce and have your sandwich fillings ready for assembly.
- On a hot plate, skillet, etc., place one slice of ham down, followed by swiss cheese, then the other slice of ham (if you use the long slices of ham, they will wrap around the cheese quite nicely). The cheese should be as protected from the pan as much as possible. You want to heat on a medium/high heat and flip this after a minute or two so the top side gets a turn down on the pan. But don't cook this too long as it will make the meat tough and the cheese will melt and leak out all over the place. Just heat until meat is slightly brown on top and bottom and the cheese has mostly melted.
- While meat and cheese are cooking, place 2 slices of bread in toaster. When done, add mayo and/or mustard to toast and place ham/cheese on bottom slice of toast. Top with grilled onions, lettuce, tomato, pickle, and sprinkle with salt and pepper. Add top piece of toast, slice sandwich on the diagonal, throw on a plate with some potato chips and get busy (all the while wondering why you didn't go ahead and make that second one while you were at it!) -- back to the kitchen. These things ARE addictive. You've been warned!

- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or aluminum foil.
- Arrange the pineapple and tomato slices on the prepared baking sheet and bake for about 12 minutes, turning the pieces over halfway through, until the surfaces appear dry but not yet browned. Remove from the oven and set aside.
- Spread the soft butter on one side of each bread slice, dividing it evenly. Place 2 slices of bread, buttered-side down, on a clean cutting board. Top each slice of bread with 2 slices of the fontina or Havarti cheese, ½ the ham, 3 or 4 slices of roasted tomato, 2 rings of roasted pineapple, and ½ the mozzarella on top of each. If needed you may cut the pineapple rings a bit to get them to fit nicely. Sprinkle with crushed red pepper flakes, if using. Top with the remaining slices of bread, buttered-side up.
