This Buffalo Chicken Sandwich recipe has a juicy chicken breast coated in buffalo sauce with lettuce, tomato and a creamy blue cheese sauce.

1 1/2 pounds boneless, skinless chicken cutlets (4 cutlets)
1 teaspoon paprika
1 teaspoon chili powder
Salt and pepper
2 tablespoons olive oil
1/2 cup Frank's Red Hot Buffalo Sauce
2 tablespoons butter (melted)
1/2 cup sour cream
1/2 cup ranch dressing
4 ounces blue cheese crumbles
2 green onions (chopped)
4 Large sandwich buns (Brioche or other thick, sturdy buns)
8 Lettuce leaves (optional)
1 ripe tomato (sliced)
Celery and carrot sticks (for serving (optional))

Steps:

  • Place chicken between two large pieces of plastic wrap and gently pound the larger end to even thickness.
  • Melt olive oil in a large skillet over medium heat. Pat chicken dry and season with paprika, chili powder and salt and pepper to taste. Cook chicken in the skillet, about 4 minutes per side or until no longer pink in the center.
  • In a small microwave-safe bowl, melt the butter with the hot sauce. Stir to combine. When chicken is finished cooking, coat with the hot sauce mixture.
  • In another small bowl, combine sour cream, Ranch dressing, crumbled blue cheese and sliced green onions.
  • Split the buns and spread dressing mixture on both the tops and bottoms.

2 romaine lettuce hearts, leaves separated
2 celery ribs, thinly sliced
3/4 cup milk
1/3 cup light mayonnaise
2 tablespoons fresh dill, snipped
2 tablespoons apple cider vinegar
3 garlic cloves, minced
3 tablespoons louisiana hot sauce
1 1/2 teaspoons honey
4 chicken breasts, boneless, skinless
1/3 cup blue cheese, crumbled

Steps:

  • Preheat barbecue to medium. Peel long ribbons from carrot into a large bowl, turning as you go. Add lettuce leaves and celery. Whisk milk with mayo, dill, vinegar, and garlic in a small bowl. Stir hot sauce with butter and honey in a large bowl. Set both aside.
  • Oil grill, then barbecue chicken, covered, until springy when pressed, six to eight minutes per side. Transfer to a cutting board and slice into 1/2 - inch thick strips. Add to hot-sauce mixture and turn to coat. Drizzle dressing over salad and toss until coated. Top with chicken and cheese.
  • I didn't happen to have romaine, so I used iceberg. Also, no blue cheese, so feta was substituted. We like things hot, so I didn't put the butter or honey in the hot sauce. I used Frank's Red Hot, right out of the bottle.

  • In a large bowl, combine the first 7 ingredients. In a small bowl, combine the ranch dressing, mayonnaise, Italian dressing, garlic powder and pepper; pour over chicken mixture and toss to coat. Fill each pita half with a scant 1/2 cup chicken mixture.

1 pound boneless skinless chicken breast halves
CUCUMBER SAUCE:
1 cup plain Greek yogurt

2 tablespoons grapeseed oil, plus more for greasing
1 lemon, zested and halved
2 teaspoons ground cumin
1 teaspoon ground turmeric
3/4 teaspoon kosher salt
1/2 teaspoon garlic powder
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground cinnamon
1 pound boneless skinless chicken breasts (about 2 breasts), cut into 1- to 1 1/2-inch cubes
4 Persian cucumbers
3 to 4 sprigs dill, fronds picked
One 8-ounce block halloumi, cut into eight 1/4-inch thick slices
4 pitas
Tahini, for drizzling

Steps:

  • Soak the skewers in water for at least 30 minutes. Preheat the grill to 375 degrees F or preheat a large grill pan over medium heat. Clean and oil the grates or grill pan.
  • Combine the lemon zest with the 2 tablespoons grapeseed oil, the cumin, turmeric, salt, garlic powder and pepper in a medium bowl; stir together. Add the chicken and toss to coat. Let sit for 5 minutes to 1 hour, then thread 5 to 6 chicken cubes onto each skewer.
  • While the chicken marinates, peel the cucumber into long ribbons with a vegetable peeler. Transfer to a small bowl. Add the dill fronds, the juice from 1/2 of the zested lemon and a sprinkle of salt and pepper. Toss and set aside until ready to serve.
  • Grill the skewers, turning every 3 to 4 minutes, until the chicken is cooked through and all sides are charred, 8 to 10 minutes total. Remove to a platter and squeeze juice from the remaining 1/2 lemon over the top.
  • Two minutes before the chicken is done cooking, grill the halloumi until warmed through and lightly charred, about 1 minute per side.
  • For each serving, top 1 pita with some of the cucumber salad, 1 to 2 slices of the halloumi and 2 chicken skewers. Drizzle with tahini and serve.

Forget about the fast food fried chicken sandwich wars! We think our buffalo chicken sandwich beats them all. We fill it with fresh chicken, spicy buffalo sauce, a rich brioche bun and cool blue cheese dressing.

4 large chicken cutlets (about 1 1/4 pounds total)
1 cup buttermilk
1/2 cup ranch dressing
1 1/2 ounces blue cheese, crumbled (about 1/3 cup)
1 cup self-rising flour
Kosher salt and freshly ground pepper
1 cup Buffalo-style hot sauce
Vegetable oil, for frying
4 brioche buns, split
2 cups shredded coleslaw mix
1/2 English cucumber, thinly sliced
Potato chips, for serving

Steps:

  • Place the chicken in a shallow bowl. Cover with the buttermilk, turning to coat. Combine the ranch dressing and blue cheese in a small bowl and refrigerate. On a large plate, stir together the flour and 1/2 teaspoon each salt and pepper. Pour the Buffalo sauce into a shallow bowl. Line a large plate with a few layers of paper towels.
  • Add enough vegetable oil to a large skillet to come halfway up the sides. Heat over medium-high heat until a deep-fry thermometer registers 350˚ F. Working in batches, remove the chicken from the buttermilk, letting the excess drip off, then coat in the flour mixture and shake off any excess. Carefully add the chicken to the hot oil and fry until dark golden brown and cooked through, 4 to 5 minutes per side. Transfer the chicken to the paper towel-lined plate to drain.
  • As soon as the chicken is cool enough to handle, dip in the Buffalo sauce, coating it entirely. Place each chicken cutlet on a bun bottom and top with coleslaw and cucumber. Spread the bun tops with the blue cheese mixture and close the sandwiches. Serve with potato chips.

I found this recipe online and made a few changes to suit what I had available. If you have leftover grilled chicken, use it instead of the pre-cooked chicken strips. I like to use homemade blue cheese dressing. These are very sloppy sandwiches so be sure to have lots of napkins or a wet washcloth handy! Enjoy!

4 garlic cloves, minced
4 tablespoons Frank's red hot sauce
2 tablespoons barbecue sauce
1 teaspoon chili powder
2 (6 ounce) packages pre-cooked southwestern chicken strips
4 hoagie rolls, split
1 cup shredded lettuce
1/4-1/2 cup blue cheese dressing

Steps:

  • In a medium saucepan, melt the butter over medium-low to low heat. Add the garlic and cook for 30 seconds. Add the hot sauce, barbecue sauce, and chili powder and stir to combine.
  • Add the chicken and cook the mixture uncovered over medium-low heat for five minutes, or until heated through.
  • Spoon chicken onto bun bottoms; top with lettuce and blue cheese dressing. Top with bun tops.

1/4 cup durkees red hot sauce or 1/4 cup Tabasco sauce
1/2 cup olive oil
1 lemon, juice of
salt
pepper
1/2 cup bleu cheese salad dressing
1 cup chopped celery

Steps:

  • Mix the Durkees, olive oil, lemon juice, and salt and pepper together.
  • Marinate the chicken breasts in this overnight, covered and refrigerated.
  • Remove chicken, discard marinade and bake in oven at 350° until juices run clear and no longer pink.
  • Allow to cool.
  • Slice into tiny pieces, and mix with the celery and blue cheese dressing.

3 large bone-in chicken breast halves (Could use left over chicken or rotisserie chicken, as well)
salt
pepper
2 tablespoons garlic, minced
8 ounces cream cheese, softened
1/2 cup ranch dressing
3 ounces hot sauce (Texas Pete seems to give the best flavor, but this is up to you)
2 stalks celery, chopped (I run mine through the food processor)

Steps:

  • Salt and pepper your chicken breasts. Boil with 2 tablespoons garlic for 25-30 minutes. Drain and allow to cool. Once cool, pull chicken off the bones and into bite-size pieces.
  • Mix softened cream cheese, ranch dressing, and hot sauce with hand mixer -- this breaks the cream cheese up the best, if you mix without a mixer it will be chunky.
  • Fold chicken and celery into cream cheese mixture and enjoy!
