Grilled Beer Brats and Sauerkraut image

Easy bratwurst and sauerkraut cooked in one pan on the grill with beer, butter, onions and sauerkraut. Perfect for summer grilling and fall Oktoberfest celebrations!

½ cup unsalted butter ((1 stick) )
12 ounces beer (pale ale, lager or summer seasonal beer)
1 cup coarsely chopped yellow onion
2 sweet banana peppers, seeded and coarsely chopped (or green bell pepper)
2 pounds sauerkraut, drained
12 brats
12 bakery buns, hoagie-style or pretzel style, optional
Dusseldorf mustard or other mustard

Steps:

  • Prepare grill, either gas or charcoal. If charcoal, set up coals to one side.
  • Melt 1 stick of butter in a disposable aluminum pan (at least 2 quart capacity, preferably 10-by-13-by-3 inch). Add beer, onions, peppers and sauerkraut; mix well. Place the pan on the cool side of grill.
  • Place the brats on grill and sear on all sides, being careful not to pierce the casings. When they're seared and have good grill marks, transfer to sauerkraut mixture in aluminum pan; nestling each brat down into mixture and covering with the sauerkraut.
  • Cover the pan tightly with heavy-duty aluminum foil, close lid, and cook for 40 - 45 minutes. Remove from grill and serve: either plated or on buns, with mustard and sauerkraut piled on. Enjoy!

Quick Sauerkraut with Grilled Brats and Mustard Bar image

1/2 head green cabbage, cored and very thinly sliced
1 small shallot, thinly sliced
3/4 cup apple cider vinegar
2 tablespoons light brown sugar
Kosher salt
1 pound bratwursts (not precooked)
2 tablespoons unsalted butter
1/2 teaspoon caraway seeds
2 tablespoons chopped dill, optional
Assorted mustards for serving, such as whole grain, Dijon, honey mustard and brown

Steps:

  • Preheat a grill for direct and indirect cooking.
  • Toss the cabbage with the shallots, vinegar, brown sugar and 1 tablespoon salt in a large microwave-safe bowl. Cover the bowl with plastic wrap and microwave on high for 5 minutes. Stir well and let stand for 15 minutes.
  • Meanwhile, place the brats on the indirect heat portion of the grill and grill, turning occasionally, until the internal temperature reaches 160 degrees F, 15 to 18 minutes. Move the brats over to the direct side of the grill and cook, turning occasionally, until lightly browned on all sides, about 5 minutes.
  • While the brats finish grilling, melt the butter in a large skillet placed directly on the grill. Add the caraway seeds and cook, stirring, until fragrant, about 1 minute. Add the sauerkraut and stir until well coated. Stir in the dill if using.
  • Serve the bratwursts with the sauerkraut and assorted mustards on the side.

4 bratwurst (pork or beef)
4 flatbreads (or regular hot dog buns)
24 oz beer
12 oz water
½ cup yellow mustard
1 cup sauerkraut
2 yellow onions (roughly chopped)
2 zucchini (sliced)

Steps:

  • Set up your grill for 2-zone cooking and indirect grilling. Fire up coals and get the indirect zone to a cooking temperature of 325°F (160°C).
  • Place aluminum pan on the direct side of the grill. Pour in beer and water, and bring to a simmer.
  • Put bratwurst links in the beer. Simmer for 10-15 minutes, turning the brats every few minutes.
  • In a fresh aluminum pan, add the chopped onions and cook on the indirect side of the grill. Cook until brown and caramelized. Add the yellow mustard, sauerkraut, and zucchini. Combine well and leave over indirect heat while you grill the brats.
  • Remove brats from beer and place on the grill grates, directly over the heat. Grill for 2 minutes on each side, until browned and the internal temperature is 160°F (70°C).
  • Add brats to the mustard and onion mix. Coat each link with sauce.
  • Place flatbreads or buns on the direct side of the grill, inside-down. Cook until lightly toasted.
  • Serve coated brats in toasted flatbreads, one link per bread.

12 ounces (350ml) beer (almost any beer will do)
3 tablespoons (45ml) whole grain mustard
1 (1-pound; 450g) package sauerkraut, with juices
6 thyme sprigs or 3 bay leaves (optional)
2 pounds (900g) bratwurst sausages
Buns and mustard, for serving

Steps:

  • Light 1 chimney full of charcoal. When all charcoal is lit and covered with gray ash, pour out and arrange coals on one side of charcoal grate. Set cooking grate in place, cover grill, and allow to preheat for 5 minutes. Alternatively, set half the burners on a gas grill to the highest heat setting, cover, and preheat for 10 minutes. Clean and oil grilling grate.
  • Combine beer, mustard, and sauerkraut in a 10-inch square-disposable aluminum pan. (Alternatively, construct a tray out of a double layer of heavy-duty aluminum foil, 10 inches square, with sides about 2 inches high.) Stir until mustard is broken up and mixture is homogeneous. Add thyme sprigs or bay leaves (if using). Nestle sausages into sauerkraut.
  • Place tray on hot side of grill and cook until simmering, about 4 minutes. Slide to cooler side of grill. Cover grill, with vents over bratwurst. Cook with all vents open until bratwurst register 140 to 145°F (60 to 63°C) on an instant-read thermometer, about 20 minutes, turning once in the middle.
  • Remove lid. Using tongs, remove bratwurst from sauerkraut and place directly on cooking grate over hot side of grill. Cook, turning occasionally, until well browned and crisp, about 3 minutes total. Return to sauerkraut. Toast buns over hot side of grill, if desired. Serve bratwurst with buns, mustard, and sauerkraut from pan.

1 large onion, diced
10 bratwurst
2 teaspoons red pepper flakes
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Preheat an outdoor grill for medium-high heat. When hot, lightly oil grate.
  • Combine the beer and onions in a large pot; bring to a boil. Submerge the bratwurst in the beer; add the red pepper flakes, garlic powder, salt, and pepper. Reduce heat to medium and cook another 10 to 12 minutes. Remove the bratwurst from the beer mixture; reduce heat to low, and continue cooking the onions.
  • Cook the bratwurst on the preheated grill, turning once, 5 to 10 minutes. Serve with the beer mixture as a topping or side.

6 bacon strips, chopped
1 large onion, chopped
1 medium apple, peeled and thinly sliced
2 garlic cloves, minced
1 can (14 ounces) sauerkraut, rinsed and well drained
3 tablespoons spicy brown mustard
1 tablespoon brown sugar
12 uncooked bratwurst links
1 bottle (12 ounces) dark beer
12 hoagie buns, split

Steps:

  • In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels., Cook and stir onion in bacon drippings until softened. Reduce heat to medium-low; cook 15-20 minutes or until deep golden brown, stirring occasionally. Add apple and garlic; cook 2 minutes longer. Stir in sauerkraut, mustard, brown sugar and cooked bacon., Transfer to a 13x9-in. disposable foil pan. Arrange bratwurst over top. Pour beer over bratwurst. Place pan on grill rack over medium heat; cook, covered, 30-35 minutes or until sausages are no longer pink. Remove pan from heat., Remove bratwurst and return to grill. I make these on my outdoor BBQ, they are very good and the beer/mustard sauce makes these brats special! The complete recipe may be doubled if desired. Cooking time is for grilling time. Fully-cooked brats only for this recipe to keep cooking time to a minimum, uncooked will need a longer cooking time.

6 fully cooked bratwursts
1/2 cup beer
1/4 cup brown sugar, packed
1/4 cup spicy brown mustard
1/8 teaspoon black pepper (or use cayenne)
6 large hot dog buns, split (use a small soft sub bun for this or large hot dog buns)
1/2 cup soft butter
1 teaspoon garlic powder
1/4 teaspoon salt
pickle relish
chopped onion
ketchup
mustard

Steps:

  • Cut 4 (1/4-inch deep) slices in each bratwurst (the slits will allow them to soak up the sauce as it cooks and also gives them a nicer appearance).
  • In a saucepan combine beer, brown sugar, mustard and black pepper; cook over medium heat until the mixture comes to a boil.
  • Add in bratwurst, then reduce heat to low; cook for 5 minutes.
  • Remove from the beer mixture (RESERVE the beer mixture).

⅛ teaspoon caraway seeds
1 pound fresh bratwurst sausages
1 (12 fluid ounce) can or bottle lager beer
