1 cup sugar
10 sprigs mint
5 mint leaves, plus a sprig for garnish
2 1/2 ounces bourbon

Steps:

Make the mint syrup: Bring the sugar and 1 cup water to a simmer in a small saucepan over medium heat, stirring until the sugar is dissolved. Remove from the heat and add the mint sprigs, pressing with a wooden spoon to submerge them. Let cool to room temperature, then remove the mint with a slotted spoon and discard. Refrigerate the syrup until chilled, at least 1 hour. (You will have about 1 1/2 cups syrup; cover and refrigerate up to 2 weeks.)
Make the drink: Put the mint leaves and 1 ounce of the mint syrup in a small glass or julep cup. Muddle with the handle of a wooden spoon until the leaves start to break apart. Stir in the bourbon. Fill the glass with crushed ice. Garnish with a mint sprig.

1 teaspoon superfine sugar
2 fluid ounces Bourbon
Ice cubes
1 fluid ounce club soda

Steps:

Put the mint, sugar, and a touch of the bourbon in a chilled silver cup or glass mug. Muddle the leaves with the sugar by pressing them with a pestle or a wooden spoon until fragrant and the sugar dissolves. Add the ice and pour in the remaining bourbon, and stir to combine. Top the julep off with the club soda. Garnish with the mint sprig and serve.

3 fresh mint leaves
1 tablespoon mint simple syrup (see recipe below)
crushed ice
2 tablespoons Bourbon (Woodford Reserve Distiller's Select Bourbon recommended)
1 fresh mint sprig
powdered sugar (optional)
1 cup sugar
1 cup water
10 -12 fresh mint sprigs

Steps:

To make the Mint Simple Syrup, bring the sugar and water to a boil in a medium saucepan. Boil, stirring often, for 5 minutes or until sugar dissolves.
Remove from heat, add mint, and let cool completely.
Pour syrup into a glass jar, then cover and chill 24 hours. Remove the mint and discard.
To make the drink, place mint leaves and Mint Simple Syrup in a chilled julep cup. Gently press the leaves against the cup with the back of a spoon to release flavors.
Pack the cup tightly with crushed ice and pour the bourbon over ice. Insert a 4-inch cocktail straw, place mint sprig directly next to straw, and sprinkle with powdered sugar, if desired.
Serve immediately.

2 sprigs of fresh mint
1 tablespoon water
1 teaspoon confectioners' sugar
1/2 cup ice, crushed
1 1/2 ounces Bourbon
1 sprig of fresh mint

Steps:

Place mint in blender; add water and sugar.
Blend until leaves disappear, add ice and bourbon; blend a few seconds.
Pour into frosted glass or julep cup which has been filled with finely chopped ice.
Stir and decorate with a sprig of mint.
Serves 1.
Note: Serve with a short straw that is no taller than the mint, so one enjoys the aroma as well as the taste.
